Excelent timing, I just picked up my monthly cheese ration from Whole Foods yesterday. I look forward to my own farmhouse cheddar when I return home. I must check out those crackers.

I have been wanting to make my own bacon since I saw Alton Brown do in in a set of gym lockers.

i trust that steve klc is feeling appropriately chastised. or maybe he's feeling confused, like i am. or maybe he's rolling chocolate truffles in cocoa powder and licking his fingers. this, IMO, would be the best way to handle the whole situation.
No Stella, Steve K stands by 100% of what he wrote and so does his editor (that would be me). I'm sure he considers this piece an incredible success, as do I. I appreciate all the enthusiastic commentary here and hope we'll do many more pieces that elicit this kind of response -- and we've added first-time readers who said they never read us, no less. This is great.
So is your goal of these new pieces to create train wreck threads on the board now? Isn't this why we got rid of OTC? I honestly dont see the value added.

I just checked out the Le Pichet inspection and think that all of those are minor infractions. The largest total points on a visit was 10. Mistral is one of the cleanest kitchens that I know and it had a 3 at most.
I would say that both of those scores are stellar considering it takes 35 red points (most of Le Pichet were blue) to warrant any kind of action.

I am back from Vancouver and I want to say that I had a great time! A significant majority of this was due to my dinner at West. I still need to put together my full review, but suffice it to say I had a wonderful time. Thanks to all who were involved in such a great evening!

I tried Glo's once and was entirely underwhelmed. Tried it again, and was even less impressed - I found the food to be thoroughly ordinary. What is it that everyone sees in that place ?
Now, El Greco on Broadway, THEY serve kick-ass brunch on the weekends. Always delicious, and lacking the attitude and mega-wait at Glo's.

I completely disagree with you on Glo's food. They only do breakfast, and I think it's a notch above most places. Even their scrambled eggs are more delicious than anywhere else. I'd like to know how they do that! It's practically across the street from me and I've been there many times in the last 6 years. THAT SAID, if you don't go very early in the morning, you're out of luck. I think it's insane how long people will wait to eat there when yes, El Greco, is right up the street. I'm sure there are people who have a 3- to 4-hour breakfast experience at Glo's on Sunday.
El Greco has well-crafted, classy breakfasts. They don't believe in the giant farmer breakfast. You will be sated but not stuffed when you leave. The service is just okay, certainly not stellar, and always has been. They have very good coffee.
I am all about the toast at Glo's. I am kinda neutral on their egg dishes, I think that they are overcooked more often than not.

I ordered Katie a chocolate assortment from Le Maison du Chocolat and it arrived in the nick of time! Oh man, that is great stuff. Great rec FG! So far we have tried: Plain Dark Ganache, Ganache w/ rasberry puree, dark chocolate covered praline, fresh coffee ganache, and caramelized butter ganache.

I walked by last night and there were a couple people inside eating. I only saw one dish that looked like a kind of salad. The interior looked kind of akward for vietnamese.
Probably worth a try though!

An interesting tip I saw once on a Martha Stewart show was to form your burgers around a little pat of flavored butter such as blue cheese butter. It results in a really juicy burger.
As for cooking on the stovetop, I dont really do it too often and need practice myself.

5 gallons of water quesosakatenango chili peppers from Guatamala (to taste) instructions:
combine ingredients in a large pot cook until boiling serve immediately
makes 5 gallons

My favorite is the recipe for Homer's Space Age(out of this world) Moon Waffles.

ingredients:
1 package of caramel squares
2 cups waffle batter
1 bottle liqiud smoke
1 stick of butter
instuctions:
place caramel in the waffle iron
pour on waffle batter
add liquid smoke to taste
cook thoroughly
take the stick of butter and wrap the moon waffle around it place it on a toothpic and serve
makes 1 unfortunate serving

It was not my first sandwich, I have managed to wrangle myself down there at odd times when I can make it. I would say it is my 4th or 5th one.
Katie got me the Salumi salami with fresh motz! oh baby. The soup was a giant bean soup of some kind. Also very tasty.
