  1. Are they packed, or is it possible to get a meal quickly. I'm thinking if they're open for lunch tomorrow I'll grab some on the way to my lake house.
  2. My mother used to cook tongue for dinner. She has always been my kitchen inspiration. They make a good one at Kosher Nosh, indeed. Along with tongue, as a child every spring I ate shad roe, which, of course being a kid, I thought was meat. Then again, I thought tongue was meat. Well, it took me almost 30 years to try them both again, and indeed, two of the greatest tastes around. Maybe I'll slip some customers the tongue one day next week...

Saturday, as I said, is our 25th reunion. 85 bucks for a crappy buffet at the Marriott in Park Ridge and a cash bar...Can't beat it though! Well, yes, I was a cutter, once.   6. Mike, Just an opinion here, but get rid of the no refunds rule on your website. As someone who owns another successful restaurant, you know the customer is ALWAYS right. If I mess up on one thing, boom, it is free. If a customer complains, well, the next lunch is on the house. No refunds is not a good idea. Just my opinion.

  8. I ate there every wednesday for at least five years, so I've been quite disappointed and wanted other opinions. For two meetings I hired them to cater the sushi, nothing great, and a pain in the neck to pick up, indeed.

  11. harvest yes, good catch Ho Ho Kus Inn, going down hill...oops and they just sold it, so this confirms brick house was ok, now renovating into a wedding factory, tearing down the old house that once stood there...don't expect much when it opens ← Really? Brick house was swell years ago when it was the Wyckoff Inn. I believe it is still owned by the owners of Aldos, and I did see that Ho-Ho-Kus inn was just sold. Chef's table? Haven't been in a while but am curious to see how it is going.

  13. Lima bean! Hot dog Heaven, in MHO, is not worth a visit (although, come by to Picnic and say hi, cause I think we might be worth a drive). Make it to Amazin. I too, was a huge fan of J and H back in my high school and college days when we were so darned daring to cross the passaic river into Paterson. Hop on the Parkway, head to Amazin. I've never introduced myself to the owner, but I am a big big fan... CN
  14. One thing this post made me do was to bring out the smoker! I just made my own bacon, with a corn cob smoke, vermont style. We're having BLTs for dinner to try them out, and then, darned if it is as good as it smells, its on my menu tomorrow!

  18. I keep a ponderin' opening a restaurant in the valley, since I am kinda known there as a chef. I'm just worried. Worried about parking, worried about empty tables, worried about the books, worried that we'd not get press because we're not in the right location. The menu, the concept, has been in my head for years, the reality scares the be-jesus out of me.... No parking, no reason to come, but to eat my food. Scary....
  19. I'm only guessing that this is speaking to Boubon Street, but I think it is a dandy guess, considering I had a hot dog at Goffle Grill two days ago instead of barbecue.. Regardless of where it is, I think that Bourbon fits the description and should work to fix things ASAP... check out Northjersey.com, and click on the food blog there for a complete write up.
  20. One of my friends, a chef from Lebanon, did that with a bluefish. However, once it was crusted, and cooked, he scraped off the majority of the salt before he peeled back the skin.
  21. You know, I happen to be an executive chef, and a woman. I was interviewing for sous chefs, and I e-mailed back and forth with a very promising candidate. When he realized I was a woman, he wrote back. Screw this job. I don't F'ing work for chicks. You can work for me, if you could handle it. So...there you go...
  22. Tuesday evenings in September, Picnic will be offering cooking classes. Up to 10 attendees can come, with a bargain price of $20 per person. The classes will be about an hour each. I'll be posting the menu a little sooner to the events, but count on a nice braise, a soup and bread class, and definately a sides course.
  23. Exactly, Dumplin' People understand problems, and growing pains and the like. We've had our share! We've run out of everything and had to apologize or give away a meal or whatever it takes. I think the high hype and high hopes for Bourbon BBQ, or Bourbon Bergen BBQ, was too much too soon. That said, the only fear I have is that people might not give it a second chance. I hope Mike, I know you read the board and comment frequently, that you guys can work to get the kinks out of the service problem. Perhaps an explanation for closing on Friday is a good thing.
  24. Here, from a caterer, is one opinion on the area. I'm on Kinderkamack, and I feel like I am trapped from any major highways or roads other than the 15 minutes it takes me to get to 4 or 17. In this area, New Milford, Leonia included, the scary part of opening a restaurant is access. Ridgewood has charm, so it is okay that it is a bit landlocked. This area, there is no downtown, no cute shops, no other reason someone would go out of their way, except to eat. And, it is just too risky to believe that people will travel -- all the time -- for a good meal. You know what I mean?
