    Piece de resistance

    Smoked Salmon pizza on dill pizza crust with North Dakota paddlefish caviar and chives. Roasted curried apple soup Filet of Pork Wellington with Cranberry-Rhubarb chutney and muenster cheese (inside the pastry) & with a very light au jus. Sauteed brussel sprouts with pancetta and garlic bread crumbs. Jasmine rice timbales with lemongrass and shallots. Creme Brulee with red apple syrup. A five-part cheese course with a bottle of Dolce (Far Niente dessert wine from California).
  2. I never bring any type of food and don't want people to bring me food. Wine is good as long as it's not expected to be opened. I try to bring a dessert wine or port - it's something a lot of people won't have on hand. If wine doesn't work, then a bring something for the house - a piece of crystal or a special dish for the kitchen (olive dish with pit holder or a bread dipping dish.)

    Will try a blackened pork tendeloin tonight (medium) with a mango/lavender salsa and a green salad with creamy chipotle dressing.

  6. Not being one for hotel spots, I'll make an exception here. In the Hyatt Grand Cypress try Hemingway's. It's actually separate from the hotel - located above the pool area. The fish is outstanding and try the conch fritters for an appetizer. The place is casual and sports a resemblance to Hemingway's Key West home. Of course if you don't mind the 75-mile trip, the country's best restaurant is in Tampa - Bern's. It's listed as a steakhouse, but it's much, much more. It also has a less formal place next door called Sidebern's. I fly down to Tampa (I live in New York City) at least once a year for dinner at Bern's.
  7. Just got a great idea for a new restaurant - no chairs or tables! Problem solved. By the way, there was a restaurant (one in NYC and one in LA) that served food to customers in beds (I forget the name). If you were asked to leave, would that be akin to being thrown out of bed?

    "Best" wine ever drunk.

    Several years ago, I went to an Inglenook tasting and they served wine from when Inglenook was one of the top California producers. I tried a 1941 Inglenook Cabernet - it was absolutely spectacular - better the 1961 Lafite or the 1975 Petrus that were served as comparisons.

    Planning a American caviar tasting for tomorrow. Received caviar from six states through icaviar: North Dakota, Washington, Tennessee, Missouri, Mississippi and Kentucky. All were priced between $16-20 per ounce. I've had most of these at Bern's in Tampa, Florida and are an excellent replacement for the $50-75 per ounce Iranian and Russion models. For a main course I'll serve some grilled Chilean lobster tails (they come about 20 to a pound) with a caper, marjoram sauce and lemon pasta with goat cheese.

    Friday night I deep-fried some soft shell crabs coated with red, white and yellow cornmeal, lentil flour and a pinch of smoked medium paprika. I served them with some creamy rice (not risotto) baked with red peppers, gruyere cheese and scallions. Grilled yellow squash after brushing with lemon, olive oil, tarragon mixture. For dessert some Driscoll Strawberries macerated in a combination of equal parts Grand Marnier and Sambucca and a splash of lime juice - refrigerated until very cold.

    Aquavit

    Went to Aquavit Saturday afternoon for their special "Herring Tasting" and was very impressed. The buffet-style luncheon consisted of about 10 types of herring and a few types of salmon and well as several salads and Swedish Meatballs. Tried a flight of Aquavit (at $12 for three, probably the best alcohol deal in NYC), all were very flavorful. Next Sunday is the last day for the Sherry Dinner at Tio Pepe. It's an excellent five-course meal for the unbelievable price of $42 per person. With so many of these special dinners coming up, does anyone know of others (aside from the two that were mentioned in other posts for Tuesday, June 18th)?

    Deacon - Yes, it's very different - it costs about twice as much. "Flavorwise" - it seems to be somewhat more bitter and cleaner.
  14. Chile Pepper is an interesting magzine for those who enjoy heat and spice. Try the recipes that use the new Chipotle Tobasco. By the way, if Gourmet is food porn, then the Wine Spectator is oenophile porn! Remember, there are no bad food magazines, just magazines that are social misfits.
  15. Red Beets, the yellow version is fine, but something in a red beet makes it hard to swallow. However, I use beet juice for color in a lot of dishes.

    favorite bottled beers

    One of the more flavorful beers on the market is Grolsch from the Netherlands. About two months ago the company released a 1.5 liter bottle (50 ounces) - it's great for parties and the unique cap keeps the beer fresh and carbonated for hours. After you're finished, use to bottle for extra virgin olive oil.
