a trip to argentina would have sorted out your meat cooking techniques long before MG did. we've been cooking meat gently and slowly for centuries now - and no one down there even needed a book, or an academic education for that matter to tell them about intercellular fluid, they learned by obesrving and tasting. on the contrary, the revelation is that MG provides nothing new to cooking - it's similar to the study of management; you give processes and events fancy acronyms in order to ease the grasping of said concepts. -che

air travel is significantly worse for the environment, as it has much higher associated CO2 emissions. certainly in developed countries we have come accustomed to year round availability of most fresh produce - who is to blame is debatable. however, the decision to avoid buying produce from overseas may have a negative social impact in less developed countries; ie kenyan beans. it's not an easy decision, at it is not a black and white argument - in my opinion. i have a terribly difficult time going into supermarkets - which i barely do anymore other than as a research exercise. -che -

So where does all this lovely organic un-seasonal veg come from originally? Flown in from Spain? ← fresh produce from spain is not flown in - it comes in trucks. as does produce from france, italy, portugal...... -che -

moby's comparison is in my opinion excellent. likewise i've had better chinese here than in NY. it's interesting nowhere on this thread sushi has come up, as across the range there is a stark comparison between london and NY, decidedly in favour of NY across the range. st. john's is a fantastic restaurant, and so is it's sister st. john's bread and wine. there are plenty of threads on both. restaurants this good - best value for money - are scarce across the world. i haven't come across any in its league in NY. had a marvelous meal at royal china the last time - in the evening (ie - no dim sum) worth saying my father and i told our waitress to choose the entire meal for us. -che -

quite right under those eyes, the problem is you are considering jamie oliver a chef. take influence for example - aside from single blokes trying to impress a damsel and the odd mother trying hard to feed her children, i doubt he's influenced anyone of note, let alone any cuisine in particular. -che -
"real glasses" - that's not a place, nor is the food, to be drinking wine so special it requires the perfect glass. those tumblers are excellent for the place, anything else is simply wrong in my book. tehy don't even have the time or space to be properly cleaning "real" glasses. -che

there are risottos that use cheeses other than parmeggiano or pecorino, however they tend to be with taleggio or gorgonzola which has a distinct flavour and melts differently than mozzarella. -che -

wow, that would not strike me as good...considering how bad mozzarella goes with risotto. why do people choose to be inventive with dishes which aren't ingrained in them from an early age? if you consider what blumenthal is doing to be good and modern, then why can't you compromise with gastropubs? label them what you want, but they are the answer to the lack of good culinary culture in england. both of the above are a sign of changing times in this country - with what concerns food at least - for the positive. -che edit: left things as i first intended.... -
this is all getting too tired. cooking has always been about chemistry, and cooks centuries ago acknowledged it albeit in a different manner. it's great that people like heston and adria do what they do, whether you like it or not. it's the PR spin that tries to bring it down to everyone which messes and misconstrues it all. -che

eunny, that chicken looks magnificent, and it's barley 7:20am over here. you've already received some good comments, and in the end a lot has to do with what you're trying to achieve with the picture. personally i think the picture lacks contrast. notice the color of the table on the bottom left, the transparent plate doesn't help, and then the color of the mash and chicken on the top right. the egullet light blue background doesn't help either, however i still think contrast could eb improved allowing your picture to speak more, make more pornounced statements - if that makes sense. -che

i need to show a friend around London tomorrow. its a long lost friend who moved to london a few months ago and needs to be shown the finer side to this great city. i'd like to go to one area, rather than try and criss-cross the city to no end. i'm thinking of two possible areas, east around shoreditch/old st or south near borough/tate. for sure i want to have lunch somewhere, ideally a gastropub that is laid back (ie - anchor & hope) or other possible eaterie. also, any interesting things to do in either area, or suggestions of other places. maybe i can start east and then head south-west....long night yesterday so any help will be much appreciated. -che
