  1. I have also used the Rever group in the past. USBox is another good source. They have a good selection of standard boxes and will run a custom box for you. Look in their coordinated box line. I also have a friend at Marfred Packaging that will do a custom box for you to your specs. I don't think you are wanting those however, as you have to do a large run. US Box or Revere are your best choices that I can see. www.USBox.com
  2. You had me at Coconut Cake and then slammed the dessert door shut and locked me inside when you added the lemon curd! I would be in dessert heaven! It sounds wonderful. Congratulations on your success! And I am sure everyone who had some was happy you succeeded also!
  3. We do mini cakes by using large size muffin tins. When cool we cut off the rounded top about a 1/4 inch just to level it out. then we stand it on its head and frost all over. Then we embellish the tops with a complimenting topper like candied orange slices, fresh strawberries, chocolate curls, etc.
  4. White Truffle Girl, the easiest way to make your own rubber stamp is to use your computer to print the image you want. Using any graphic or font and make it look exactly as you would want it to print out. Then take it to your local rubber stamp store and have them make it up for you. I do this all the time. It gets a bit pricey if you make it intricate, but if it's a simple stamp it shouldn't cost you more than $10. Hope that helps.
  5. I may be going out on a limb here... as I haven't seen it mentioned, I really like Peter's White Chocolate. You have to buy a lot to get a decent price (500 lbs or more) but they will mix a pallet for you with dark, milk, white. I haven't been disappointed with any of the chocolate I've purchased from them. It can also be found in small baking supply shops around on occasion. My rep is great, he'll send samples if needed. (Not a sales pitch at all, I just like him) I also used the Schokinag White this past Christmas season. It was well received.
  6. Indeed it is! We all should use the phrase "Sour Patch death-sugar" more often, don't you think? ← Excellent phrasology!
  7. OMG.. that is so funny, I still have tears streaming down my face! ← eJulia - that's exactly how I saw it. Funniest story on the web! I'm glad you liked it.
  8. I have always wondered why theatres don't just sell high end goods. I don't mind the price if it something of quality. However, $3.95 for a same size 59 cent snicker bar doesn't equate as quality to me. We always take stuff in and buy a popcorn also. Junior Mints are a theatre must have and ours doesn't sell them anymore. Best story ever on food brought in to a theatre: My friend AmishRobot's: Angst in my pants. It's the first on his list of favorites. I laughed so hard when I read this post! AmishRobot
  9. I wanted to try something different Friday at the shop. I came across three lonely spice cupcakes that had been ignored when frosting the others earlier in the day. So I took about a cup and a half of our regular buttercream frosting and added two teaspoons of ground ginger to it. Mixed it up and frosted the cupcakes. Then I added a small sprig of candied orange peel for decoration. One customer came in tried one, and bought the other two. Couldn't say enough about them. So I guess my whim was okay. No pics though.
  10. I TOTALLY AGREE! ← I too agree! I am so bored by Collette's cakes. Mike was robbed. Then they put him in the competition for the Elvis cake against a bunch of yahoos and gave him the big prize. He said it would be his last and he was robbed at the mystery cake event.
  11. If you want molds that you'll use for years and years, it's worth taking a look at these guys: http://www.chocolat-chocolat.com/
  12. I am subscribed to a bakery newlsetter that also sends a bakery equipment newsletter twice a month. I received one today. Hereis the newsletter address: http://www.bakeryequipmenttradingtimes.com...ailer_11_15.htm This should get in some sort of direction, as to new and used equipment sources. If you need other supplier info I have others. Just post follow-ups and I'll check back.
