  1. Bryan, I think you mean NY MAG's "Grub Street" section called, Ask A Waiter, which is similar to EATER.COM's Gatekeepers series. I work on the later.
  2. I am currently photographing the GATEKEEPERS series for EATER.COM, and was wondering what the viewing public thought, and whom they would like to see.
  3. Thanks Toliver. Yeah, they were discontinued at the beginning of 2006. Anyone stockpile, have a stash? Have contacted a few outposts such as Hometown Favorites, but they were out.
  4. Does anyone know where to find/purchase "REEDS' SOUR CHERRY CANDY ROLLS"? The Chicago based The Reed Candy Company was once bought out by Amurol Confections (Big League Chew, Bubble Tape), which was then aquired by Wrigley's.

    Anything Pork (milk braised was best), and can't miss with the Whole Roasted Fish (with a wonderful salmoriglio). Another simple and superlative pleasure is Berries en Papillote with Madeleines. The thing is, his menu is built by freshness, and his staff seasoned, that I am confident enough to say you can just ask your waiter, and they could provide with the best of suggestions, rather than push the lesser of dishes. August’s truths (in cooking and courtesy) precede them. Tart Flambé and Blistered Peppers are a must though.

    AUGUST August’s wood-fire burning oven acts not only as a device in delivering the best of regional European fare in Manhattan, but also as a parable of character, projected through the warmth of an idyllic ambiance and the integrity of Chef Tony Liu himself. Many a chefs have told me that Chef Liu’s tart flambé is not only the best they’ve ever had, but their favorite dish in New York as well. With blistered peppers as prologue, and the great hearten in having a cast-iron filled with seasonal riches, not only merits the wait, but enthralls you to prolong your meal ad infinitum. Techniques based in tradition and exemplified in Liu’s talent, make for one of the best dining experiences I’ve had. The reminiscence is timeless ... with little wait to recall.

  19. Anywhere in Cape Cod? I know it's a trek, but I think it more the style I'm looking for. Beach, bars, great seafood almost everywhere you go. Does anyone know of B&B or resorts on the cheap? Wellfleet, Falmouth, P-town, Brewster/Barnstable ...

  21. Any good getaways a few hours (by car or public transport) a few hours outside of NYC? No big cities (ie Boston, Philly, DC), but more the style of Cape Cod and Portland. Small towns, great food, nightlife. On the cheap, artsy, any suggestions? Looking to go away the weekend of June 16-19th. Any festivals, fairs, events etc ... ?
  22. iCi (in fort greene) is where laurent (of "the restaurant") works. Blue Ribbon is a must. Applewood is also great. try Sette Enoteca. the chef (amanda freitag) used to work under tom valenti at 'cesca. Heard great things about Alma. Don't know much, but wonder about Crave in Carroll Gardens. A fave of mine, but doesn't really fit in "dine-in" week, is Chip Shop, for fried fried fried.

  24. TILT SHIFT Technique Another good tool for Food Photography is the TILT SHIFT Technique. If you do not own a Tilt Shift Camera, then there is a photoshop tutorial on how to "fake" it: http://recedinghairline.co.uk/tutorials/fakemodel There is also a product called LENSBABIES, which is a selective focus SLR lens.
