  1. I usually see lobster prices listed as per pound and not per lobster. Unless those were small lobsters I would expect that that price was per pound and not per lobster, though if they were small it might be one and the same. ← I usually see it listed as per pound too, but the sign said Lobster 8.99. There was no lb sign after the price.
  2. Looks like the price went up to 5.31lb. There isnt a store in London. Too bad, the knife sounds good.
  3. They were 8.99 CAD at the supermarket today. I'm assuming that was per lobster and not per pound.

What do you think of this article by David Chang. He is very anti-tong. click
  5. Thanks Mike, I told Dave you might come over and chime in.
  6. I have a lot of golden syrup. Do you think it can be subbed for the corn syrup?

Do you all have squirrells? A few weeks ago I put a KA bowl outside filled with ganache to cool down. It was covered it plastic wrap. I came back 10 min later and the wrap was torn off and squirrel feet marks were on top. I also put out some brownies in a plastic storage container. When I came back to it, the storage container and huge chunks of plastic taken out of the top from teeth!! I'm going to try storing stuff in a cooler next. I have tons of cookie doughs I need to freeze and no freezer space left.
  8. Pardon my ignorance but what is a timtam? ← Its a really great cookie from Australia. Its made with pure cane sugar as opposed to high fructose corn syrup. You can get them in the US at Cost Plus world markets. They're sold under the brand name of Arnotts. ← Yep. Don't go into the weird flavours though except caramel. The best ones are plain chocolate. Double dipped is pretty good too. All of our confections are made with sugar, and our coke too. We've got too many cane fields in Queensland to consider otherwise. Edit to add link http://www.arnotts.com.au/products/TimTam.aspx ← What a coincidence. I found these at Target today. I'm so excited that I can find them in MI( closer to me than where I can find the arnott's.) They only had the caramel. These were 2.50
  9. I bought these today @ Target. Whooo Hoooo. I freaking LOVE TimTams. These were good, but the caramel center was a distraction. Made with pure cane sugar( no HFCS)
  10. Last week I was in Western, NY and ended up going to Big Lots again. I bought the crackers for 1.50 and they were in fact stale( expired in October). Paul sent me a huge box of replacement crackers!! I can't wait to serve these to friends/family @ xmas. Thanks Paul!!
  11. I happened to have a box of that brownie mix on hand, and made the linked recipe today. They came out so rich and gooey, I decided to cut them into 1" squares, and pack them into my Christmas candy gift tins. I made them years ago with graham cracker crumbs, as a crust and once with crushed Oreos, but these are the best. Heavy, though, good for one bite. ← I tried that recipe a few months ago. The butter didnt fully incorporate into the mix so there were bits of dry spots. We did NOT like it at all.
  12. CI recommends the Forscher 8" chef's knife. Its cheap at around 26.00. The pairing knife is also cheap at about 7.00.
  13. I want to make millionarie shortbread( NOT 7 layer bars or Hello Dollies). The shortbread has a layer of caramel and choc. on a shortbread base. Anyone have a good recipe? I have a huge bag of caramels I'd like to use up.
  14. I used to work at a place that did it with muffins. I buy bagels that are day old because I'm just going to throw them in the freezer and toast them later.
  15. Xmas meal. I dont cook again until January This is the 4th Turkey dinner I've cooked since October. I'm pretty sure they'd like to eat this 2x a month. There is another dining program in a neighboring town that normally gets 12-18ppl each week. This week, they had over 60ppl attend the xmas dinner. I know the coordinator of that meal is pretty upset that they'll only come out for the turkey dinners. Watergate salad( pistachio pudding, walnuts, cool whip and crushed pineapple) wheat dinner rolls( purchased) stuffing make-ahead mashed potatoes( made with cream cheese, sour cream, butter, milk). We made these early in the afternoon and kept them hot in a crock-pot. Turnip puff( I assembled this a day ahead) vegetable au gratin pumpkin dump cake( horrible name) The pumpkin part is made like a regular pie filling(eggs, evap milk, sugar, spice). The topping is a spice cake cake mix and butter. I melt the butter and mix it with the cake mix before topping. I left a part with no topping so the diabetics could have it as well. There is only 1 cup of sugar in the entire recipe. Each pan holds 1 1/2 recipes and served 18ppl. The turnip puff is boiled turnip, flour, eggs, brown sugar, salt and pepper. I buy the turnip already peeled and cubed( fresh). I made a basic bechamel ( I used a garlic spice blend too) and added some shredded cheese. I cooked 3 KG of frozen cauliflower, baby carrots and brocoli( 1 bag of each). I poured the sauce over and baked. One lady came into the kitchen just raving about it. She said she could eat the entire pan. I gave her the small amount that was leftover to take home. The cranberries looked terrible and were 2.99 a bag. I bought 3 cans of whole berry sauce in lieu of making it. No pics of the turkey because I've posted them last month. It looks the same this month Same goes for stuffing and potatoes. I have a few different meals already planned for Jan/Feb. There was leftover turkey so I want to make a soup( in place of salad) with that. I also have roast leftover and frozen so that will be turned into another soup. I have pork sausages and some bacon wrapped pork loin medallions that I'll use next year too.
  16. I absolutely love the WS goldtouch line of bakeware. I have a loaf pan, 9 x13, a 9 inch square and a sheet pan. NOTHING every sticks and everything bakes up like a dream. Dont forget as a chef you get a 10% discount. Just show a business card.
  17. I hope you have a nice visit with your mom. She looks the same as she did in August( no weight gain). How is the pizza compared to your favorite pizza in Chicago?
  18. I've bought them in Michigan, but they're not availble in my small town( or London, ON).
  19. Rob, Are those the Maida sour cream cookies?
  20. I just made a half batch( 1 bag of microwave popcorn). I used pecans and peanuts. Yummy!!
  21. Upthread Andie talked about some sour cream topping type thumprint cookies. I made them last year and they were amazing. Ina Garten's Jam thumbprints are pretty effing good too.
  22. Holy Crap Brooks, that cake was effing fantastic.
  23. I'm still waiting for the pics!! ← As I type, I'm baking six rounds. I promise that I will send you finished results when I am all done. ← I was just flipping through Nov-08's Southern Living for a few last minute Thanksgiving Ideas, and lo and behold, there was Brooks and his famous cake in all of its glory!! Wish I could post the picture for everyone, but it is gorgeous. Even though I don't like coconut I'm going to make this for Thanksgiving since all of the normal people in the family love coconut cake. Congrats, Brooks!! Rhonda edited for typo ← I made Brooks cake today for my 42nd bday( yep, I have to make my own cake). Its gorgeous and I can't wait to taste it tonight. Coconut cake is my most favorite cake. The only thing I couldnt do, was split the layers. They were so delicate, I didnt want to risk it falling apart. Doesnt it look so moist?
