Simple one pot dish made in oven once everything is mixed together - bone-in chicken thighs, basmati rice, eggplants, onion, garlic, dates, cumin, ground ginger, harissa, orange zest and juice, olive oil and chicken broth. Finished with some pistachios.

Knoedel (German dumplings) with Rahmspinat (creamed spinach) and sour radishes - there are two types of German dumplings - either bread or potato based. These ones are made with mashed potatoes, dried morrels, shallots, egg yolk, corn starch and nutmeg. Served with spinach briefly cooked in cream, shallots, garlic and nutmeg. And with radishes marinated in white wine vinegar, caramelized sugar and coriander seeds.

Currywurst Soup - a play on the ubiquitous currywurst in Germany. Made with sausage, red and yellow pepper, onion, curry powder, paprika, sugar, curry-ketchup, strained tomatoes, vegetable broth, parsley and topped with some sour cream

Finally back at cooking in a new house with a new (and improved) kitchen - simple vegetable stew with red peppers, king oyster mushrooms, shallots, garlic, tomato juice, vegetable broth, ras el hanout, paprika, cinnamon and mint. Served over couscous made with tomatoes and mint and topped with yoghurt.

You could use a little bit of it and roast it but I wouldn’t use to much as the dish should show the spinach (and beef) flavor

Turkey and Bean Tamale Pie - with ground turkey, pinto beans, corn, tomatoes, baby spinach, cilantro, onion, garlic, jalapeño, chili powder and cumin. The corn bread was made from cornmeal, APF, baking powder, egg, milk, butter and honey. Finished with a dollop of mascarpone.

Jjajang Lamb Noodles with Honey-Soy Butter Glazed Turnips - Noodle sauce was made from ground lamb, onion, fish sauce, fermented black beans, Shaoxing wine, gochujang, sugar and silken tofu. The slaw was made with red cabbage, baby spinach, red onions, blackberries, walnuts, apple and vinaigrette from olive oil, apple cider vinegar, Dijon mustard and maple syrup

Vegetable Gulasch with Polenta Nero and Paprika-Oil Sour Creme - The vegetable stew had dried corona beans, tomatoes, carrots, parsnips, yellow pepper, zucchini, cauliflower and parsley cooked in a broth made with fresh tomato water, smoked paprika and tomato paste. Polenta nero doesn’t actually contain any polenta but is made from mashed potatoes carefully cooked with buckwheat flour and potato water and afterwards mixed with parmesan and sautéed shallots

Continuing our ongoing play on Spaghetti Carbonara variation: - this was a nice one - Miso Spaghetti Carbonara. White miso and sriracha added to the egg yolk and parmesan mixture. And baby spinach at the very end
