I find Oregon Pinot Noirs very much in the vein that you mentioned: gamey and foresty (sp?). Many do exhibit more earthy notes that fruit forward notes. A nice cross between Burgundian and Cool climate new world regions. The small boutique producers strive for that exclusive Euro style. From an Australian frame of reference , many Oregon PN, remind me of cool vintage Tasmanian PN but with more emphasis on earth, mineral, forest, and wood smoke notes. Looks like Moonshine in Gastown is now called Six Acres, seemingly the name derives from the fact that Gastown was originally only six acres in size.Nice to see that they now have a patio open perfect for those sunny days when you want a great bottle of beer or a glass of wine. They have a really sexy new beer from Spain Alhambra for $5.50 very tasty on a warm sunny afternoon Cheers, Stephen

Drink lots of Cava my friend. We were in Barcelona two years ago for a month and found Cava a great deal. There's nothing like a glass of bubbles on a hot Spanish day and it's a great way to start off the day The shops mentioned in the thread above are great source for wine. The Cartes du Vin in El Born has a great selection of wines including some amazing boutique Cava producers. On a hot summer's day a glass of Torres Sauvignon Banc or Vina Esmarelda (sp?) will hit the spot. Cheers, Stephen Bonner Vancouver

Helen and I are planning our annual trip back to London for an extended time frame and were curious on some feedback on "Roast" restaurant at the Borough Market. We are renting a flat in St. Catherine's Dock so we can walk over the bridge for breakfast, lunch, or dinner. Any comments or feedback on this establishment. I aslo hear through the grapevine that our favourite manager "Brian Sullivan" at the Wine Wharf Wine Bar has moved to Norwich to run a boutique hotel...any gossip? Cheers, Stephen Bonner Vancouver

Nice idea....but REALLY EXPENSIVE. If they are using Granville Island beer can they not use the G.I. brewery facility on Granville Island? I have been to private parties there before with 100-150 people. Cheers, Stephen

For inspiration look at cook books by Neil Perry, Bill Granger, and Kylie Kwong. We had some great meals in Australia at these chefs restaurants. Austalian's are the masters of fusion cuisine - so maligned here in B.C. with our attempts. I know we can now get Kangaroo here in Canada so thats an option for an entree. A number of Australian bush spices and herbs are available here as well. You will have no trouble finding plenty of Australian wines and I would recommend to go with an Australian Riesling, Coonawarra or Margaret River Cab, Barossa Shiraz, and some Rutherglen Tokay to show off the vinous side of Australia. I'd 2nd Katie's idea of the Loire Cab Franc along with at least one from Trentino in NE Italy. Which B.C. one's did you try? It is a rising star varietal in the Okanagan Valley here in B.C. They are pretty tasty with herbed lamb and tomatoey dishes. Cheers, Stephen Bonner Vancouver

Helen and I just returned last night from the next series of Chinese restaurant documentaries created by Director Cheuk Kwan and Camera man Kwoi Gin at the Pacific Cinematheque. They are on again tonight and Thursday. Last night's show concentrated on Chinese restaurants in Brazil and India. It was facinating to see Chinese restaurants and cuisine fused into the cultures of Calcutta, Darjeelling, and the Amason River Basin city of Manaus. Both the director and camera man were in the audience for a Q&A last night. They mentioned their best Chinese food experience while filming was from a small restaurant in Northern Madagascar and worst in Cuba. If you missed the films, they are now available on a five disk dvd set for $130. I picked up a set so we may have to organise an event paired with food and wine and watch them with some other egullet members Cheers, Stephen

Labour and food costs are the killers. The successful but not wealth forming NA model is labour costs under 30%, food costs under 25%. I think the average restaurant in Canada makes between 5 and 15% actual profit. Cheers, Stephen Bonner Vancouver
