  1. I am taking a break from scrapple for a bit. I have also decided that the next time I buy it, I will slice it all up and IQF it on a sheet pan in the freezer, then bag it for use right from the freezer as needed. But your whole premise is flawed: the two are complimentary, but not interchangeable. HC

  7. Pickling cukes are up. I just finished planting lettuce. I hope to putty and paint the cold frame windows today. In the meantime, Mother Nature is doing her best to discourage me. Twelve to eighteen inches of snow expected tomorrow! Stop the madness! HC

My attempt to recreate Lydia Shire's Swiss steak. https://www.ming.com/simply-ming/episodes/season-12/episode-1225-all-in-one-satisfying-steak-dinners-with-lydia-shire.htm This roast was intended for a big meal with guests, but I discovered that the seal had broken in the freezer and I decided to use it for a practice run. Here is the chuck roast. She seasoned both sides and transferred to the pot. I chose to season and flour one side and season and flour the other side while the first side was browning. Here goes the salt and pepper Followed by flour. After browning the other side, I added back the onions on top, dry sherry, water, tomato paste (all on the side), topped with chopped tomatoes,salt and pepper, covered and put in the 300 F oven for 3 hours and served over buttered noodles.   12. The cukes are up!!! We have a big snowstorm coming in the next few days, but after that, I hope to be able to put these guys out in the protected area on the south side of the house and be ready to cover them when frost threatens. HC

  16. Fish and chips. Fresh Haddock and Idaho fries. I made a spicy kimchi tarter sauce that made the day for me. Deb went with ketchup, HC

  18. My chives are coming up and the parsley looks to have survived too. I believe the sage and thyme will be OK. The rosemary comes in for the winter and seems to tolerate the western exposure pretty well. I brought it outside today to give it a little encouragement.   19. Made another Reuben yesterday. I like the rye with seeds, but Aldi has rye w and w/o seeds and it's pretty good. This, however, was on Tuscan bread. HC
  20. Had to try the Ahi Tuna from Aldi. Pan seared in sesame oil with a soy, green onion and sesame oil dip. Very good! HC
  21. Fried Zucchini planks, corned beef hash, poached eggs and fresh salsa. HC

  24. Spatchcocked chicken Painted with a mixture of Dijon mustard and Italian dressing, garlic powder and fresh ground pepper Cooked on the grill, skin side up for an hour and 15 minutes add grilled asparagus and call it dinner. HC
  25. Yes the cabbage and carrots were al dente in a good way. I will be heading out to S&S for flat cut # 5 & 6 today, then I may get a few points for smoking pastrami. Shoprite has a coupon for one flat cut @ $1.88pp starting Wed and I'll do that as well. HC
