Deb, quite often, has to babysit after work, and dinner has to play a waiting game, depending on how that works out. I like to plan meals out, based on her schedule and quite often, that is a waiting game, as well. Sometimes, a sandwich, that I can throw together, at a moment's notice is the answer. Last night was such an occasion. At first, she would be staying late, but then, news came that her SINL would be leaving work early and dinner was back on schedule. Salami grinders were on the menu, with shredded cabbage instead of the usual lettuce. I have only recently learned that Deb shares my preference for that substitution, so that is how we rolled. HC

Pan fried leftover scalloped potatoes, pork scrapple and poached eggs. The potatoes, scrapple and fresh salsa are the life of the party, accompanied by other invited guests. HC

While contemplating how best to use some leftover roasted garlic and green onion mashed potatoes, I decided to climb aboard the leftover potatoes breakfast train. Here is my ticket, a small super bowl, if you will, of the aforementioned mashed potatoes, with 2 eggs, a strip of bacon, some pork scrapple, sharp cheddar cheese and chopped green onion, all baked in the oven and treated tableside with liberal and frequent, applications of fresh salsa. HC

I once worked with a nice guy at a restaurant, who was later swept over the side of a fishing boat out of Point Judith on a December night, never to be seen again. Those folks work their a$$es off, sometimes in conditions that are hard to imagine and live pretty close to the edge financially as well.. HC

Dinner last night was fish and chips. I know from experience that fish and chips for the two of us requires 3/4 LB of fish fillet. I bought a 1 pounder with this sandwich in mind, and chose to have it for breakfast to get the cooking oils packed up and put away. My version of MCD's Fillet-O-Fish. HC

I found this 1 pound, day boat, Point Judith cod fillet today, and fish and chips was suddenly on the menu. I managed to make a pretty good meal out of it, but took a few crappy pictures. HC

Because I love the crunch of fresh cabbage, I slice it real thin on the meat slicer to order, dress it, then use it on the sandwich. Cleaning the slicer is a minor issue, after slicing lettuce or cabbage. HC

One of the best tacos I ever had was a fish taco out in San Diego at a place called Rubio's. It too had finely shredded cabbage. I had forgotten all about that. I'll have to try making them. Thanks @kayb! HC

Salami, provolone, sliced tomatoes and whisper thin cabbage that has been tossed with good olive oil, salt and pepper and a splash of red wine vinegar. HC

I am definitely not an expert on the subject, but I found these on the internet some years ago and have liked them both very much. I am making the second one tonight with rock Cornish game hens and because it is raining, not on the rotisserie, but on a bed of vegetables in a Dutch oven. I will also add that on one of the few occasions that I have had an issue with the Sunset brand Campari tomatoes ( they just went south in a hurry), The sunset company was very good about it. They requested the harvest code from the package bottom and mailed me a nice coupon with an apology for my troubles. HC

I am not normally a big football game watcher, but tonight's game for the Patriots was a big one and I watched. Dinner suffered as a result, but there wasn't an unhappy diner at the table! HC
