  4. Finally made something new in my Instant Pot, I've pretty much been using my regular recipes and not experimenting too much. It's cold in Alberta and I had a kilo of mussels from Costco...what to do: Instant Pot Mussel ChowderSaute in 2 TBS of butter (add more as needed):1 small diced onion 8 cloves diced garlic Salt and saute until soft Black pepper , thyme and parsely 5 red thai chili peppers *optional but I like heat* 1 small diced orange pepper Add 2 cups chopped swiss chard Add 1 Kilo mussels in shell 1/2 cup white wine 1/2 cup water Manual High pressure Manual High pressure for 1 minutes Quick release *light towel over vent* Strain mussels into a large bowl Add broth back to IP and saute low Add more butter add 5 cups of baby spinach Stir until spinach wilts Remove mussels from shells and add to soup Add whole whipping cream 1/2 cup Adjust seasoning

  8. We had the same conversation the night I made that cottage roll. Out East (Ontario, Canada) Cottage Rolls were easy to find. I moved out West and could only find Picnic Shoulders/hams. But the last few years I have once again found cottage roll. Then we had to have a big debate on where all the cuts were from and why they are called that! My Mom really had the final say; "In Ireland we use bacon and bacon is the best." Mom is always right

  10. Getting back into the swing of things after life just tossed me a few knocks on my arse! Made a fine Irish dinner for family using my sister's Instant Pot at her house.Get a cottage roll, cured ham or bacon and add that to your IP cook on manual high 45 minutes with 1 cup of water.Release and add on top of meat a lot of peeled quartered spuds, and chopped cabbage and salt. Manual High pressure for 6 minutes. Release with a towel on top. I was at my Sister's using HER IP and I made a wee bit of a mess My tall Man wiped the tile wall for me This is so good served with a beet and goat cheese salad, beets also made in the IP. OH and of course Keen's mustard made with Keens mustard powder and white wine!

Its cold, its rainy...Instant Pot beef and mushroom stew really hit the spot...and lunches for tomorrow I made this last year and pretty much did it the same: Beef and Mushroom Stew Stewing beef and short beef ribs with meat and fat Saute on High in IP and olive oil and remove Quarter 2 cups of mushrooms in more olive oil and a good handful of dried shitake mushrooms add 3 cloves chopped garlic and 1 diced carrot Note the bottom got very brown so I added some beef stock and scraped up all that goodness Add 3/4 can of beer add a celery stalk broke in half you can remove it later 1 tbs thyme 1/3 cup fresh parsely bay leaf 1 TBS dijon mustard 1 TBS molasses 1/4 cup worstershire sauce 1 TBS tomato paste Veggie or beef stock to just cover meat High Pressure for 20 minutes Quick Release and add three large cubed potatoes and 3 chunked carrots High Pressure 6 minutes NR for ten minutes Turn to high saute and thicken gravy with a flour slurry or leave and just dip crusty bread in the thin broth.

  16. I think you are correct . I got confused with the product that spins the food around as being an "air fryer". This is a convection and infrared heat source. And you are on the mark about the buzz words...Well now I feel fine leaving my Big Boss experiments here This guy has the capability with the expansion ring to a cook a 16 lb turkey.
  17. HOLD ON A SECOND.........I'm OFF TOPIC!!!! I don't have an air fryer! I have an oil-less fryer!~ I will pick up my hamburger and french fries and stuffed mushrooms and go to the right play board This is the Big Boss Oil-less fryer! I'll check out some you tube video's and see what the difference is p Thanks I will do that with the other tray...genius! Mmmpomps
  18. LOL I thought I wasn't going to buy one of these either!!!!! You may be right on the fearless bit...I just made Scotch eggs, which I have never made before...and will need to rename them Irish eggs as I discovered I didn't have any Panko crumbs! These are breadless Scotch eggs...eggs made in the Instant pot
  19. Ok second experiment a success. Tonight is going to just be small plates, leisurely eaten with a few glasses of Apothic. Goat cheese stuffed mushrooms with hot salt. 15 minutes at 425 degress. A few fell to the bottom as these were small button shrooms but even the fallers were the cooks treat! Excellent brown! Fries are in now...a riff on Scotch eggs next....
  20. Damn you all! LOL I"ve had my eye on one and this thread made me finally do it. Picked one up tonight half price....jumped in and made hamburger and fries and warmed buns...I'm impressed. The fries are good. Not deep fried in duck fat type of fries. But GOOD crispy , browned fries....burger was pretty acceptable too
  21. Last nights Instant Pot's fail, tonights success! I attempted to make chicken with chow mien noodles (I've never used these before I found them in the refridgerator section. A firm but fresh noodle. Directions said to cook 4 to 5 minutes. So I figured 2 minutes in the IP would do the trick after cooking some chicken thighs , carrots and onions....Well it didn't they were still too hard and I didn't feel like doing any more so we picked up the yummier morsels , had a Caesar (the drink not the salad ) I couldn't toss it out. I thought about making a soup out of it tonight but then decided I'd just fix this up...made some green onion omelet to add, steamed broccoli, sauteed mushrooms and went for another 2 minutes on the noodles. Success

  23. For fish yes. It was more the potatoes still had a bit of that raw taste. I love how the meal looks and tastes, I just need to tighten it up a bit
  24. I'm really intrigued by the fish dinners in parchment paper. BUT I can't seem to get the timing down pat! My concept is there but the cook time isn't right yet. I browned thinly sliced potatoes to start. Laid that uncooked side up , zucchini slices on top of that, cod, salt and pepper, basil, hot sauce, green onion, lime juice and onions and black olives..6 minutes manual high pressure. I'm thinking I should try the steam setting which is the hottest. It was cooked but JUST. The Man loved it, I want to improve it.
