  1. If you go to McDonalds and change the menu, you wait. So why do people feel in a fine dinning environment expect things now, even after they have changed everything on the menu, no this, no that, can I substitute this for that, I have learned that once you let the cat out of the bag it is hard to get it back in. When I had my own restaurant and someone made lots of changes I would present a new price fro the changes, these changes cost me money, although life is different when you have relationships with customers, you have the tendency to allow a lot breathing room for someone who spends lots of money in your establishment, it is called a regular customer and business is based on that. You treat your regulars like gold, but someone who you have never seen comes into the restaurant and has these entire weird request you kind of take a step back. What Should we just bend over and take it from every one???? steve
  2. If it affects the kitchen and it cost more money then why not?? steve
  3. If a person with more requests be willing to pay more money??? steve
  4. Let's see here, there is one common theme going on here; let's say that there is a common agreement that we want to have GMO'S labeled, is there anybody out there that feels we do not have the right as consumers to be warned if something has a GMO??? I needed to remind myself what a GMO is, so I thought I would plug in a few of those definitions I found. Why is Monsanto so hardwired to change nature or for that mater any Chemical or Genetic Company?? So Humans are saying that nature can not solve the worlds food shortage problems and only science and GMO's will save us from ourselves, this is where I have a huge problem with scientist and science. We need way more data before we can answer theses questions, the sustainable agriculture Industry has been around for a long time, traditional farming or non-chemical farming, or low intensity farming, all have been around since we were on this earth and yes we have been splicing genetic traits for as long, but I have a problem with mixing traits between animals and plants or creating some whole new life form. Human kind is on the brink of science fiction. We have the technology to create human life but do we have the smarts to use it wisely, this is where I like to draw a parallel between genetics for humans and genetics for our food source. I just can not get past the door, call me a traditionalist but I find it wrong. I am not a religious man but I find it against nature and I am not a rocket scientist but I know that man can not beat nature, or are we that stupid and pug. We need to come to some kind of resolution in this discussion because we are going around in circles. I feel that corporations will do what they will do, we can only change or control what we do and that is with the almighty dollar, every dollar is a vote or every dollar shows corporations where their direction in research will go. There are enough alternative food sources out there now that we can have somewhat a influence on what we eat or what corporations will grow or produce but the ultimate thing is we must have the right to know what is in our food. If they think that GMO's are so safe then what does Monsanto have to fear by discloser??? steve some links Monsanto vs Schmeiser The Case Against Patenting Life By John Ikerd http://www.ssu.missouri.edu/faculty/jikerd...balization.html By John Ikerd The Real Costs of Globalization To Farmers, Consumers, and Our Food System
  5. Thanks for the info steve
  6. Cargill Louis dreyfus Con Agra foods ADM Monsanto Saputo Unilever Parmalat Agropur Altria Each of these quotes comes from the corporate web sites; each is a description of the corporation by the corporation. Each has a link to where the quotes are from, each corporate web site.. The purpose of this is to show the corporation we are talking about and how few food corporations there realy are. A few control the many. steve
  7. I grew up in Edmonton, The burger palace; if White spot is the best burger Vancouver can produce, you are in serious trouble, Licks in Toronto is better then anything Vancouver can produce. Peters in Calgary is better then anything Toronto can produce steve
  8. I could not say it better myself When it comes to fruit; there is so much out there, you walk into the grocery store, look at what you buy, where is it from, how much??, what does it look like??, we all can get info on places and their seasons, combined with your eye, and the calendar, we all have tell tale signs of what is in and what is not. steve
  9. Can you name a chef who has been around as long; ( john bishop, Umberto?) steve
  10. Like I said before; The only thing I disagree with is the non-discloser on any info related to genetic diffrence. steve We do not have the research grants that monsato has to prove anything in regards the scientific method.??
  11. Hey that works for me! steve Who is going to be the Judge? There is plenty of evidence and science to prove anything; we all do not have the money Monsanto has to prove anything!!
  12. These Are In No Partucular order: 1) The crepeie 2) Bul-Go-Gi -House 3) The Armoury 4) Anything on white avenue 5) Vi's on the Rivervalley (I do not think it is there anymore) 6) La Boheme 7) The Unheard of 8) mcdonald ( cp) 9)harware Grill 10)Jacks Grill 11) Bistro Praha
  13. Excellant question; for me it is not the singular of the corporation, cause a corporation is a person, but what is a group of corporations, if we in theory can prove a singularity in a corporation then can we prove plural in a corporation, then how does It defend itself?????????????????? steve
  14. "I would like to make something more clear to you as well, I am not a leftist but right wing, actualy more center but on the right side but not neceraly god, I mean I do not want to be on the bad side of god either, you never know when we die that we might need to be on the right side of god, but not to right of god, i mean center or is that centre"
  15. I am open minded to how safe GM foods are, if they Monsanto are so confident that there will be no long term effects on us, the they should not have a problem to disclose all foods that contain GMO's, this mostly is what my thesis is all about. " I believe that all GMO"S should be disclosed to the public, all foods containing GMO's should be listed and told if there is any animal genes or any other gene not normally occurring in nature" The scientist have not proved anything, they do not have any data showing 20 years of research in an open lab showing how GMO's interact in nature, until that time I will always be reluctant to believe everything that is written by a huge corporation supporting only one side of science. steve
  16. I am not a Scientist but a Chef with High school science knowledge and a father who was a doctor; this might have influenced me in some manner. I know that scientist have theories to prove in a lab, they get grant assistance and might get someone to sponsor their doctorate. They do their thesis in something like isolating a gene that might make Tomatoes travel better or last longer before they reach the market. Their research has substance to it and there’s is an honorable thing that they are doing. My Question is to all you Scientist out there, do you take into consideration of research which is usually done in a closed environment ( lab), or on a research farm, not as closed as a lab but still how much outside influences and how long are these tests done. In Mother Nature there are huge cycles that go in and out of nature, all Her variables change in massive cycles, like the weather, seasons, what other farmers are growing, Temperature, wind, and many others. When genes that are produced by humans make it into the gene pool how will these genes interact with what mother nature does and do you know without a doubt, that there will be no long term and unforeseen changes when other genes collide, like animal and plant genes, like in Star-Trek a new life form was created. Science fiction always becomes science at some point and time, back in the fifties so many science fiction stories were viewed with laughter, look back in time and come the vaults of science fiction and you will see that many of our predictions where not that outlandish as we first thought, so what makes us think that fifty years from today that what we think as now outlandish will be commonplace. If the opposing side of science had as much money to prove theories with the same vigor as Monsanto gives its research grants, there would be a lot more even playing field. We in society are being bombarded with science fiction; Technology is moving faster then we are, courts of law are still trying to figure out what when on yesterday, every thing will take time for things to balance out. There is way more information and knowledge to learn then we have time to live, although we must be given time and have the freedom to choose our food source, if we loose trust in our system, there will be chaos and we do not want this kind of madness. There are alternative choices out there, the sustainable agriculture industry is growing and the organic food industry is so successful that it has become mainstream, so it is being bought up by the big corporations, so it now has come full circle in 30 years. We just need to ask questions, where does our food come from???? If we stop and become complacent then we are in trouble, because who will be the canary in the coalmine???
  17. There was a Canadian farmer who was sued by Monsanto for having some of the Copyright Genes occurring in his field, his farm was next to a field that contained Monsanto product. This farmer was forced to go on the defense and prove in a court of law that he was not quality of using Monsanto genes in his crop strain. This farmer eventually won in a court of law and was proven not quality, although he could have sued Monsanto for contaminating his crop, he was a seed saver farmer and made his living by producing seed. He spent 50 years developing a very diversified and sustainable food crop seed for sale and was about to put his seed on the market, now his 50 years of work has gone down the drain because of the contamination of the Monsanto gene infiltrating and crops interbreeding with his crop. It blows my mind away that this even went to court, the thing that gets my goat even more is this farmer who has lost 50 years of work can not afford to take on Monsanto for something they sued him for but they are just as guilty of destroying his work as they feel that he is using their gene without their permission. This is more legal stuff to keep lawyers busy for the next hundred years. So the question was show us the proof where Monsanto has affected the environment, is this on its own not enough to show how something Monsanto does effects the lives of other farmers not wanting to be part of Monsanto’s program. It is like StarTreck and the Borg; Resistance is Futile. Steve
  18. You are absolutely right it is about choice; choices from different sides, the big corporations and science have brought us to this point, so many people go to the store and make political choices on what they buy based on opinion, feelings and maybe even some facts or science. For me it is a crime against democracy when we do not have the right to choose, the public will choose if they want GMO in our food source, and science and business will fight it out with propaganda and bull shit mixed with fact and half truths, just like election time. The ones with the best spins usually win, but having millions of dollars and all the research grants, it is definitely not an even playing field, that is why it is food politics. You have the understanding of proteins but who has done any studies on the long term affects of these proteins on the human body, on our livestock and plant based food sources, we opened up the can on g-gnomes, do we really know the relationships and long term affects, I am not a scientist, but I say they are full of shit if they believe they know the answers, they are as much in the dark as we are, they are all just cashing out while they can. It is all about sustainability, how long can we sustain the earth using this type of high intense farming mixed with radical GMO type ware far against all living matter and creatures that come into contact with the protein types in Seeds, chemicals, fertilizers that all have not been in the environment before under their current form. Do we really know??? Monsanto profits now, but what about ten years from now, 100 years from now, do we know the answers?? How do their profits affect us; Humans? NO? Cows are a domesticated animal, they do not evolve???? Why can not a farmer sue Monsanto for contaminating their crop with the G-seed and loose fifty years of work??? Monsanto should pay the world for this, this farmer lost something because of what monsanto did. Does Monsanto own life???????????? And the fact that even if the farmer could sue, can they?? steve
  19. is it not the chase that makes it fun to post? so many ideas floating in your mind at once where do they go; here, there, I just do not know. steve
  20. Holding the bowl with one hand and the tick with the other
  21. That is a great idea, sure you could use that base for any thing. steve
  22. I am seeing more discusion and media articles on food politics, I would like to make this an open invitation to all interested in our food source and keeping healthy and free of GMO or at least giving us the choice to choose. So many chefs are choosing to become political and supporting sustainable and local foods , lets talk and see where we have a common base, I know that there must be more people out there with an opinion, so much silance is not good, let the voices be heard. steve some current BC food politics
  23. When I was a kid in Edmonton it would be -40 and I would still eat ice cream, maybe that is why I have that tick
