  1. Once again the dining suggestions are a bit off for Charleston. Even if the friend likes simpler foods there are good options in Charleston. Hank's would be the best choice for both of you, I have no doubts. Hyman's always has a long line, but dont let it fool you, its second rate, if that. Rue de Jean would be good as well. And any of the southern food places, Jestines or Hominy Grill would be sure to please.
  2. a tarragon caramel disk made with isomalt would work perfectly. and once you understand the caramel disk technique you can make any flavor you like. green tea, carrot, peanut, blablabla.

Or just check out the website. www.mccradysrestaurant.com Don't expect lowcountry cuisine though, Chef Kramer refuses to put shrimp and grits on the menu although he has been known to serve his rendition of the classic dish on tasting menus every now and then. picture this, seared prawn on fresh polenta with tomato pancetta jus. have fun
  5. Yamazoto is good. Great sushi and appetizers. I stilll want to try the chawan mushi, And I will next time I go.
  6. Foie-chocolate truffle with tamarind, Hot and cold foie soup, and the cotton candy. All very good.
  7. went to minibar tonight: Very cool. High points; Cauliflower in textures, clam chowder, conch fritter, foie in cotton candy, sea urchin in pomegranite, guacamole. Low points: Lots of trout roe, love it, but only once. For 65 bucks it's a great tasting menu, very unique.
  8. Dixie Bones in Woodbridge is one of my favorites. Ribs, chopped pork, blackeye peas, greens, and cole slaw all meet my necessary requirements for good bbq. And then some.

  10. Hey Sean, remember me? My name is Chris, I remember you from hangin at Big John's. That's crazy to see you reply.. Charleston has a lot of great places to eat, although I hadn't seen some of the finer restaurants mentioned on egullet. Nice to see your doing well.
  11. I guess Bowen's Island is ok, but only for local oysters in the winter. But oysters are a GOD thing, it's up to nature to make those taste good. Personally I prefer restaurants that I feel comfortable using the bathroom.
  12. Reading some restaurant suggestions from Charleston, Sc made me cringe. I lived there for 7 years so i feel I have some authority on the subject. Here's my top 5: 1 McCrady's-Chef Kramer has more style and quality than any chef in town. 2 Charleston Grill-Classic consistency and the best service I've ever enjoyed in a restaurant. 3 Peninsula Grill-Good regional cuisine, great service. 4 Slightly North of Broad- Chef Frank Lee cooks with love and the food tastes like it. Not too stuffy as the name might imply. (S.N.O.B.) 5 Hank's- Best seafood in town, period. Check them all out for yourself in any order I'm sure you'll be pleased.
  13. I too was accepted for a stage at El Bulli, this year. I am very excited. I came to egullet hoping to find someone else who was going. I am interested in learning how you came to be accepted.(I sent numerous letters including my resume, and applied online several times.) And also was curious as to any arrangements youre making befrorehand. I still need to get my visa but that shouldnt be a problem because Sr. Raurich sent me a letter from the CETT, a division of the University of Barcelona, verifying my acceptance into an extension course through the school.(the stage at El Bulli). I was going to D.C. today, but the streets are a mess with ice.
