Cooler the last couple of days at last! A few meals: Pork Larb and leftover Beef and Black Bean Garlic. Eaten with pan-fried tofu and lots of Thai basil Couldn't find the usual Steelhead Trout fillets, but whole dressed were on sale. Made slits on the fish, slipped in Thai lime leaves and lime slices. Stuffed the belly with lemongrass, green onion, ginger, cilantro, and more lime leaves. Laid the fish on a bed of the same greenery, wrapped in foil, and cooked the whole thing in the oven. Tried to make shredded tater hashbrowns...disaster... Really wanted lobster roll after our trip to Louisiana. Superstore had frozen lobster claw meat on for $9.99. Picked up 2 packets and used mini baguettes...Not comparable to fresh but supper was on the table! Was busy trying to assemble a new BBQ with hubby and cleaning up the gazillion crabapples from the lawn. A quick supper was required...Instant Pot Chili with spaghetti squash. Melted Mozza on top and a sprinkle of Habanero Lime...

@KennethT: Bring a small pot with half vinegar and half water to a boil then simmer until the "offensive to some" aroma is gone.

Just got back from a 4000 mile road trip to Morgan City, Louisiana - celebrating the centennial of the making of the first Tarzan movie in the Atchafalaya Swamp. We were there with a gathering of Edgar Rice Burroughs(grandfather of sci-fi and author of Tarzan) fans. I just saw mention of gumbo up thread...some of our friends had great seafood gumbo, but hubby and I indulged, 2 evenings, on Royal Red Shrimp Boil (or bawld, as pronounced by the locals!). I've never tasted any shrimp SO good - flavour and texture of lobster, and huge! There were about 16 to the lb, and I couldn't finish my order. Didn't do any side trips this time, and I was missing my garden and kitchen... First meal at home- grilled tenderloin with new taters from the garden, carrots, salad, and sauteed mushrooms Tonight, supper was Black Bean Garlic Beef with Bitter Melon on Udon noodles

Something soft for hubby while he's getting teeth repairs! Singapore Rice Noodles with homemade char siu, shrimp, bell peppers, and fresh beansprouts.

Had a recipe for Chili-Lime Clams, but clams were scarce in our little city this week. However, the mussels were freshly installed in the fish tank, so I went with the 2 lb bag plus a dozen little little clams. As I have an abundance of fresh Thai lime leaves these days from my own little tree, I threw a few in with the shallots, garlic, cherry tomatoes, etc. Had some large shrimp on hand. Peeled the ones for hubby and simmered the shells for broth instead of the cup of beer called for in the recipe. Didn't have any chickpeas, so I added diced taters. It worked. Shrimp were seasoned then sauteed in butter. All eaten with toasted baguette and corn-on-the-cob. Broth was amazing!

Vadouvan Curry Shrimp: Made this for the second time ever! Missing tonight's was fresh curry leaves. It shouldn't be an option as it adds a lovely fragrance to the dish! Also didn't have ground cardamom, but I had whole pods I brought back from India. Cracked open and chopped worked! I quite liked biting into bits of the seeds. Eaten with spaghetti squash topped with black sesame seeds and roasted ginger, sauteed beans from my community garden, and peas (from the freezer).

Are these winkles? They are bigger than the ones our local Superstore is bringing in...I've only had them boiled in brine in England, or in black bean garlic sauce...Hubby considers them a waste of energy!😀

Catch up on reading posts and posting! I've never had so much time on my hands for gardening that everything is taking longer...Retirement is great!😁 Tonkatsu with spaghetti squash and peas Too tired from playing in the dirt to think about supper...so it was smokies, shrimp and cabbage stir-fry and corn on the cob Steamed pickerel with ginger and green onion Steak and vegetables And tonight, fish yet again! Blackened pickerel with cauliflower Mac'n'Cheese and a big salad

Beef & Veg Pie...One for us, and one for a neighbor who mows our common stretch of lawn...a bachelor who works outside all day. The pie was just in time for his supper! Salad with diced apple, cuke, iceberg lettuce, mushrooms and tomatoes seasoned with raspberry dressing.

Your memory serves you well! I've made th chicken many times but have yet to do the salad...maybe just too lazy? Will have to plan on that next time we have company...

Pre- Father's Day dinner here for hubby...before the kids swoop in tomorrow! Pulled out a package of AAA Angus rib steaks from the back of the beef basket (still could do a "Cook Your Way Thru' the Freezer)...seasoned with Montreal Steak Spice and thrown on the BBQ. Sauteed mushrooms and a salad made the meal just fine...

Severe storm warnings started in the afternoon. West of us, power was going off and hail the size of tennis balls were playing havoc. Storm chasers posting about development of tornadoes... Had chicken in marinade and cooked up Filipino Chicken Adobo for supper right quick! Cooked up some Coconut cardamom rice and enjoyed supper while the thunder roared and the rain poured. Luckily, the worst of the storm system by-passed our city. Have never made Chicken Adobo nor eaten it, so I'm not sure exactly what it's supposed to taste like. It was good...almost like Chinese soy sauce chicken with the added tang of the vinegar and a bit of afterburn from the black pepper and chili pepper flakes. Salad seemed unconventional but complemented the rest of the meal.

Mapo Tofu...Me too! me TOO! Hubby called it "an interesting and delicious concoction" Mapo Tofu with ground lamb and diced eggplant. Eaten with stir-fried bok choy...Missing the rice...

Cool enough a couple of days ago to do a single rib roast in the oven for supper. Enough leftovers for lunch next day. Daughter gave me a Starfrit electric spiralizer for my bday! Finally got around to trying it out. I'd love vegetables done any way, and this was pretty. Hubby is not keen on veg as a substitute for pasta, but with Alfredo sauce...OK!

Some dinners during this busy gardening time: Rice noodles, Char siu, bok choy New order of fresh pickerel fillets from Lake Manitoba: Fish 'n' Chips in beer batter. Curry sauce with fresh curry leaves for the chips! Pork Vindaloo with a potato and quartered onions in the Instant Pot and roti Last feed of halibut fillets that I picked up at Safeway 2 weeks ago...50% discount! Brushed with mayo and coated with Panko. Potato Patties are so easy to throw on when short on time to make chips!

Not as ambitious as Liuzhou with his wontons...but had shirataki noodles and baby choy sum on hand. The Thai basil also needed nipping, so all made a great lunch.

Got a line on fresh pickerel from lake Manitoba... Lightly dusted with seasoned flour (Old Bay) then pan fried. Cauliflower and asparagus were lovely and good price today, so perfect for a quick meal on a busy gardening day!

I use only ONE fillet...and it's the "meat" in between the "greenery" Bottom layer = greenery ( Cilantro, stalks of green onion, slivers of ginger, chili peppers, thin lime slices, Thai lime leaves, and bruised stalks of lemongrass, sprinkle of oil. Season fillet before piling on the greenery. ), then fillet, then greenery in reverse order:Lemongrass, lime leaves, lime slices...etc

@ElsieD: I sandwiched the fillet with : Bottom layer :Cilantro, stalks of green onion, slivers of ginger, chili peppers, thin lime slices, Thai lime leaves, and bruised stalks of lemongrass, sprinkle of oil. Season fillet before piling on the greenery. Top layer - reverse above Wrapped in foil and cook in oven @375 OR on the BBQ Here's what it looks like prepped.

Weather finally turned spring-like! Gardening takes time away from eGullet! A few meals: Steel-head Trout baked in foil with lemongrass, lime leaves, green onion, cilantro, ginger, chili pepper - eaten with roasted carrots and asparagus. Taiwanese Three-cup Chicken in Instant Pot Eaten with vegetable medley that needed using up! Tonight, I had ground beef thawed and wanted chili or spaghetti sauce. No tomato sauce or paste on hand, but I did have a jar of antipasto and some red kidney beans. Threw in dashes of Lee 'n' Perrin sauce, Matanzas Chili Spice Blend ( from a visit to Grapevine, Texas) and smokey chili...and it was great! Eaten with spaghetti squash for me and low-carb black bean spaghetti for hubby. Loved all the food eGulleteers have been posting!
