don't forget about the kaiten sushi thread from about the middle there is some talk of ways to choose a good place as well as some names for theTokyo area.

Thank you so much!!! I just went to a wonderful sushi place in SF, and the owner and waitress are all japanese!! I get to practice my japanese, and the good thing is if i don't understand, i can ask.!!

I had a fish called pincho (spelling) that was very good, do you know what that is?

bincho maguro, also called shiro maguro, is albacore tuna sometimes it is called white tuna on menus.

This is really soft and quite creamy, it has just recently become popular in Japan and is one of the cheaper fish.

If you really want some help in restaurants, I suggest you pick up a copy of Robb Satterwhite's What's What in Japanese Restaurants, this is a great book (that can also fit inside a purse) he gives the names of foods in the Japanese characters along with the romanization and English meanings. It is broken down into types of restaurants and also has general tips/phrases on ordering.

Another topic regarding kaitenzushi is the use of daiyou-gyo.

'Daiyou-gyo' (substitute fish) refers to a fish sold or served under a false name, especially at a kaitenzushi restaurant.

Here is a list of daiyou-gyo in Japanese (sorry, too busy to translate it all).

Again, this is where Kura Corporation comes in. This year, the March 1 issue of a weekly magazine reported on daiyou-gyo and on May 9, Kura filed suit against the publisher, saying that "We do not use daiyou-gyo and remain profitable through marketing efforts. The article significantly causes detriment to our business."

I'm thinking of starting a new thread on daiyou-gyo, probably much later.
