I cook couscous with orange juice instead of water and stir in some orange zest. It's great with chicken.

Well, I could have sworn that someone posted the suggestion that I followed, but now I can't find it:

Roasted beets, cooled and peeled

Sliced red onion

Vanilla vinegar

Lemon Juice

Hazelnut oil

Torn basil leaves

S & P

and . . . grated orange zest.

Pretty damn good. :biggrin:

But I've still got lots more in the freezer -- waiting until local tomatoes are in :wub:

It's a nice additional flavor to a lot of provencal dishes, like a traditional fish soup or a bouillabaise. I have a great recipe for a chicken stew, too, which calls for orange zest. It pairs very well with fennel. Also, it's nice to cure some green olives with orange peel and herbes de provence.
