Sufganiyot (Jelly Doughnuts)

A favorite for Chanukah. Golden brown yeast doughnuts filled with your choice of jam or jelly and rolled in sugar.

  • 2-1/4 c flour
  • 1/4 c sugar
  • 2 packets quick-rise, instant yeast
  • 1/4 tsp kosher salt
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • 1 large egg
  • 1 large egg yolk
  • 2 T canola oil
  • 1 c tepid water
  • 1 large egg white -- *for Technique #2

oil -- for frying


jam or jelly -- for filling


icing sugar or granulated sugar -- for rolling
