  1. Nachos with leftover roast chicken, pumpkin and tomato sauce, guacamole and sour cream.
  2. Huirays chicken wings in the Kam Heong (golden fragrant) style. Served with stir fried sugar snap peas and steamed rice. Thanks huiray, it was delicious and I will make it again.

  4. Sorry, rhyming slang, dead horse = tomato sauce (which Americans call ketchup).
  5. A sort of ensalada Mixta, without the tuna - replaced with roast chicken. Baby cos lettuce, Roma tomatoes, cucumber, corn, hard boiled eggs, cherry bocconcini, red onion and basil. Dressed with a red wine vinaigrette.
  6. Cumberland pork sausages with onion gravy. Served with potato mash, slightly mushy peas and brussels sprouts with bacon.
  7. Yes, heidih, it is delicious although a product of laziness on my part. Our local shopping centre has a Filipino grocer, so it's easy to grab a 100 g packet for AUD $1.40. I'm trying to replicate the crunchy salad toppings from Myanmar where we did a cooking school, there was no packaging and I'm finding it difficult to establish what those little crunchy things were. These are close, but not the full deal. I'll keep trying though.

  10. Roast chicken, with pesto under the breast. Veggies are chat potatoes, pumpkin, parsnips, shallots, zucchini and baby Roma tomatoes. Served with Brussels sprouts sautéed with bacon and pan juice gravy.
  11. What's in the veggie draw minestrone. Any appropriate veggies, a can of tomatoes, a can of mixed beans and beef stock. Served with cheesy pesto toasts.
  12. Teriyaki beef bowl with Mi Chay noodles, green beans, bamboo shoots and spring onions.

  14. Chicken Italiano- thigh fillets in a fresh tomato sauce with bacon, button mushrooms and broad beans. Served with mozzarella mash, and garlic zucchini with crusty olive bread for sopping.
  15. Bacon and mushroom risotto, served with salad and fresh sourdough.
  16. A simple pesto with spaghetti as I struggle to use all the basil we have growing. Served with garlic sourdough.
  17. I'd be tempted to make a lime limoncello, from memory it takes several weeks to mature. Hopefully, you're not off the booze for ever. Try it sprinkled over vanilla ice cream. Lucky you, limes are very expensive here, $15 per kilo, and I'm lucky to get more than 2 tablespoons of juice.

  20. I will never again fumble while opening a precious packet of Kampot pepper carried all the way from Cambodia. At least half ended up on the floor, as did I, on my knees for 30 minutes picking them up.

  22. Nem Nuong with Nuoc Cham. The patties are made with pork mince, ground roasted rice, fish sauce, spring onions, garlic and pepper. The dipping sauce is water, fish sauce, rice wine vinegar, fresh lime juice, chilli, garlic and pepper. To accompany is lettuce, basil, mint, baby spinach, tomatoes and pineapple. You can wrap them, or use a fork !

  24. An Asian flavoured chicken soup with tomatoes, basil and spinach. He likes his with crushed nuts and chilli vinegar. i like mine with fried shallots and fried garlic.
  25. I'm excited now. I've been planning a trip for May which sees us in Georgetown, Penang for maybe 4 nights. I lurve street food. Tell me more huiray, apologies for hijacking !
