    the misses and I walked around 2.5 hours last night . we walked through prospect park and the trails and got lost a few times but, it was a lot of fun.. Arrived home, hungry.. In oil I toasted cumin seeds, then a bunch of ginger, then added jalapenos, then cauliflower florets and salt.. Added some water and covered... The as the water left and they started to pan fry a bit, I added some curry and sugar. It was really good. Served with three types of lettuce with a ginger salad dressing and some onion.. Rice was leftover from lunch.. Rice was garlic with oil, then peppers, then rice, then tomatoes, wine, basil.. I stopped measuring my rice all together... I don't know, i keep saying.. I have never soaked, never rinsed, my proportions don't seem to make sense.. I make it perfectly every time.. I think it's the copper pot.

    there are many variations of that classic american japanese restaurant dressing.. some say add carrot, some say onion, there are all sorts of things.. I like to take my mortar and pestle and smash together some ginger first, then add soy, sweet soy, sugar, oil, an undetectable amount of sesame oil a little rice vinegar and that's it.. Sometimes, onion, sometimes carrot.. I like the sugar,soy, ginger combo.. From there, many things can happen.

    i have lost 10 lbs in three weeks.. No real set meal times, just whenever we are hungry... We also have missie k with us, who is home from college.. She is not vegan but, I cook most of her meals.. Sometimes with meat, sometimes with us.. She is super in to ground turkey these last few weeks and learning to cook for herself.. I taught her some seasoning things I like. She loves making a mustard salad dressing. Occasionally I will cook for her when she gives me her measured ingredients.. X amount of turkey weighed, olive oil measured and then i can add spices and procedures and such... This was a turkey kebab. I grated ginger and garlic and added soy and cornstarch and garam masala and I forget what else.. Avocado salad. Also, i used barely any oil which blew her mind.. So, now she may get interested in grilling. a couple of days later.. Ackee, spinach, chickpeas, I made that cilantro.. I had the ackee sitting out longer and the brine taste dissipated a bit.. Stronger flavors accompanied it as well. I liked the ackee this time around. I also cooked it lighting with some oatmilk and tried to imitate scrambled eggs. This was a winner.. This or something like this should go on a menu soon. The green sauce I made for fried yuca.. That was dinner one night... 2 jalapenos, i head of cilantro, 2 garlic cloves, cumin, vegan mayo, a little lime a little vinegar, salt, pepper, sugar. i have been making lots of juice with leftover vegetables.. Anything about to go bad, gets tossed in.. lettuce, peppers, ginger, jalapeno, apple, celery, carrot, the list goes on.. just juice it. I like a lot of lime and ginger in whatever juice i make look at how youthful it makes me look chana masala nachos with fake cheese, fake sour cream, fake meat.. served with a really good real salsa of tomatoes, thai chiles, cilantro, avocado. This was pretty damn good actually I made a few other things this weekend.. A vegan pasta, some lettuce wraps with the peanut sauce, cucumber dish chinese dish, a couple of rice noodle dishes... Lots of vegan things. This is kind of funny... for the first time in my adult life, I do not have butter in my fridge.. So, we have now started using mayo and my MIL margarine she left, to make grilled cheese sandwiches.. The boy has made no mention, of the change. Also, we are starting to make some headway with spicy foods.

    You know, i have been really excited to start playing around with ackee but, the freaking can taste kills it for me... It's too bad... I have been to jamaica a few times and the best part of the culinary experience has always been the ackee.. My wife didn't mind it and actually like it.. And while I didn't hate it, i didn't like it either... I used linsteads.. Too bad, i need fresh... I have problems with metal and am very sensitive to the canned taste. Oh well, i have already starting looking for fresh ackee.

    I had some ackee and was feeling in a mood today... Was listening to Buju Banton early this morning.. Next thing you know, i made a ginger and all spice kale, add some peppers, garlic and tomatoes.. Cook for a bit, add the ackee and some bread... missing the salt cod and no fried up festival... we had readily available sesame bread.

    Simple dinner tonight for me.. I made some broccoli by cut in half length wise, these 10 inch heads. not too big. boiled in salted water. Once cooked, I threw them in a bowl hot, tossed with minced raw garlic, salt, olive oil and a little lemon. Normally i would add black pepper and lemon rind but, i didn't tonight.. I made the boy turkey meatballs with spaghetti. My daughter is eating a lot of ground turkey so, i stole some of hers, cracked an egg and mixed with parm and panko, a splash of milk. i thought I made it a whole day without food photos but, it turns out, he took the photo... I only took a photo of him eating it. Simple, two little cute turkey balls.. And egg noodle tagliolini https://lamerenda.com/products/taglioni-pasta It's a sample. I can't eat it because of the egg. But this is a new line of products that I had the chance to try many items from.. Anyway, turkey meatballs cooked in a pan with garlic when the two balls were browned, i dumped in whole peeled tomatoes, sugar, xaoshing cooking wine, minced garlic and some basil that I pulled out before he could ever see it. after dinner, we walked a mile or so for some vegan passion fruit with ube coconut cookies in it.. It was pretty great.. If you are in the market for vegan Ice Cream, Van Leeuwen seems to be the best right now.. That and Noona's.

    A barrage of beautiful dishes on this thread... Tonight, we walked for maybe three hours.. I would say, we did about 6.5 miles. We got home, i quickly marinated tofu in sweet soy sauce and some sugar. Grilled and served with a few types of lettuces.. peanut sauce, rice noodles that I simply soaked in warm water and tossed with soy and sesame.. Raw garlic, raw jalapenos, mint leaves. I had the peanut sauce made so, it all came together in like 20 minutes or less. Of screen, I had one of those rice paper disks and made a little summer roll, just to make it.. It was very good too. : grilled tofu

    Fridge: Pretty tame, nothing too special.. I have a few beers I am saving on the door below.. I purchased them over 5 years ago. I clean out my fridge regularly.. I try to use everything in it.. If there is no use, it gets tossed... I receive a lot of samples from work so, things can get out of hand rather quickly. Lots of lettuces right now, lots of Chinese jars and sauces. Containers are leftovers for lunches, a few sauces I made that I am keeping. I have been throwing away so little, it's been great. Outside of the beers, the wine from my save the date invitation and that old jar of unopened horseradish, there isn't anything older than a few months in this fridge. Maybe some old jam my sister in law gave me last year for xmas.. We had a local artist design the exterior of our fridge.. Some folk art, some abstract, some conceptual.. It's a lovely mix and we find completely transforms the piece. Freezer.. I managed to move most of the meat.. Now I just have stocks and vegan ice cream.. a few frozen pizzas, a big thing of chicken livers and thats about it. But yeh, ice cream is a thing here. The three of them can eat ice cream everyday.. 10 foot door spice rack and a closet... I don't have a lot of things anymore.. A few spaghetti packs, a few tins of tomatoes, some tea, some starch and flours a few grain, sugar, salt, peanut butter.

    Made a few things tonight... Eating plant based, it's a lot less structured than eating omnivorously.. But, I made a large thing of chickpea masala, i roasted some eggplants and used a peanut dressing I had made, I marinated tofu and grilled and put in lettuce wraps with toasted ground rice, ginger, sauce, hot pepper. Also made this indian potato dish with these beautiful potatoes purchased at the green market. Aloo jeera it was called or jeera aloo.. Basically cumin seeds cooked in oil with smashed coriander, then ginger, jalapenos, a little water, salt and cilantro. It all turned out really good.. i have leftovers. Roasted the eggplant for a bit, flipped, roasted more.. then split and mashed then added a peanut dressing and let cook more. I loved this dish... A little lemon at the end. I use the spice packet from a spice guy out here.. Very easy.. I had cooked the beans on saturday and left them in the fridge... I had used some for a salad the other day.. Used about 3/4 of them in this dish... Lunch for three leftovers. But yeh, just start with ginger, garlic, onion, tomatoes, then the spice packet and eventually the beans. Tofu wraps.. I have two types of butter lettuce from the green market, this purple lettuce, then a grilled marinated piece of tofu, ginger, jalapeno. then peanut sauce and toasted rice powder.. The bride loved this I have a lot of rice powder now.. need to start finding ways to use. pre powder

    my injera was like this super dark dark chocolate.. Judging by the color of mine against the color of what i see at my local spot, I would guess they use somewhere less than 20 percent teff in their injera.

    So, i tried to make injera.. I tried to use 100 percent teff.. And while I got what was pretty much the consistency and texture one looks for, oh baby, the fermentation may have worked a little too well.. It tasted of stinky tofu.. It had that super fermented funk that was jsut a little too intense.. So much so, my wife made take the uneaten bread out of the house... luckily, i met a neighbor who was willing to try and eat it.. Not the actually crepes I made but, the batter.. Maybe it went bad, I don't know.. poor neighbor.. So yeh, scrapped that... I mean, i don't know what the hell happened but, it was bad. I am going to text him to tell him to just toss it. I did a test early to see if I was going to make rice instead.. Daughters first night back in 3.5 months.. Fossolia- It's am ethiopian carrots and green bean dish.. ginger garlic, tomato paste, tomatoes, carrots, green beans, some palm sugar, I forget what else.. It was so delicious.. I have a lot leftover. There is supposed to be more green bean than carrot but, who has more green beans than carrots.. Cabbage would have been great in here too.. Lots of chopped onions.. Chana Masala, or however you say cannellini beans, masala Ethiopian collard greens.. All spice, paprika, lemon, spicy pepper, tamarind powder with the greens, also some onions, garlic and ginger.. The recipe asked for a lot of cut up green peppers but, none on hand. i different flavoring than usually for me.. i really enjoyed it and feel there are many vegan ethiopian dishes I have yet to make.. This meal could have used a mushroom dish, a cabbage dish and a potato dish.. I threw in some of last night's dal and made some brown rice... This was an excellent meal.. The green beans and carrots was the undisputed champ.

    I was at the beach all day.. We were able to find a small beach club that was completely empty.. we literally had the beach all to ourselves... On our way to the beach we stopped at this small fruit stand.. We purchased coconuts that they cracked open and gave you a straw to drink the liquid inside.. While we were there, I noticed they had really good looking mamey.. like, really good looking.. they spoke no english, i asked for one, they cut it up and then i found out the price was 27 dollars... Still delicious but, i wouldnt have purchased it.. my wife was very happy. In keeping with the cuba them, i made fried yuca with a vegan green sauce, with clinatro and a little yuzu kosho and red onions and lime juice. That was the first fry batch... Basically boiled yuca and then fried.. The green sauce was a whole head of cilantro, vegan mayo, 5 cloves of garlic, vinegar, mustard and 4 jalapenos. I want to put this sauce on everything

    I am plant based still.. Sitting here with a glass of chilled vermentino, something had to give.. I made a cashew "ricotta cheese" Which is soaking cashews in water, then draining the two cups of cashews, adding two cloves of garlic, half a lemon, 3/4 cup water, salt, chile flakes and sugar... I portioned out the ricotta i was going to use for the eggplant and added some nutmeg.. Which, gives me a very similar feeling to basil. Fried up some eggplants... And layered... Tomato sauce, eggplant, ricotta, basil, tomato sauce.. I was thinking of adding spinach but, i didn't have spinach.. So i kept thinking about it. just a little flour after having them sit on a rack and drained with salt for a few hours. .. I am about to bake it the oven and call it a an early day.

    Frozen Pizza

    I always thought of frozen pizza as it's own separate entity. They way soy milk is milk, frozen pizza is pizza. Could you imagine a pizza parlor that actually sold something along the lines of elio's. Don't get me wrong, I like to burn elio's or stouffers and cover with tabasco and salt, once or twice a year but, it's it's own thing.. I guess more accurately, the way a mcdonalds cheeseburger is a cheeseburger, frozen pizza is pizza. Like when I crave a burger, I don't crave mcdonalds, but, when I crave mcdonalds, I am not craving a burger.. I am craving whatever chemical composition, the boys at the mcdonalds lab came up with. But, what is interesting is, in recent years, there is a new crop of frozen pizza companies that are actually just freezing well made pizza.. They are making restaurant quality pizza and vacuum sealing it..And no longer are they packaging the product in cardboard boxes and letting fancy graphics sell you, they are just leaving the pizza tightly packed in plastic ,leaving nothing to the imagination.. Anyway, I love to freeze pizza, i make sure my freezer is well stocked with pizza from my favorite places. I simply heat them up in a skillet or in an oven and moments later, i am enjoying a not frozen pizza, pizza.

    made dinner tonight for neighbors.. they have kids, my kid is home... For the kids, I heated up pizza. Squares and slices. They also made their own marshmallow pops that they assembled, decorated and then consumed.. I made another papaya salad.. Again no fish sauce, used palm sugar, lime, soy, chile pepper and salt. Then, i had some cut up ginger on my knife and added a bit.. i liked the taste and added a little more. I made another dal.. I also had some skirt steak in the freezer that I defrosted and did my thai fish sauce marinade to. More white rice and had leftover cauliflower and tahini. I made the steak for the parents, sliced thin and served with papaya salad, dal and rice. The bride and I had everything but, cauliflower instead.. Guests ate some cauliflower too. Successful dining, along with meat eaters.. then about ten minutes ago, i made myself a tostada.. made my own vegan cheese, topped with some shredded cabbage and lime juice.. i also started an injera dough that will ferment for the next 4 days on my counter

    Going on week two of eating a plant based diet, also cutting out alcohol.. I am down 8 pounds and feeling great. I am eating one big meal in the evening with a little something mid day..I don't know if I would have eaten dinner if i didn;t feel like cooking as I wasn't so hugnry.. But, I did cook and it was really good. I covered a cauliflower head in harissa.. I added some oil to the top and water to the bottom.. Roasted at 400 degrees covered with 45 minutes and uncovered for another 20.. I made a tahini and served with the cauliflower.. Also made a dal.. the dal was a little spicy and i also added palm sugar which gave it a great sweetness.. The dal had cayenne, a hot sauce my friend made, cinnamon, a little clove, garam masala, star anise, tomato paste, onion, ginger, garlic and paprika. salad was ginger dressing with soy and sesame oil.

    So I went back to the Thai Grocer today... Picked up some green papaya, more coconut milk, more durian coconut snacks, thai basil, galangal, palm sugar, spicy coconut paste, some incense, a few dry noodles.. One thing that is shocking is, they don't have peanuts or cashews. I ask every time I go, knowing they don't but, kind of just want to be like, sell damn peanuts.. Sell cashews, what are you doing? But, instead, i just do my gentle nudge. "do you have any peanuts" No, we do not sell them.. "oh, is it because you are sold out" No, we just don't carry them.. "Huh, that's odd, I feel like peanuts are cashews are in a lot of different thai dishes" And I am met with a blank stare.. We have done this maybe three times in the last two weeks. Anyway.. Papaya split and shredded I maybe used a quarter of one.. This is it prior to it being all mixed up... Shredded cabbage, papaya, blanched green beans, carrot, crushed peanuts, thai chile peppers (3 VERY HOT) palm sugar, lime juice and soy sauce.. When I am not eating plant based, I like the little raw crabs, the little salty rehydrated shrimp or at the very least, a lot of fish sauce.. It was sorely missing the fish sauce but, that's not on my plan right now.
