    Dinner today was apple wrapped pork loin.

    Served with gravy, potatoes , pepper  and the meat was succulent and  flavourful, normally I do this dish in autumn but we had apples at home for a change.

    Dessert wasnt on the menu until my neighbour came with fresh picked rhubarb and I turned into  rhubarb meringue   pie.

  2. radekt, it depends where you live if it works or not.  

    When I started it was sunshine and   warm , then it dropped  and got cold and started raining, but my loaf  was in the oven by then..  Humidity does effect the flour, but that depends on if goes from a blistering heat to  a cold rain, then it can be a bit odd.  Also since it  temperature drop, it can be too cold for the  bread to rise unless you have a very warm home. So yes it does effect and in the old days even more so then today in our modern warm home.   

     

    Thunderstorms is a no go for baking here,  the bread will not rise normally and well there could a power outage  so no bread then.

    Home made falafel  with home made  Lebanese flat bread.  Yes I made this my self,  ground the beans in my meat grinder  (  it is cleaned and disinfected and safe to use) and   we had it for lunch,  now I have 3 kilos more of  falafel  dough to freeze in.

  4. A big  porridge loaf and 8  Lebanese  flat breads   is what I have manage to make today and then I fell a sleep.  I did too much today and it just shy of 4 in the afternoon.

    I was supposed to make gluten free hamburger bread for my friend , but the weather is horrible so no grilling today and he also said since I was so tired , it wasnt needed.

Well it is too late any way.  Oh and my chilli is dead too,  my daughter  has been manhandling it to the point of  no roots so it died, but we have two tomato plants and  I found a place where I can buy chilli, peppers and strawberry plant for a good price and not bog standard types  ( grow fast= no flavour).

  6. I never boiled mustard, I check 5 cookbooks and no boiling, and yes I done mustard  with rolling a cannon ball in a bowl  until the mustard seeds are crushed and we added smoky whisky and malt vinegar .

The camera makes it look hotter then it is, it doesnt  go up to a white hot but more of a warm yellow and it doesnt  burn the food, it takes about 15 minutes to get the thin slices of meat that brown and it been check by one electrician, who used to work with nuclear power plants and also surprisingly to sum, since I am a woman ,  I know how to rewire it and check it if need be and so does my husband, he has a higher degree in electrics then I do.

     

     

    Tonight's dinner will be hotdogs grilled on the same machine with mash.

It is  Phillips  stand rotisserie from the 1970.ties or 80:ties,  it was found at a  Charity shop and it wasn't used either, still in its plastic wrapping.  I never seen one before .  The  glowing part in the middle is a metal coil and get super hot and the spits turn on their axle.   I am not sure how safe it really is but it makes the meat so tender and lovely. It makes a mean Tandoori.

    This is from Monday,  I made  layered jell-O for my daughter's  nursery group  and  had fun with the left overs,  injected some milk jell-o into the orange and  well my husband say it looks like a fetus and I say intestines.

    Why the jell-O treats for the  nursery?  They always have a party for the  birthday kid, which happens to be my daughter this time and the birthday kid  gets a balloon with their name on as gift , best thing ever. And you cant have a party with out  treats so Jell-O.  Jell-O is a very uncommon thing here in Sweden but the kids loved it.

    This what we had today,  rotisserie pork  and with that roasties, broccoli and  red sauce  ( daughters name on her favourite sauce and no it isnt ketchup, it is ajvar, chilli sauce, yoghurt and tomato purée.

  11. If you want to make  a cake sweet, super sweet it is easy.

    Take one of these  normal sugar recipe of white cake, follow that and get a perfect cake.  Now to make it sweet enough for you,  soak the sponge in simple syrup and then a layer of  dulce de leche between the cakes,  Also when you make the butter cream to smoother the cake, add 1 tablespoon dulce de leche and use sweetened condensed milk instead of milk, this will make the cake sweet.

     

    Or make a pavlova instead  for the birthday, because birthday cake can be anything you lke.

     

    I find cakes of today too sweet by the way.

  12.  When it comes to the hops it depends on with type of hops. If I would  compare with the beers we can get from Europe and USA, which isnt much but still and I am no expert,  USA  hoppy beers have more of  a flowery , perfume undertone then  the European.  So I would with no problem grab a British, Dutch or German hoppy beer and make a good stew but not USA hoppy beer. I have made a lovely lemon and lemon jasmine rice pudding with American happy beer, the flower and perfume suited it well and the brand well it was yeti on it and that is all I  remember.

     

    But as I said I am no expert and this based on the beers I can get here in Sweden from the USA.

  13. A birthday cake for me isnt  just a plain cake, it has frosting and it is the frosting that makes the cake  sweet.

    I have made lots of cakes  with out machines and  it just a little bit harder works.  Here is a simple and yummy cake, you can make it round too, but i cant remember how  big it became.

     

    Basic chocolate cake.

    225 gram butter

    200 ml milk

    5 eggs

    450 ml sugar

    1 ½ tablespoon vanilla

    125 ml unsweetened cocoa powder

    3 teaspoon baking powder

    600 ml flour.

     

    Turn the oven on to 175 C. Grease a  30x40 cm square tin and dust with a little flour  or cover it with baking paper.  Melt the butter. Whisk the eggs and sugar  with a whisk or a fork until light and fluffy.  Add the vanilla.  Sift in the  flour and baking powder. Whisk the butter with cocoa powder and then add to the batter and then the milk.  Stir until smooth, you can use a spoon for this. Pour into the tin and bake for 20 min in the middle of the oven.

     

    Cool on a rack and when cold smear with a lot of frosting and add  chocolate candies and sprinkles.

     

     

    The original frosting is with  coffee, I can try to find it for you but I prefer this

I love beer as much as you do but  hops  isnt not the only thing that flavours beers, you can use  heather,  juniper,  kelp, bog myrtle ( Myrica gale)  among other things and then I dont mean add hops and fruit, no hops free beer does exist.  Then you have the kriek, which is  a beer made with cherries  and again no hops.

    The best  chocolate mousse I have ever made was with kelp ale and the chocolate cake underneath beat any guiness  cake I ever had. No hops, just flavoured with kelp.  For my husband  as the first dinner as engaged I made him a lovely deep rich heather ale  stew,  again a  beer/ ale with no hops.

     

    European Elk ( alces Alces)  in bog myrtle beer is something out of this world, but bog myrtle beer is hard to come by and the only one I know who made it, he is no longer making beer .

     

    I love finding beers that  doesnt use hops as the flavour.

    When my daughter was born some of my American friends made a PDF of fun and interesting  "kids" foods. This is a recipe from the PDF  called Ultimate American oatmeal,  I dont know why the name  nor where my friend got it from but my daughter liked it.  She likes her  oatmeal in the morning, dry, cooked and with different  toppings.  So this was a treat,   oatmeal with pancake syrup ( used ljus syrup), chocolate button ( I had a few left from her birthday)  and  peanut butter  ( also a left over) .   After she had this she looked her dad and said , tomorrow  cloud berries no chocolate.  I have a sane kid.
