Just when I thought cotton candy was on the outs, one of my six dessert courses (sixteen in total) at WD-50 was a tiny bowl of ginger flavored cotton candy. The coolest thing about the flavor was that it didn't hit you right away but slowly crept up as the sugar dissolved in the mouth. Regrettably, by the end of that particular night, I had succumbed to such sensory overload that I didn't even think to ask Sam how he had done it...
Can you do a version of this for next year's demos at the IH/MRS?

- You buy a box of clementines at ShopRite in Little Ferry, NJ, because they're on sale for $3.99 a box and they look really good.

I agree with mudpuppie. The saveur recipe seems to lack anything that would crystalize. The second recipe only has a tad of syrup.

mb70, I was horrified that no one was mentioning the super amazing, always dependable, loves your tummy and soul, thermos! Sreiously, Carolin, buy two of them, and fill with chili, stews, potato, cheese, onion, ale soup, even pastas. How about carbonara in a thermos? I have put anythinb wetish and hot into my thermoses and eaten them at my outside-in-the-winter-jobs. Try to get thermoses which do not have the glass lining, or if you can't find one, make sure that the immediate lining is plastic or stainless.
And how about a variety of nuts and dried fruits too. They're pretty high in calories. Soy nuts are fulla protein too. Little foil wrapped 'cheeses' are good and don't have to be refrigerated usually.
