  1. hello i live in brooklyn but was out of town today until around midnight tonight. i wanted to make the modernist cuisine mac and cheese for the 4th. i have carrageenan iota but didnt have sodium citrate. i googled all morning before my flight from from seattle and couldnt find anywhere in nyc that carried it, tho i did find a reference to "sour salt" which i think i can use in place of the sodium citrate? can anyone shed light on whether or not this is a viable replacement for sodium citrate? dont want to spend $$$$$$ on crazy imported cheese only to super fail the result. thank you!!! damian
