  1. A friend just gifted me these 2 copper pans (from his mom's kitchen): The oval is like 14", from end to end - I imagine it's mostly used for fish. They will most likely get cleaned up and retinned...does anyone know the company from the logo?
  2. I don’t know about anyone else, but I find that when I’m waiting that dreadful extra few minutes for the water to boil, I’ve got some other kitchen stuff to take care of. And what’s the big rush in the kitchen? I cook because I enjoy cooking (and I assume many here feel the same); I see no reason to rush through it.
  3. The only denial I’ll suggest is to deny buying them.

    Dinner 2022

Mise... Meal... Stir-fried chicken thighs and mixed vegetables (the kind you'd get here, from an NYC Chinese restaurant, if one were to order something along the lines of chicken with mixed vegetables; i.e.: onions, carrots, red and green bell peppers, celery). In a somewhat spicy chili/garlic/ginger sauce. Jasmine rice. Oh - and some fresh shitake, which you wouldn't get here!
  5. I kinda doubt this…
  6. I hope you get here...https://www.kitchenartsandletters.com/
  7. Let us know some names, but why only sushi?
  8. We were real "townies" this trip. Wish we could have stayed longer.
  9. Our trips to the outer cape are fewer and farther between than @liamsaunt's trips...but we do have a great time whenever we go. This year, our trip to Provincetown was a mere 3 days, simply because where we stay had no rooms for what would have been another night; next year, 4 or 5 nights will be booked way in advance, as there were evidently weddings up the kazoo in Provincetown over the past few months, and the small inns book up. In any event, our "tradition" is to stop here on the drive up... for lunch. Which we did. Two 6-oz. very good lobster rolls, and a cup of very good Fisherman's stew set us back close to $100, but that's the way it goes lately. As can be seen, the sky is that great, overcast, gorgeous grey color. Meaning, that when we checked into our room, and stepped out onto the deck at pretty darn low tide, it looks like this: We did take a walk into town; well, at least as far as Perry's, a wonderful little wine, spirits and goodies shop at the bend of Commercial St. and the US Coast Guard staton, Provincetown. It's a lovely little town, especially (imo) the west end, with all sorts of cute houses and great landscaping... Dinner was at Balena, the restaurant at The Crown & Anchor, in the heart of town. Chef - Raina Stefani, has earned her reputation, as has her sous, Jake. They've both worked in some fine places, and the food here was good, especially the small plates/apps. After dinner, we stayed for a while, listening to Bobby Wetherbee, a real townie who has been doing his schtick for like 60 years. But then, we moved on... To the Old Colony Tap, or as it's known, the OC... Where the night continued...they pour a stiff bourbon here, so the walk back down Commercial Street to the Red Inn was a bit crooked... I have no idea if someone was up late working at town hall, or if they just forgot to turn out the lights. Breakfast/Lunch the next day at Pop + Dutch, of course. We not only had great sandwiches (they bake their own focaccia, the best in town), but I found something quite nice amongst their offerings... We took a drive to Wellfleet, and dinner at PJ's Cape Cod, where we had a couple of nice, big, juicy lobsters...$41 for 1.5 lb lobster dinner was pretty great. And messy. BYO made it even better (and me not having to drive - priceless). No bars or anything Monday night - we were all kinda looking for a good night's sleep at this point. A little more walking around, nothing getting me on that jetty... Lunch on Tuesday was in town at Rosie's, a real Mexican cantina type place... \ Tacos for me... Enchiladas for Sig Eater... Good stuff and after lunch we took a drive over to Race Point, where... I tried to warn her and tell her we had a big night ahead, but... It was just gonna be me, until I stepped in and dragged her back from certain death and annihilation. Oh, the night started with happy hour at The Red Inn... Continued with dinner at Sal's Place, where the food is good if served in slightly gigantic portions... Linguini with clams, enough for like 3 people! Then the fun started, with a drop in to Tin Pan Alley, to check out Scream Along With Billy, and Billy Hough. Billy heavily advertises in the WC... Then onto our final stop, DJPotatoSalad, at the Grotta Bar, with these three mischievous peeps... The walk back to the Red Inn was even more challenging than 2 nights before. Another gorgeous morning, for the drive home... I seemed to like low tide on this trip. But in case anyone is wondering, the tide really does come in... Oh - the drive home not only included Portugalia Marketplace, but this stop as well... They're not that price any more, but probably just as delicious... Modern Apizza
  10. Isn't this temperature (or slightly lower, say 183℉) considered the basic vegetable sous vide temperature?
  11. My friends who own Cafe Katja are good too! Look - Chang has never been that nice of a boss; I sat at the counter at Noodle Bar (when it was only Noodle Bar and when he often was cooking) many times, sometimes a little embarrassed as he would berate one of his cooks for not doing something right or quickly enough. I think he's probably a better boss now, as he pretty much has become a shill for lots and lots of products, and doesn't have to deal with people in the restaurants on a daily basis.
  12. On our drive home from Provincetown yesterday, I took a tiny detour (it's like 5 minutes from an exit off I195) to this place: Portugalia Marketplace. It's awesome. We didn't have a lot of time (or should I say, it's hard to go food shopping with another person (if you're me), unless you enjoy spending hours browsing at tins of fish), but I still did some damage. First - this is a room with something they also can, but in it's salted state... Yes, a giant walk-in with nothing but bacalhau from various places and grades and whatever you wanted. A giant walk-in. Then a quick stroll through the aisles... And displays... I've never seen anything like it...wow. And after 4 more hours, home... We tried one of the patés last night. Let's just say it's the most cat-food looking thing I've ever eaten. But it was damn good!
  13. It's even been retrod.
  14. Cole slaw!
  15. Good job, @Duvel !

    Dinner 2022

Pretty much. Kinda means from Calabria. Where you would definitely get a little more aggressive heat from peppers.
  17. Yes - though the drinks I remember them hanging on were possibly a bit stronger than a Shirley Temple.
  18. I think the algae adds a nice little funk to the stuff I reheat. I maybe clean it out once a year.
  19. That looks like a nice, older upper west side apartment?
  20. This stuff is only supposed to be refrigerated properly, not frozen (except the bagels, which don't really matter that much).
  21. I think you both need therapy.
  22. Uh oh, now you're yelling!!!
  23. You've talked to your therapist about all this, right? By the way, I do have experience with people who take things from their brothers, and who may have some issues with their mothers. And brothers.
  24. Asked and answered. By others!
  25. John West is, I believe, a Thai product. And boy, does the parent company Thai Union have a lot to say about how great they are. Caveat emptor.
