I just got to this thread -- wow -- what a demand. Guys I am no great chef -- a very simple food writer and the recipe is my mom inlaws very very simple recipe. I am sure others here have much greater and complex recipes to add. Here is my garlic chutney 101 -- vary as you see appropriate Dry Garlic Chutney (Lahsun Ki Chutney) This keeps well in the refrigerator for up to a week. 1 cup unsweetened desiccated coconut 12 fresh garlic cloves, peeled 1 teaspoon red chili powder Table salt to taste 1. In a medium skillet, roast the coconut and the garlic for about 3–4 minutes, on low heat. The coconut and the garlic will begin to darken and release their aroma. Remove from heat and allow to cool down for about 10 minutes. 2. Transfer the mixture to a blender, add the red chili and salt. Blend until you have a coarse powder. 3.. Transfer to a container. Refrigerate covered until needed

Oh dear -- sorry I must have been thinking of someother town.. that would be a long trip. Perhaps the locals there can arrange something and let us know how it turns out.. although I think i might head out there sometime.. the menu looks too good to miss out on

The cookbook, Everything Indian, is done -- galley should be in this week. so nope its not for that. A bengali friend of mine sent me this recipe via email and i was just wondering what it is.. i have not eaten it before.
