    Tofu

    Frequently in Chinese stores on the same shelves they have items which may look like tofu, but they have nothing to do with tofu. They are various items made with gluten . dcarch

  7. Gear pullers come in infinite sizes, from tiny clock maker's to big ones to pull wheels for tire replacement. If all fail, drill a hole from the bottom and punch it out from the other end. Seal the hole with one drop of silicone caulk. Do not use heat. It may turn whatever is getting it stuck into solid carbon and you will ruin it forever. dcarch

  10. A gear puller may be cheaper than CLR. A mechanic will tell you a gear puller has a better chance of working. Doesn't matter how rusted in the parts are stuck. dcarch

  12. To clean and sanitize the slots: Do not use bleach, it can discolor wood. I use mouth wash full strength to soak the slots for a few minutes, then turn it upside down and blast with a dental water jet. I don't use a knife block anymore. Too many knives. I use rare earth magnets to hang the knives by the very tip, the entire blade touches nothing dcarch

  16. When was the last time you clean and sanitize the inside slots of your knife block ? After a few years of use, what do you think is inside ? With the sharp edge side up, it seems to me it would be the most sanitary way. dcarch
  17. I don't buy the opinion that it is more dangerous with the edge up. Sounds reasonable but how is it more dangerous? dcarch
  18. Sharp side up. If there is any moisture on the blade, by having the sharp edge up, there will be more room for the moisture to evaporate. Important especially for carbon knives. "---so weight of knife does not force sharp side into wood.--" ??? So you don't damage the wood or the knife? dcarch

  20. Call me crazy. Split pea ice cream. You can find red bean ice cream recipes, just substitute red bean with split peas. It's a popular flavor, red bean ice cream in some parts of thew world. I get them in Asian stores. dcarch
  21. Yesterday I boiled my steak (dry aged T bone) at 212F for 2 hours. It was not bad, a little dry, but very tasty. ---------------------------- I took the steak out from the refrigerator and put it in the bag, set the SV temperature at 129F. 2 hours later, I smelled some wonderful aroma and went to check the SV cooker. I realized that when adding hot water to the tub, I got a phone call and forgot to put the temperature sensor in the water. So the heater boiled the water because the sensor was telling the heater that the water temperature was at room temperature.. I was not about to throw the steak out. I guess I was a bad cook. dcarch

  23. A little off topic, but very interesting fact with lotus. Lotus leaf is better than Teflon in non-stick qualities. In science, it is called "Lotus effect" They now sell paint, using nano technology, to impart lotus effect to make the paint dirt and water repellent. I think they may be trying to make cookware with lotus effect. dcarch

    Seventh Taste?

    With people drinking 2%, fat-free. skimmed milk, low fat cheeses --- nowadays, I would think that butter would be plentiful and would be free. dcarch
