    Bone-in Lamb Loin Chops (cooked sous vide at 135F for 3 hours, 15 minutes and finished on the gas grill) with Steamed Red Potatoes (tossed in Olive Oil with Ground Black Pepper, Kosher Salt and Granulated Garlic). There was a Side Salad, too.

  5. Crawfish Etouffee (leftovers from yesterday’s meal that I posted on The Ladies Who Lunch topic)
  6. Friday Lunch with my lady friend at Landry’s Seafood House on Seawall in Galveston I ordered the Crawfish Etouffee expecting the same dish I have had in the past. This was a very pleasant surprise! Dirty rice instead of white rice and the addition of fried okra. Let me just say, this was my first time with okra. I did not know what these little fried bits were until later. They were delicious! I am now a fan of fried okra! Lunch included a salad and garlic bread. My lady friend had the Ahi Tuna with a rice pilaf and veggies
  7. Yes, the toast was darker than I prefer, but it was not burnt. Did not know about the expanding cups, but I still prefer longer fries. Way too many of the fries were no more than a couple of inches in length. Bottom of the bag?
  8. We went to Freddy’s tonight. They’ve only been open for a couple of weeks and have been very busy. We went early. We each had a combo meal, with fries. I had the Original Double Patty Melt (Two steakburger patties, Swiss cheese & grilled onions on toasted rye bread). My husband had Freddy’s Original Double (Two steakburger patties, mustard, ketchup, onion & pickle on a toasted bun). We both enjoyed them, but... My husband says he likes Five Guys better and the fries at Freddy’s, though hot, skinny, crispy and plentiful, most were so short in length it was hard to pick them up and still be able to dip them in the ketchup. Overall I liked it and will go there again.

    Salad with Baby Lettuces and Arugula from my garden, English Cucumber, Cherub Tomatoes, Button Mushrooms, Onion, Celery and Sheep’s Milk Feta. Dressed with Balsamic Vinaigrette just before tossing. Black Olives and Unsalted Roasted Sunflower Seeds were added to my portion. My husband added Garlic Croutons to his portion. Boneless Beef Ribeye, seasoned with Ground Black Pepper and Kosher Salt, cooked sous vide at 129F for an hour, then finished on the gas grill. Steak served with Steamed Red Potatoes and Garlic tossed in Olive Oil, Thyme Leaves, Flat-leaf Parsley, Ground Black Pepper, Kosher Salt and Granulated Garlic.

  12. Yes and Yes! My husband and I will be attending the Blacksmithing Conference in Ashland at the end of June, and I will have plenty of time to explore while he is attending the seminars. I actually graduated high school at TJ in Richmond and attended VCU for my freshman year. Very excited to see how Richmond has changed!
  13. Happy Anniversary and OMG, that all looks so good! I know where I am going when I am in Richmond this summer. May even have to go twice!

  15. Grilled Corned Beef and Swiss on Rye with Horseradish Mustard.
  16. I used a Sam’s Club Member’s Mark Angus Corned Beef Brisket, U.S. Choice Premium Flat Cut. For me, the texture was perfect. The meat was very tender, but firm enough to slice easily, without falling apart. Very happy with the result.
  17. 4 lb. Commerial Corned Beef (soaked in water for an hour and rinsed) cooked for 75 minutes (with one 12 oz. beer, three cups water, one stalk celery halved and one half onion, sliced, and seasoning packet) at High pressure, 20 minute Natural Release; Meat removed from pot, tented with foil and allowed to rest while the Vegetables were cooked in the beef cooking liquid for 5 minutes, High pressure, Quick Release.

    Feeling lazy today, so took some shortcuts with dinner tonight. I picked up a Sam’s Club Rotisserie Chicken; made a batch of Hungry Jack Instant Mashed Potatoes with heavy cream (not milk) in the microwave; made gravy with Pioneer Brand Roasted Chicken Gravy Mix, water, the chicken drippings and black pepper; reheated leftover green beans and bacon and called it dinner. This was my first rotisserie chicken from Sam’s, but it will not be the last. Very moist!

  25. I thought it was dead! However, it has survived! My Mexican Lime Tree is now a Lime Bush!
