  1. Hmmm, I alway stop in at CM, the only thing I see that is impressive would be the price of the groceries on the shelf. Well, even though I do buy some of their products such as the fresh ground coffee that I either use as a reduction for a sauce or in a rub for certain meats. I also like to pick up several cans of the Italian canned tomatoes. As for their produce I don't buy anything there, the prices are out of this world. I usually go to the farmers market on aline drive for that chore. Now for the butter you can pick up the european "style" butter at HEB for a bit less money or go to walmart ....they have the same butter for even less and ithas the same butter fat content. Best, John
  2. Habaneros - What to do with this years crop?

i make a chocolate habanero chutney, the hananero is a chocolate habanero, hence the name. When the pepper is ripe it is dark choc. in color. I grow them in pots in my yard ytear round.
  3. "I was FLOORED!"

what floors me the most is people bitching about some poor smuck doing something they don't like...then not doing anything to alter it. john
  4. Good fish stock needed

Hey, you need to pick up Tony Bordains new cookbook "Les Halles" It will tell you how to make a quick and simple Fumet at home....its a breeze trust me!!!!! John
  5. "Les Halles Cookbook" by Anthony Bourdain

I had a chance to thumb through the new book...all I can say is it's AWESOME finally a cooks cookbook, a book that actually relates to you as a cook. How cool is that. I felt as if he were speaking to me personally, not in general. I am looking forward to using the book often. The book is destined to be a Beard award winner.
  6. "Ramsay's Kitchen Nightmares"

Damn I havent been in here in forever.....I have been as busy as a one legged soccer player........ Wow I can't believe Gordon Ramsey is joining the ranks of celebrity chef's. Is he becoming a sell out? No, I doubt it. It will be interesting though. Will it be anything like "the Resturant" but with a twist? I can see gordons partner trying to come in and take over in a power struggle. The only difference would be Gordon cussing and kicking the crap out of him. I saw some previews tonite on the tube, lots of beeping and threatening going on. It reminds me of my instructors at school.....lots of foul mouthed, degrading language. Aint it cool. I am glad he is doing it. Rock on Gordon. I think Tony B. should do a guest appearance on Gordons show....Now that would be a sight. john
  7. NYC Pizza Survey

I still like dining at Ray's Pizza on 8th ave. across from the Milford hotel. The wife and I go everytime we get to NYC. Great atmosphere and good food. Here in Texas it's mostly Dominos, Pizza Hut or Papa Johns....it's ok for the most part if you don't mind pizza that looks like it came out of the grocery store freezer. john
  8. New Year's Eve: What are You Eating or Serving?

Happy new year to all !!! No, in fact I will be drinking my dinner tonight. I will not forget to toast my fellow Egulleteers at Midnight tonight as well. As for cooking, that will take place on New Years Day, at the Father-in-laws house....it will be typical Texas fare....Smoked white bass and red snapper, smoked ham, and smoked brisket. I am bringing the black-eyed peas, Greenbeans sauteed with Tasso, a Flourless Chocolate torte and homemade chocolate velvet icecream. I am not sure what the rest of the family will be bringing....I just hope its something that isn't going to stay with me all day... Happy New Year to all!!!!!!! John

  10. Brasserie Les Halles

Has been to Les Halles, I even had diner as well... my experience was great, the atmosphere was static, loud and busy. but I like a busy place, because I'm a people watcher. As for the food it was really good, the wife had prime rib with garlic mashed potatoes and I had Steak...It was overall a good experience...oh and I even managed a visit with T.B while I was there...cool.... Hey, here in Texas we just stock up on a lot of essentials...such as food, batteries, candles, water, beer, and liquor and more beer. Then we party till its all over. A hurricane also makes for a great candlelight diner with a significant other if you get my meaning.....
