  5. Bottom line: If you want to extern in a quality house you get paid the going rate.............. $00/hr. If you can do it....do it. No questions asked. One of my past externs is doing a "second" externship at Chez Panisse for $00/hr. One of my past employees externed at Jean George for $00/hr......he is now Chef de Cuisine at one of JG's restaurants. So there you go do it right and it comes back to you ten fold!!!!

  7. We will be in Rome, Spoleto Parma & Milan. We would like to dress casually and we are looking for restaurants that serve food from these regions. Any help is appreciated. We will have a bus & driver for the week so we can venture outside of the cities. We will be traveling from Rome (2 nights) to Spoleto (2 nights) Parma (1 night) and the final night is in Milan Thanks!!

  11. I was just in Arles last week and had a nice dinner at Loup Galoue (not sure of spelling) Escargot, Bull Tenderloin in red wine sauce it was a good meal with a great atmosphere. I think 3 courses was 28 euros, a bargain as far as I am concerned. There are only 28 seats so make a reservation. We walked in at 7:30 on a tuesday night and 15 minutes later the place was full. Try to drive to Uzes on the Weds or Saturday market day. In St. Siffret I had a great meal at L'Authentique.
  12. Just returnrd from a trip tp Languedoc, Rhone and Provence. I love the wines from this area and I drank some that I have never seen before. That being said, who in New York has the best/widest selection of wines from this area?

  15. I'm glad to see that Crispo is alive and well. I walk past it often and wonder. I was there for an early dinner last summer and it seemed that there is a bit of a bar scene. Am I correct?

Hi All, I'm flying into Nice in October and I need help. 1) In or around nice where should I eat?? 2) After 2 days in Nice we may be going to Avignon, but I'm wondering where in Provence/Languedoc should I go for the best eating/wine experience. This trip is all about food/wine. I'd love any and all ideas/suggestions Thanks.....Jeff

  20. Try Liannas on Tunsis Hill Road in Fairfield. She is an ex-Pasta Nostra employee. She does a nice job, but go during the week. On the weekends you will get rushed.
  21. I did not realize that the kissing on both cheeks was a Fairfield Country thing. Usually in Greenwich they kiss you on both cheeks take $300+ from your billfold and push you out onto Greenwich Avenue, then a woman yapping on her cell phone, driving a SUV runs you down for good measure.
  22. Had dinner there the second week Chef Nawab took over. I had a grilled octopus that was most likely the best I've ever had. Grilled swordfish that was so juicy and moist I thought it may have been marinated in a brine, serve with olives and preserved lemon.....it was excellent. The only downfall I thought was the service. A little overbearing ond a bit too familiar.
  23. I just ate there Christmas night (as I have for the past 10 Christmas nights) and I agree. As the Berkshires go, it's as good as it gets.
  24. Thanks for the feedback.......I did lunch everyday at the Guy & Gaillard place on the corner. Toss your own salad type thing. O.K. for what it is. But boy......it is one helluva busy place. I was taking classes at the International Wine Center and only had 45 minutes each day for a lunch break.
  25. Need a lunch place for the next 3 days near Penn Station. Does not matter what cuisine.....as long as it's decent.
