  1. Sorry everyone, and sorry, Reefpimp. I didn't recognise '66' as my clue (and I'm grateful Toliver has prodded me to respond). No, it's not Hairspray. Additional clue: the original order was for a Neapolitan, no anchovies; and a Margarita with anchovies, and "can I have ham too ?"

    Hmm. I'm pretty sure I remember one of my Indian cookbooks saying "turmeric's too hard to grind at home, only buy powdered".

  4. 'Cartilage' isn't bound. It's a single piece, that lies between the breasts and has a shape that's like a three-pointed star in section, and long and tapered. I'd say it's anatomically in a similar location to a duck's 'keel'. Also, my understanding is 'aigamo' 「合鴨」 is a cross between a duck and a goose. I don't recognise a lot of those menu names in the photo, I'm guessing because the naming in Kansai is quite dofferent compared with Tokyo.

  6. You did it, didn't you ? A charming little gem thet got a very belated DVD release in 2005. Our heroes are deep into their series of audacious motorbike-mounted tourist coach heists. A solitary policeman comes into their joke shop and takes his time browsing over items such as the masks (two of which, clown and wolfman, are just the same as those used in the robberies). Tension mounts as the two lads look about shiftily, nervously occupying their hands, convinced the game is up. Finally the lawman steps slowly and deliberately up to the counter, eyeballs one of them and asks... "do you have any false tits ?" (And Gordon - maybe HannaBanana's issue was with the contention that many of the 'accents' in Far and Away could be called Irish ?)
  7. Sorry, GordonCooks, that's a good try, and headed in the right direction. Personally I've a feeling I saw Far and Away, but didn't come away overly impressed. Was Tom in a New York bareknuckle fight ? Edit: oh yeah, and scenes of kelp-harvesting at the beginning so comical as to bring back memories of the mud-collecting in Monty Python and the Holy Grail.
  8. For #6, which is driving us CRAZY. (I dunno, it just stuck in my mind as a beautiful expression of what it means to be limitlessly rich, to someone who has *no idea* what being rich means. "...mashed potatoes. Naw, CREAMED potatoes". Ha ha ! Ahem. Just for you, I_call_the_duck: one of the filming locations is a place whose name, in real life, is 'Rest and be Thankful'.
  9. Hee hee Hanamasa, baby ! Ooh yeah. They've stocked frozen ones for ages (Yen400) and recently have started putting defrosted ones out for a few yen less. I do them tandoori-style quite often. If you dig around in the freezers they also have very cheap pork bones in bulk, as well as ears and whatnot, and pork back fat at Yen160 for a kg (perfect for sausage-making).

  12. Thanks, Joisey, those are great tips (and thanks for your post about boiling, too). I'm probably too lazy to get the mincer out when I make a quick stock, but I'll remember the egg-white technique for a special occasion (I made mashed potatoes on Sunday withoput even peeling them - seems I'm getting less rather than more sophisticated ).

  17. Yep, I'm doing that. It's funny, I searched for "chicken stock" in the forums and came up empty-handed. "Chicken soup". Haha ! I'm still learning to speak American (I'm still learning to use eGullet, too). My problem is more that I can't (OK, don't want to) eat the amount of chicken I need to keep up with the amount of stock I want for my soups - lentil, tomato, cream of mushroom, leek & spud, you name it. Soup is king ! I should have said that up front, really shouldn't I ? Thanks for the advice, Snowangel, and I appreciate the feet suggestion.
  18. Quirky local economics mean I can get a 1.1kg (~2.5 pound) chicken real cheap, but carcasses for stock are relatively more expensive. So, for the days when I want stock but haven't roasted a bird, what's the best way to turn a fresh chicken into the biggest volume of the best-flavoured stock ? e.g. - roast it then take the flesh off, boil then simmer everything ? - boil and simmer from raw, like a boiling foul ? - brown by frying then boil and simmer ? - something else ? I've done it a number of times, but making it up as I go along, and I don't feel I do it often enough to easily compare methods. EGulleteers, may I pleae have the benefit of your experience ?
  19. I have in my mind's eye a picture of a cartoon I saw some years ago. The lady in question is caricatured standing with a turf of grass balanced on top of her head. The caption: "I want to be a lawn". Consequently I know who the star is, and I did put myself through a short season of watching her movies, but that was over ten years ago. I don't remember the line, but I'll take a stab in the dark and say "Grand Hotel".
