    Radishes with cold sweet Normandy butter, fleur de sel and cracked pepper. Smashed potatoes with paprika, sauteed spinach, blue cheese crumbled atop. Striploin roast (seen above at rest) with pasilla chile rub, sliced thinly, swiped with Dijon, rolled up for fingers. Cheese course (Stilton, 10 year old cheddar, chevre du merde supermarche with cracked pepper and fennel oil, gruyere).

  14. Sure. I've never encountered decent rice in any French context. That makes it not a cop out but a courageous stand for authenicity.

  22. I'd been wondering about this CD. This does it. And a great blog, Brooks. You say that your amily tends to eat rice four or five times a week. Is it always the same kind of rice or do you do different varities or even mix them? (As I do.)

    Peppered mackerel salad with excellent olive oil brought back from ilBuco in NYC, lemon zest. Seared, rare chicken livers and shallots on crostini with watercress. "Bagatini" (I'm sure there is probably a real Italian name for this shape but I kind of just made them up) stuffed with bacon and ricotta in a tomato and chicken broth with diced Italian sausage with fennel. Pecorino, grana, 10 year old cheddar, fruilano with assorted olives.
