  5. Even easier than that (from a previous thread). Get a dental vibrator from ebay (new w/shipping approx $55). Go to Lowes & get a pvc toilet adaptor with `4.5 inch inner diameter & glue it to bottom of a small lunch tray. It is removable for cleaning and variable speed. Total cost is about $60.   6. You might try asking the churchs in your area. If you find one that will let you use it, the cost might be more than reasonable. I am using one now that views me as an outreach for approx 20 hrs a week and the fee extremely low.
  7. Kerry Madison is great. I went to the UW & lived there for about 25 years. It is especially beautiful during the summer months. I went into Penzey's several years ago during our annual summer visit to a friend who has a house on Lake Mendota. I can sit & look at the lake for hours. The city always bring back good memories. The university is what makes the city. There is an awful lot happening for a city of that size. Mark

  9. You always hear people say that you use marble slabs for pastry & chocolate. Can you use granite in its place? Does it exhibit the same characteristics? If not what is the difference Mark
  10. Kerry You also refer to adding polish, what exactly is this? Where do you get it & also aliquot of the shellac? I assume both of these substances are edible? I just got a panner & hope to have time this next week to try it. Mark
  11. Kerry I have a Chocovision X tempering machine, the chocolate tends to thicken over several hours. According to your post, you said this is a function of the surface area? I have used other machines that have a large surface area like the mol d'art and this was never a problem. Mark
  12. I have used a passion fruit puree instead of fresh juice; I substitute 1/2 cup puree for 1 cup juice. It also depends on how intense you want the flavor. This substitution gives a good flavor but not too overpowering. Mark

  15. I live in Michigan now, but I went to school at the U of Wisc. I plan to use the panning device in a 6 qt Kitchenaid. Is the problem that you can't tighten the pan down enough? I found the site last night. The classes are a bit expensive. Did you find them a value for the cost? Did you get your $$ worth?
  16. Madison is a great especially in the summer. I lived there for 25 years. What is the PMCA/NCA & who offered the class? Can you give me more info on it? I am really interested in it. The unit is the same one I plan to buy. I want it for chocolate panning to use with in the chocolate business.

  18. Why not use an engraving tool & etch your initials on the handles.
  19. I use several different purees in truffles. I add it after I stir in either the cream or butter. I would put it in before an liquors if you use them.
  20. During the hot months you really don't have much choice but to ship overnight. Which makes shipping as expensive (or more than the chocolates). The same kind of packaging materials can be found at Uline. They have commericial ice packs and boxes with liners

  22. I use boxes from www.aspecialtybox.com. They have a nice selection & you can purchase them in small quantities. A good company to work with.
