  2. Kerry That was my initial thought. This recipe might be used for molds. When you added bittersweet chocolate, did the truffle hold shape pretty well? Did you also cover it in dark chocolate? Mark
  3. I recently saw this recipe for gianduja ganache. The ingrediants are straight forward except for the addition of cocoa butter. Why are we adding more cocoa butter? 300g cream 1/2 vanillia pod 25g trimoline 75g butter 650g gianduja 80g cocoa butter

    My guess the kitchen is about 600 - 700 sq feet outside a big banquet room in the downstairs of the church.

  6. Kerry I have the book Oh Truffles, she uses cream fraiche in some of her recipes. The basis of most of them are: 2 oz unsweetened chocolate 6 oz semisweet 1/3 cup creme fraiche 1 tbsp butter then she add any "flavoring" to the ganache. Mark

    The kitchen which is good sized is off a large banquet room. A dehumidifier for this would cost $600 - 800. Bit more than I have to spend. Right now with summer, business is ectremely slow so I only make truffles as needed. Mark

    I work out of a church kitchen which has no AC and therefore no humidity control. The humidity rises up & down as usual in the upper Midwest. Does anyone have any good suggestions for the best ways to cope with it & chocolate making? A dehumidifier in the room isn't a workable solution. Would a strong fan in the room make much of a difference while I'm working? I can tell the diffence in my finished products. Mark

  12. You can get it from a rep, the machine is sent from mfg. Call Chocovision, they sell refurbished machine w/warranty for $800 at times. I bought one. She aslo told me, you can get extended warranty at anytime. So you could actually wait for a breakdown & then get it. Then send in for repairs.

  15. I am not sure if they still make the K5 machine. You get some extra stuff with it but it is $2500 more. The best thing is that the controls are on top out of the way. If I was going to spend $3500 I would get the Perfect machine. You can call them & ask for Amanda, she is very helpful & will answer all of your questions. 1-800-324-6252
  16. I rent space & it takes approx 2 hrs for the chocolate to melt & temper. You also have to carry machine in & out everyday. Ease of cleanup is another very important issue.
  17. I don't have a picture. Having trouble figuring out how to post pictures. Help? Here is a url Lid & hopper assembly cost $150 - heavy duty plastic. It works very well, you can feed it & leave till chocolate melts.
  18. I agree with Kerry, the chocovisionn machine is a bit noisy. I believe this will be the case with almost any machine that has a rotating bowl verus the wheel as in the Perfect machine (I wish I could afford 1 & had a permanent workspace instead of a rental). I play music so this isn't too bad. The other issue can be minimized if you tend to let molds drain out over one of the corners. it not very messy with a little practice. But again the machines with a big pan make this process much easier. I do like a heating element for melting chocolate better than a light bulb. Another nice thing about the chocovision machine is the availability of a hopper that lets you load 10# of chocolate to melt and then do other things. You don't have to tend the machine as much.

  20. You can sometimes get a refurbished machine from Chocovision for $800 (x3210). Call them & find out if any are available. Mark
  21. I went to Lowes & in the area that has PVC plastic for plumbing there is a piece that is about 1/2 " high. It is probably an adoptor for toilets, threaded on the inside with a diameter that just fits over the table head.It cost about $2. Just glue it to the bottom of a tray. Works great. I would post a picture but not sure how to get into the databse. Can someone explain the process. Mark

  25. I like this idea of making custom tissue type paper. Does it list on the website that this rice paper is food safe?
