    Breakfast 2024

    Mushroom and chorizo tacos with white onion, garlic, and chipotle in adobo. Cumin, cinnamon, feta, and half-and-half to finish, topped with cilantro and chopped salad. Mushrooms were fried in leftover garlic oil. I might make something similar for dinner.

    Pollo escabeche with carrots and potatoes, flavored with pickled jalapenos and the pickling juice, green olives, garlic, black pepper, and Mexican oregano.

    Paneer cheese in chipotle sauce with roasted garlic, tomato, black pepper, and cloves. Topped with chile Poblano, onion, and cilantro in a Parmesan cream sauce. So kind of a Mexican-Indian-Italian mash-up.
  5. ^ We also ate at El Jacalito - what are the odds? I quite enjoyed the rellenos there, probably because of the flavorful chile. Agree that they used some sort of long green chile rather than a Poblano. They only chile relleno I recall making was stuffed with crab meat, no deep-frying. Freaking delicious, but surely not traditional? Perhaps from the small sub-subgenre of Maryland-Mex food.

    Green beans and paneer cheese with a sauce of onion, ginger, garlic, lots of green chilies, crushed tomato, and garam masala, finished with cilantro and a squeeze of lemon juice

    Alaskan salmon with a Cajun rub in the air fryer, and a Tartar-ish sauce, courtesy of Mrs. C. Dry-fried green beans with chorizo, garlic, ginger, dried bird chiles, Tianjin preserved vegetable, Shaoxing wine, soy sauce, and sesame oil.

    Roasted chile Poblano breakfast tacos with garlic, jalapeno, cilantro, ginger, feta, and a squeeze of lemon juice. Making do with ingredients at hand after a road trip.
  9. I also have eclectic musical tastes but reggae and dub seem to go well with cooking.

    Green beans with shrimp, chorizo, and crushed tomato, seasoned with slivered ginger, garlic, cayenne, coriander, cumin, turmeric, and garam masala. I wanted a flavorful meal before heading out on a road trip.

  15. Sounds delicious @Shelby We are having dinner with Russian and Dominican friends. I expect lots of delicious food and entertaining conversation.

    Keema for a young man and woman who emigrated from Pakistan. No pressure. Added baby potatoes, diced zucchini, and roasted chile Poblano that needed using up. Young woman made Basmati rice, diced the onions, and brought over matcha chocolate muffins.

    Seared zucchini and yellow squash, sauteed with onion, ginger, garlic, and habanero chiles, simmered with coconut milk, turmeric, cumin, and garam masala, and then finished with fish sauce, cilantro, and lime juice. Lotsa flavor! Microwave rice to go with.
  18. The ones I had were baked (maybe broiled), not coated and deep-fried. Sloppy but delicious. 🙂
  19. I have also enjoyed excellent chile rellenos in New Mexico, but I am pretty sure they were made with New Mexico / Hatch chiles rather than Poblanos. Were the ones you had chile poblano or something else? I think my favorite was made with

    Firstly, congratulations! Have you ever tried the lobster rolls at NN Burger in Tappahannock? Best I have had south of Connecticut. 😃

    Huevos manchamanteles redux: fried tortilla, over-easy egg and leftover mole, topped with pickled jalapenos, feta, and Mexican oregano. Complex, spicy, tangy, salty, crunchy, rich, and aromatic. Apologies for the picture framing - apparently I was in a hurry to chow down.

    Marinated chicken wings with lots of crushed garlic, fish sauce, sugar, and water. Cooked wings in the air fryer (thanks Mrs. C!) and ate half as is. The other half were glazed with a cooked-down mix of the marinade and chile jam and then tossed with fried shallots. Will make again. Mrs. C's Napa cabbage salad with craisins and toasted almonds

    Turkey keema with spinach. Zucchini and yellow squash with coconut milk and a spice paste of ginger, garlic, chiles, curry leaves, cilantro, and grated coconut. Both of us liked the green sauce very much, will make again.

    Huevos manchamanteles? Leftover sauce (with sweet potato, apple, and raisins), over-easy egg, and a fried tortilla, topped with diced cilantro and pickled jalapeno. Basically, huevos rancheros topped with mole rather than ranch sauce. I might do that again tomorrow.
