  1. Tonight's dinner: I made a kale, potato, green garlic, and scallion tortilla. Everything, except the potatoes, came from my local green market. Served it with a simple green salad dressed with a tangy and light dressing. Really satisfying and light. Wish I had some of Ann's bread (and her brownies) to go with...
  2. Great looking stuff all around. I disappear for a few days and catching up on all this great-looking food is hard. Ann: That bread looks amazing. Great color and I can only imagine the texture is scrumptious. Those brownies look gorgeous as well. Nishla: You are making me think I need to go get a pressure cooker if it can produce such a lovely meal.
  3. I got my hands on some fresh morels. I made a morel cream sauce with peas and tossed with some handmade gnocchi that I had in the freezer (leftover from another dinner a couple of weeks back). Wish I could have gotten some fresh peas, but it is still too early--had to use frozen from WF. Topped it with crispy, pan-roasted poussin.
  4. Man, you guys are cranking out some good food. Marlene's burger reminded me that I forgot to post a picture of my own burger from a week ago. There is a store here that sells burgers with foie gras and truffles. I made some fries from scratch, grilled it up, and served on a brioche bun with some petit mache. Yum!
  5. This is exactly why they need to stop serving foie gras! Just the other day, I was visiting elementary schools in the South Bronx, and all the kids were wandering the halls eating foie gras kebabs. It was terrible. You could see their arteries hardening, the pounds accumulating, the diabetes, the asthma, the depression combined with hyperactivity. They need to replace that stuff with Wolfgang Puck pizzas so the Bronx can rise again. ← LMAO
  6. Mostly Martha is the most touching movie about a chef that I have seen. The main character is written so well. Guilty pleasure: Dinner Rush.
  7. I was always told that you should not wash or soak them, only give it a dry brush with a mushroom brush.

  9. That movie is a classic--one of my fave directors. I am just curious what that response is England has been to Gordon's turkeys and pigs. I remember Jamie Oliver getting serious media backlash when he did a similar thing on one of his shows years ago.
  10. Seeing the pigs hanging post-slaughter with the name tags had me wondering the same thing. I did not feel so bad for being affected after watching his reaction. He was trying to comment on the process being well-choreographed, but it looked like he was about to break down. Notice how the camera panned away from him quite quickly?
  11. Did anyone see last night's episode where he slaughtered the pigs? I admire what he has is doing even if it can be hard to watch.
  12. My BF makes one using good blue cheese, creme fraiche, s+p, and a bit of lemon juice. Just season it to taste.
  13. There are three men in yellow jumpsuits with tanks and sprayers leaving the kitchen when your meal is just arriving. I got it to-go and trashed it immediately.
  14. Cooked salmon. I don't mind raw or smoked salmon, but cooking it brings out the most horrible flavor to me.

  17. YSS is sadly closed. Quality charcoal BBQ has become increasingly hard to find in Atlanta. Most places seem to be using gas. I guess HWD is an option, but I have had serious problems with their quality as of late. If you are open to other non-BBQ suggestions, as you said, maybe you should try So Kong Dong? They have great bibimbap and their BBQ plates (prepared in the kitchen) are not too bad.

  20. Oh Blissful Glutton! Please tell me how you made this creamy slice of heaven. Flan has been my downfall and I aim to make something like your wonderful creation. Will you share/PM the recipe pls? *puppy dog eyes* ← DG: I used a variation of a recipe from here: http://www.epicurious.com/recipes/recipe_views/views/108137 I do not bother to separate the eggs and whip separately. Just through it all into a blender and mix very well--you want to make sure there is not egg yolk left or you will have a funky consistency. It calls for cans of evaporated milk and condensed milk, but there are no specifics. Use a 12oz can of evaporated milk and a 14oz can of condensed milk along with the cup of whole milk. Just make sure you watch in towards the last 10 minutes of cooking to ensure you don't form a crust on the top. It is so easy you won't believe it.
  21. Made a flan the other night. Good texture and super-creamy. I am not a big fan of individual ramekins. My family (from Mexico and Brazil) always made it in a pyrex pie dish and then sliced into wedges.
