I was very intrigued by a recipe I found called eight can taco soup. It was stupidly easy, and we were having a very brutal cold snap so I figured, what the heck, I'll give it a whirl.
this made an enourmous amount of wonderful soup! Even my son loved it, he's autistic and notoriously hard to feed sometimes.
it got better the next day, and the leftovers froze perfectly..
You simply combine all the ingredients, bring to a boil, cover and simmer for a few minutes, that is it.
you can serve with taco chips, sour cream and/or some cheese on the top, you can make it hotter or milder, whatever you prefer. I happened to use a cup of frozen corn in place of the canned corn. I also assume you can sub the chicken out for another, equal amount of other meat/seafood, etc, but I did not. I'm going to make this again, very soon.
Ingredients:
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (15 oz.) can pinto beans, drained and rinsed
- 1 (14.5 oz.) can petite diced tomatoes, drained
- 1 (15.25 oz.) can sweet corn, drained
- 1 (12.5 oz.) can white chicken breast, drained
- 1 (10.75 oz.) can cream of chicken soup
- 1 (10 oz.) can green enchilada sauce
- 1 (14 oz.) can chicken broth
- 1 packet taco seasoning
- 3
- 1 (15 oz.) can black beans, drained and rinsed

Offal here too. shellfish, but that's an allergy, so... and game. I know, I'm a cheap date.
-
I only have one...pistachios.
I seriously ate a 1/2 pound bag last night in one sitting. The only food I kinda of go into a trance and when I wake up the bag is empty...
Oh, God yes. They are proof God loves us and wants us to be happy.
And Cheese corn. yes, Dan Dee cheese corn.

Very nice, everyone! Such inspiration here.
Tonight, I made a quiche with two cheeses, parmesan and cheddar, and some really nice ham my sister gave us.
Note the turkey guarding it jealously. He figures if we eat quiche, he's safe.
Served with fresh sweet potatos. I didn't use to mind canned sweet potatos, but these have totally spoiled me now. Served to my son Ross, my best critic ( Because he loves everything.)

Thanks Kim! I finally got a camera and I'm looking forward to more photo adventures.
I don't find you food dull at all, the opposite actually, you cook real food and you always put imagination and love into it, and it shows. The potatos look amazing, I'm doing something along those lines for Thanksgiving.

Those Hippos are almost too cute to eat....
I found the new coconut flavored three musketeers bar, and while it tasted okay, much to my surprise and dissapointment, it was artificially flavored with no real coconut at all. oh well.

Hi to Kim and all!!
At the grocery yesterday, they were giving out samples of Campbells new sauces for chicken. I swear we never buy sample stuff ,but these were so good.
I made it today with buy one get one free chicken breasts, and I added apple slices from when we went apple picking, and fresh mushrooms. it was so good, Breakfast? Well, yeah: LOL.

Peanut butter on toast, dark toast, with butter. No jam.
-
really.,crusty white bread. Toasted, to the well done stage. Buttered with real butter. peanut butter on both sides, then some really wonderful jam,. (Right now, it's apricoit ) jam on the other side. Put them both together, count to ten, then eat.

This year, I decided to let my twelve year old dictate, and help with the meal. since my mom is a vegetarian, we're going to do a nice ham steak for me and the lad.
also
Green bean mushroom cass. Yes, THAT one.. hee.
Smashed sweet potatos
oven roast of white potatos
Rolls and butter
Cupcakes.
Simple, yes. But everyone will be happy.
I'm just not in the mood to fiddle around on the holiday this year, rather cook good old, tried and true food, and relax.
We're also doing the easter eggs made out of rice crispie treats hollowed out and filled with jelly beans. Just for fun.

Now, I could be in the wrong culture, but do you sit on the floor and eat with your hands?
I'm not sure.
My high school girlfried was Lebanese and when we went there, her mom would get so mad if we refused to eat. We were served on a tablecloth on the floor, and God help you if you didn't stuff yourself.

Cukes and onion, dressed with vinegar and sour cream, along with onion slices.
Canned mushrooms soaked in italian dressing for a few days, with toothpicks. Trust.

Anna – ‘heroin wings’ – I want some for dinner! And would you give a little primer in Parmesan onions? Pretty please? Those look wonderful. I must be on your wavelength, because that shrimp salad with the hearts of palm looked fantastic to me, too!
Shelby – how does sesame honey chicken work? It looks great.
Kay – I’d call those meals MUCH more than decent! I’m swooning over the shrimp and grits, especially.
Dcarch – what kind of sauce was under your lamb chops? It looks almost creamy.
David – your cod wrapped in bacon is beautiful – so clean and fresh looking!
Mrs. S – your entire anniversary meal looks and sounds delicious, but I believe that I would have shamed myself with the gougeres and parm crisps! I can almost taste them.
amkr – Welcome! Your pork belly bun is a thing of beauty! I want to find somewhere hear that makes those!
robirdstx – your soup looks so good. We are making a sausage and escarole soup with cannellini beans on Friday for our CSA soup swap on Saturday, but the next time that I make it, I think I’ll switch out the beans for lentils!
Stash – that blood orange and endive salad looks like early Spring! So pretty and fresh sounding.
Finally starting to feel human again after being sick since Sunday. Dinner last night came out of the freezer (I did cook them originally, though):
Sausage rolls and mini quiche Lorraine. Plus a salad
kim that is sooo beautiful! beyond words. we had a stew for dinner, the traditional beef, onion carrot potato stew, but nothing as pretty as you had.

My English mum is making these for lunch, ultra thin pancakes, served with lemon juice and sugar. I can hardly wait. Happy shrove Tuesday to all!

I'm assuming the guest of honor is pregnant?
Having said that, A lot of pregnant women will not eat anything raw, organ meats, blood, etc. And of course, no alcohol. I'd seriously, just for this event, try and be a little pedestrian for most of the tapas. Or, at least make sure there are things she can eat, as well as avoid. And, I sincerely doubt she will eat fish heads, no disrespect intended.

Well, come see me in Cleveland, Ohio.
