Wow! Thanks for all the suggestions. Looks like I have some baking to do! I just cut a stock of bananas from our tree, so I think I'll start with the banana cake with sour cream ganache and then move on to the choc. oblivion torte. The mousseline bc is on the list too. I wonder how much weight I'll gain before Christmas?

Another thing I like to do with mangoes is slice and freeze them. Then I put them in my Champion Juicer. It comes out creamy and smooth, just like ice cream. The best part is there are no additives or sugars. This works great with pineapple too!
Thanks so much for this demo! I'm sure that the plastic dowels attached to the cake plate really add to the stability of the cake. Do you think using wooden dowels with a cardboard round would be too unstable?
I don't want to steal this post from jgarner53, but I've been drooling ever since I read this post! The other post regarding the passion fruit mousse has also caught my interest. Care to share your recipe? I have an abundant supply of passion fruit so I need a few recipes to test out.
