    Really? I think the saltiness of the melted butter goes nicely with a sweet jelly/jam. SB (especially a nice homemade wild strawberry jam ) ← I wholeheartedly agree !

  7. Good catch ! Exactly what I was looking for. Yes, it is one of those quirkt QT things. I love QT and his cartoony violence. True Romance is my favorite, and yes, despite how it sounds, it really IS a good movie!

  10. I'm with you, FG. In fact, my husband and I disagree on this weekly I do one thing else, tho. I wash them, bring them to a boil and then pour off that water. Cover again , boil and pop in the oven. I may be fooling myself but I think it reduces the gassiness of the beans. I haven't soaked beans in years. And YES to the salt while cooking. I made some yummy red beans to go with rice last weekend using this method. (Inspired by Brooks' recipe in the RED BEANS AND RICE thread.)
  11. Casey~ it is interesting but here it has been so cold that it hasn't rained. This week it has warmed up to the 40's at night (as opposed to the teens-20's) and seems to welcome the rain. Ahh. It is weather to leave your windows open at night to hear and feel the rain This weekend we are supposed to have temps of 40'-60' and lots of rain. NICE...........(esp since it is WEEKEND!)

  13. Mary~ nice to see the blog start up again. My skin is soaking in the moisture in the air (first time in 3 months I haven't been ITCHY!) and I am hoping this will be a nice week-long drizzle. Ahh. I was wondering how this dry winter would affect things since the last two were so wet. Do the vines get into a pattern, have a memory? (I guess that sounds goofy but this is not my thing ) I imagine this would go back to root depth, etc. How do you think they'll respond to a little rain and warm (40-50') temps? Grow their little hearts out? The cold was stunning. I haven't felt anything like that since I moved from Pennsylvania in 1980 ! Best~ Kathy

There's your rendering. As for the beans, find red beans (they're smaller than kidney beans) in two 15-ounce cans. If you're having trouble tracking down red beans, red kidney beans will substitute just as well . Beans 2 pounds smoked ham hocks 2 15-ounce cans red beans 1/2 cup water 1/2 teaspoon brown sugar 1/8 teaspoon salt dash garlic powder dash onion powder Rice 2 1/4 cups water 1/4 cup butter 1/4 teaspoon salt 1 cup converted rice 1. First you must render the fat from the smoked ham hocks. Preheat oven to 375 degrees and place the ham hocks in a deep pan. Cover pan with foil and bake for 4 to 5 hours or until 1/4 cup of fat has rendered from the hocks. 2. Combine 1/4 cup pork fat with one 15-ounce can red beans plus liquid in a medium saucepan. Add 1/2 cup water, brown sugar, 1/8 teaspoon salt, garlic powder, and onion powder. Bring mixture to a boil, then reduce heat and simmer for 20 minutes. Use a potato masher to smash beans into a paste-like consistency. Add entire contents of remaining can of beans to the mixture and cook for an additional 10 minutes. 3. Prepare rice for 4 servings. For Uncle Ben's converted rice you bring 2 1/4 cups water to a boil. Add 1/4 cup butter and 1/4 teaspoon salt. Add 1 cup of rice, reduce heat to low and simmer rice for 20 minutes or until tender. 4. To prepare each serving scoop 1 cup of beans into a bowl. Add 1 cup of rice on top of the beans and serve. Makes 2 large servings. ETA link

  17. Kanom krok!?!??! Which market was this? I'm going there the next time I'm in MSP! I've never seen them outside of Thailand (though I've never been to other areas in Canada or the US with large Thai populations). Kanom krok is like ableskiever (SP??). I prefer kanom bah bin, though ( or is it bin bah?). did they have that? ← Let me know when you're in the Cities next time, and I'll take you there, and we can have breakfast at Al's. But, back to kanom krok. One of the cookbooks in my collection is Crying TIger by Supatra Johnson. I'm not sure it's a great cookbook, and it isn't very big, but I love it for a couple of reasons. First off, she doesn't just describe the various vegetables and herbs, but shows acutal photos. Second, it is the only Thai cookbook I've seen that has a recipe for kanom krok (think rice flour, coconut cream, some sugar and salt, and green onions, in a pan almost identical to an aebleskiver pan). Growing up in Thailand, early on in the 60's, it was a common street food, but became less common as time went on. Think slightly sweet, slightly savory, crispy on the bottom and creamy in the middle and on the top. ← Susan~ are these eaten as a dessert? Sound delicious............. if you don't have an ableskiver pan, is there a reasonable substitute? Kathy

    Dinner for 40

    tammy~ snowangel links to the Pozole Cookoff thread in her post (look there for ideas and recipes) also, the CI website has the recipe for no stuff manicotti, where you roll your filling in softened no-boil lasagna noodles. sounds like something that could be made well in advance1
