  3. Are you sure it's Typhoon?....As this place sounds very much like the location of Monsoon. Which I used to enjoy when they first opened....later, things got dicey.
  4. It said above that wine was included. You can bet that a dinner like this will be a one seating deal. 45-50 people max. And 6 seats taken up by young chefs who have had their dinners donated....... How much do hummers go for these days? I don't think that $1000 per person is unreasonable if the wines are appropriate. The food will be good with Trotter in town. complain all you want. there will be people who will pay for this dinner.
  5. ^ If you want to learn how to flip stuff in pans "like the pros do", just take a standard saute pan and put a piece of bread in it. When you can flip it perfectly every time, you'll be able to flip like the pros. Good luck, and it's been fun watching you guys.

    ^ That is Terra's Pecan Fruit Bread. I would recognize it anywhere! Been using it for years. You can buy it in crisp form sometimes as well. I bought it a few years ago for Christmas breakfast. Who needs muffins? Excellent with cheese and just good as a snack..... Think I LIKE the stuff???
  7. God I miss those pumpkin truffles!!!!!!! Note: Must see Greg!!!!! Like I said...like the flavour of the MC, but don't like the performance. Try tempering that stuff! Not fun! Best flavour test for cocoa.....Devil's food cake? Don't you think? My pastry chef is thinking about switching chocolates....she will be doing research soon. I'll let you know what she finds, and where she finds it. We are using Cluizel right now, and Valrhona when we can get it.
  8. hmm, that's too bad. i think the rep also mentioned haute chocolate in west van as well. did i also mention urban fare might be carrying it? btw, i checked out your brownie recipe....eek! going to have to try that out very soon....maybe tomorrow! ← I can attest that the brownies were QUITE good. Fudgy like I like em. As for cocoa in Vancouver.....Have you tried Chocolate Arts? I am sure that Greg could answer your questions with regards to the Callebaut dilemma. He used to use Callebaut and Valrhona when I was there. Gourmet Warehouse? Has anybody tried them? I've decided that I like the flavour of Cluizel, but not the performance. I'm still a Valrhona Guanaja girl....and Tana Riva. What about Fabulous Foods? Try Them?

  10. Here Here!!! Wow, and i thought that I was being insensitive by thinking it! What a concept. Rather than lay "blame" on chef's for screwing up YOUR diet....wow. Eating out is supposed to be fun, not about counting calories or fat grams or starch allowances.
  11. Sandhill is respectable wine...and the winemaker (Howard Soon) is a wonderful Person. Enjoy yourself! With that location, and the above choice, you should have a memorable occasion. I am Jealous. Report back!

  13. Your cat reminds me of my cat. Last weighed in at 23lbs!!!! He is not fat. Just big. His paws at six weeks old were as big as my palm (Hand). So glad to see another Vancouverite blogging!!   16. Another Favourite: After constructing a meal for a "Vegan" which contained fresh corn and sending it out....and this was many years before the Atkins craze came about..... it got sent back. I asked what was wrong. I got told: "the woman at the table says she's VEGAN, and that VEGANS don't eat corn because they are a STARCH, not a VEGETABLE!" This is one of the few times that I have ever been at a loss for words. I just shook my head and made her something else. And yes, I was seeing who would catch that above.
  17. This ^ is the general tone of most cooks..... Why can't people with severe or strange allergies phone ahead by a couple of days, so that something can be arranged? My personal favourite combination: Vegan that is allergic to wheat and dairy.....Add nuts to the mix and you are screwed!!!! With regards to the soup question above, 99% of soup recipes have onions, garlic, leeks or shallots in them somewhere....whether in the stock or the actual soup. I have actually met people who are "allergic" to this family of vegetables, however, I suspect that some of them are "allergic" due to religious reasons. Aren't Buddists (sp?) not supposed to eat this family? However, saying that you are allergic to soup, that just comes off as sounding stupid!!!! To add to the list: The other day I was looking for some feedback from a customer on a new dish that we had just started. When i asked the waiter what the table had said during their quality check, He said: "You're not going to believe this. They said 'of course the food is good, this is So and So's restaurant!'" They had looked at him with total distain for asking! What can you do? Most customers would be offended because you hadn't asked how the food was. These people were annoyed because he DID ask! This is why I am not a server. I would have lost it on those people.

  19. Whether it is an event or not, children should still be taught how to behave. If we misbehaved as children while we were out and about, we got grounded or deprived of the experience. And the same rules applied at home. If we misbehaved at home, we got sent to our room....and rooms back then did not have their own TV's, Gameboys, computers....etc. that they do now. Children are widely spoilt in these days. Parents have to find more effective ways of punishment.

Having never watched Rachel Rae in any of her shows, i do not have an opinion of what she is like or capable of as a "chef".... ....however, i did find myself recently doing a demo for her show. Apparantly she does voice overs describing the action and the ingredients. It would have been nice if she actually had been there to witness the demo. (Not that it was anything great or difficult....they picked rather wierd things for a demo!) I just thought that it lacked credibility. Her producer/director or whatever was very specific with what my role was....mind you, he was open to suggestions..... I understand that food television is very contrived with preprepared food and timing impossibilities....but i thought that the lack of interest/credibility of the supposed host of the show was very disappointing. Perhaps she has very limited time...but does the network have to spread her so thin that she can't even attend the tapings? Just my two cents.
