According to their explanation, they choose the restaurants based on wine, food and atmosphere, with a special emphasis on pairing the wine with the food but their primary focus seems to be wine.
  2. I don't think you have been trying the right oils... Italians make some of the finest olive oils in the world. This scandal mostly applies to cheap bulk grade stuff, not the handmade DOP oils. I buy one new artisanal oil every month and almost without exception they are divine. It sounds like you like the full flavored oils so look for oils from Tuscany and further south. For lighter more perfumed oils look for Ligurian, Piedmont (yes they exist) and Lake Garda oils. Don't give up, keep tasting!

For those of you that have not heard of the "Associazione Italiana Sommelier" it is a very respected and (I believe) less political and commercial guide to wine and restaurants in Italy. This years volume is 1790 pages, a veritable phone book of information. Unfortunately, it is only published in Italian. After being led astray countless times by Gambero Rosso this will be my guide from now on.
  4. A "grappoli" is a grape cluster in Italian. The AIS (Associazione Italiana Sommelier) uses grape clusters instead of stars. Five clusters is their highest rating.   8. I had the same problem with mine, but I was able to move the sensor (or sensor construction, that is) 2-3 milimeters closer to the flame. Shut down threshold came down to an acceptable 2-3 seconds, and I have still all the safety of the "no flame, no gas" thermocoupled valves. ← I didn't get anywhere with this. I can unscrew the sensors but I can't get them closer unless I redrill the hole.. Is that what you did Boris?

Although considered simple food, this kind of meal would keep my grandma busy in the kitchen all morning, she usually started cooking right after breakfast. This was our typical "Sunday dinner" (lunch): Fried Chicken-One chicken (free range) cut into 10 pieces (two wings, two drum sticks, two thighs two breasts and two backs) -Flour -Salt -Black pepper -Vegetable shortening (Crisco) or lard (lard is best) Season chicken pieces well with salt and pepper then roll them in flour and put them into a cast iron frying pan with 1.5 cm of oil or lard and fry them over medium heat until brown on all sides. Once browned lower the heat cover with a lid and let them simmer very low until the meat is very very tender about 30 minutes, when done place the pieces on paper towels to drain the fat. Cream Gravy for Fried Chicken Pour off most of the fat in the pan that you fried the chicken in, allowing about two tablespoons to remain, be sure to leave in any bits of browned flour, add two tablespoons of flour and cook slowly until it begins to take on a light golden color, add 1/3 liter or more of milk and stir frequently bringing the gravy to a rapid boil, it should be quite thin, if not add milk, then boil the gravy over medium heat until the bubbles are are the size of dimes and gravy is a nice consistency. Mashed potatoes No recipe, just beat them with some warm milk until they are smooth, put them in a big bowl and top with butter and black pepper. Creamed Corn 2 Cans of corn (or fresh) Cream Salt Black Pepper Sugar to taste (we liked it pretty sweet) Put corn and some cream in a blender or food processor and blend shortly until the corn is coarsely pured and slightly soupy add cream, salt pepper and sugar to taste and cook over low heat for 15 minutes. Creamed corn should be slightly sweet and thick. Shelly Beans 1 Pound fresh green beans stemmed and cut in half 1 lb of cooked brown beans like pinto or Borlotti (canned works too) A large handful of left-over shredded smoked pork or bacon One small onion finely chopped Salt Black pepper Vegetable oil A little water Fry the onion slowly in the oil over medium heat and when translucent add the pork and beans and a little bit of water, season and cook slowly until the green beans are very tender but still hold their form. Cole Slaw 8 Cups finely chopped cabbage 1/4 Cup carrot, shredded 1/3 Cup sugar 1/2 Teaspoon salt 1/8 Teaspoon pepper 1/4 Cup milk 1/2 Cup mayonnaise 1/4 Cup buttermilk 1 1/2 tbs. white vinegar 2 1/2 tbs. lemon juice Shred cabbage and carrots into small pieces. (The food processor is great for this!) In salad bowl, combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice. Beat until smooth. Add the cabbage and carrots. Mix well. Cover and refrigerate for at least 2 hours before serving. Serves 6 to 8 Coconut Cream Pie 1 Pie shell, 9", baked FILLING 1/3 Cup sugar, granulated 1/4 Cup cornstarch 1/4 Tablespoon salt 2 Cup milk, whole 1 Can cream of coconut (8oz) 3 Egg yolks; beaten 2 Tablespoon butter/margarine 1 Cup coconut, flaked 2 Tablespoon vanilla MERINGUE 3 Egg whites 1/2 Tablespoon vanilla 1/4 Tablespoon cream of tartar 1/3 Cup sugar, granulated 2 Tablespoon coconut, flaked For filling, in a med. saucepan, combine the sugar, cornstarch, and salt. Stir in milk and cream of coconut. Cook and stir over med. heat till thickened and bubbly. Cook and stir 2 mins. more. Gradually stir about 1 Cup of the hot milk mixture into the beaten egg yolks, stirring constantly. Return all of the mixture to saucepan. Cook and stir till bubbly. Cook and stir 2 mins. more. Remove from heat. Stir in margarine or butter till melted. Stir in the coconut and vanilla. Pour filling into baked pie shell. For meringue, let egg whites stand at room temp for 30 mins. In a mixing bowl, beat egg whites, vanilla, and cream of tartar on med. speed of an electric mixer till soft peaks form (tips curl). Gradually add sugar, 1 Tablespoon at a time, till stiff peaks form. Evenly spread meringue over hot filling; seal to pastry edge. Sprinkle with the coconut. Bake in a 350° oven for 15 mins. Cool for 1 hour on a wire rack. Cover and chill for 3 to 6 hours before serving.   13. I made the Basmati tonight. It was good but honestly I can't say it was any better than a good Basmati I buy at a local Indian grocery store in Switzerland. I will report on the Cicerchia di Serra de’ Conti next...trouble is I have never had Cicerchia before so I can't really provide an objective analysis.

  15. Wow, very nice! Weird about the hot knobs. Up date on mine... - Oven takes a long time to pre-heat and really sucks the Kilowats (If I run the dishwasher at the same time it blows the breaker (not that rare in Italy). In fairness it is a huge oven. - Once hot it works great and I like the convection option and the grill behind a glass plate feature. - The gas ignition is a drag because you have to hold down the knob until the sensor heats up, takes about 5-7 seconds. I may be able to hotwire this though. - Burners are great and the huge center burner boils the water in my big pasta pot very quickly.

  18. Just a word of caution; A large portion of truffles for sale at the Alba truffle market are from other regions of Italy and even Europe. Just have a quick look at the Eastern European number plates in the parking lots and you will get the idea. You are safer going to some of the smaller local festivals like Moncalvo and Montechiaro. There you will be fairly sure you are getting the local stuff. Also, If you don't know truffles don't buy them. You need to have some experience smelling truffles in order to judge them. Once bought try to use the truffle ASAP. In a week a small truffle can loose half it's body weight. If you are planning on carrying it in your luggage while you finish your two week vacation in Italy you are in for a big surprise! Best advice is to enjoy the truffles at a well respected local restaurant that either hunts their own truffles or buys them from local hunters.

  20. Secret places are more of a myth that a reality. The reality is you just have to go out every morning and see if your dog gets a scent... this takes hours and hours and usually they don't come up with a thing... it is a pain in the ass and boring but this is how it works. Usually you don't get to keep the truffles you find but you can buy them at a favorable rate. If there was actually an easy way to hunt truffles they would be plentiful and cheap. There are several restaurants that Paolo uses, all of them are good but probably not in many guide books.

He knows EVERYONE in the Monferrato and the region around Moncalvo and Montechiaro is prime white truffle hunting grounds. If you need B&B suggestions, let me know I have loads!

Thanks John and emsny, I agree that if any of the money makes it back to the farmer then it is a good thing but somehow I get the feeling that the supermarkets might take advantage of the slowfood movement purely for their profit's sake and create a bubble that will burst, leaving us wondering "what ever happened to the Slow Food products that used to be on the shelves". Coop has grabbed on to every enviro-fad ever invented, some good and some bad. Go to their web page and click on "Labels" and you will see. I am worried that it will only be a matter of time before consumers get burned out of all this high-end hype and the important concepts like the Slow Food rare foods will get lost in the shuffle. I wonder what the pie chart looks like for a dollar/euro/pound spent at the average grocery store? What percentage goes to whom? Isn't the Slow Food concept too important to be trusted to the cut-throat grocery store way of marketing?

  25. I was at a Coop grocery store in Switzerland (my local supermarket) day before yesterday and noticed a Slow Food display containing several products promoted by Slow Food... See the whole list here: Sorry in German, French or Italian only. Have you seen Slow Food products in your area of the world yet? If so, have you tried them and what do you think? Prices here in Switzerland are 2 to 3 times the price of other premium brands and way, way more than the budget varieties. I bought some Dehradun Basmati rice and some Cicerchia di Serra de’ Conti I will cook them carefully and let you know what I think. Interestingly enough, the descriptions/directions were written in several languages so Slow Food seems to be gearing up to market globally. In your opinion is that cool or uncool??? Is this what Slow Food is supposed to be all about...flying food all over the world for yuppie consumption? It seems to me that as the end seller, the big profit margins will mostly be realised by the grocery stores... maybe that is why Coop Italy and Coop Switzerland are such big sponsors of Slow Food. I am certainly all for helping to promote sustainable agriculture but is this the right way to do it? Do you think this will end up pissing people off and ruining a really important cause? I hope this won't be the case.
