    Hi @Margaret. I can do now, this is very, very easy to make. Start with a clove of garlic and some extra virgin oil, then add some very good quality peeled tomatoes in can (crush them by hand or using a moulinex food mill if you prefer no seeds), add at least a couple cans full of water, It needs to be soupy, not a tomato sauce and cook on medium high. After about 10-15 minutes add any fish that will be good for soup (my father often use monkfish when cooking in the north of Italy, but in my hometown red scorpion fish or gurnard would be the preferred option), here I used a snapper head and my father would then add langoustines. Adjust salt and cook a little longer until with and langoustines are cooked. On the side I cook some tubetti pasta, De Cecco. Only shape, I thought I could go with broken spaghetti but apparently no 😒. We cook in the same way the soup with mussels: ditalini (=tubetti) con le cozze alla tarantina. A picture from the web here. Edit to add: in my soup I also used some baby octopuses (which I sauté with the oil and garlic, my husband loved it, the kids didn’t like the flavor of it in the soup).

When I was living in London (the UK forum was very active back then), around 2005 I was shopping from Natoora all the time, you would get daily deliveries from Italy and France. LOOOOOOVED it! Spiky artichokes from Sardinia and cheese from Corsica. Good times, plus Billingsgate market on the other side of the street. No Billingsgate market, after the last stop to the fishmonger, my daughter asked in panic when this all fish eating was going to stop, enough for her 😅😁

    I am desaparecida, moving this weekend!!! I am thinking tomorrow is going to be the last day of decent meals then we are going to have some days of uncertainty. I hate it! I think I will cook a good amount of hard boiled eggs, salads ready, tuna in jars and a couple of take out rotisserie chicken, smoked salmon and possibly a pizza. Tonight already very minimalist. NY strip, roasted potatoes, sauté cauliflower and beets. A couple day ago we bought a lot from the fishmonger, so I finally made a soup, kids didn’t appreciate I used broken spaghetti in it, instead of ditalini (that are harder to find in Florida) like grandfather does. Grandfather soup won but he uses langostines which explains it all 😁 Next time I will use spiky lobster 😙

    Hola! So glad you got clams @Kim Shook 😋 Yesterday it was duck confit with carrots and broccoli stalks, mushrooms, rice and salad. And today I cooked hanger steak for the others, oh well, I had some too, and salad, plus bruschetta. A couple days ago, someone I know on FB was mentioning parmigiana and I was craving it so much, that I had to make it today. I don’t know if American youngsters have a food they crave when out in the middle of the night. For me, growing up, 2 options. Either go home and make spaghetti with aglio e olio or carbonara. But this is more when you are a poor university student living away from home...but when in the South and going back to parent’s house, everybody’s dream is the leftover parmigiana. Oh, well, if it’s almost morning you go and knock on “pastry labs” and beg to sell you a cornetto with cream or a “bombolone”. My roomates here don’t know what there are missing but I don’t care because, it’s all mine 😁😁😙😙

    Yes, but I cannot pick it to the right point I want it 😁 the darker it is the older is is too, the very light one is the freshest (and sometimes more difficult to grate). Need to look for a nice bottarga from Cabras, Sardinia. I’ll see what I can find 😃
  9. So, yes, we went to the fishmonger again. We got a mangrove snapper, 2 snapper heads, clams and 2 orate (sea breams) which I suspect are imported from Greece and these taste nice but since I know @heidihis going to ask, they taste different than the wild sea breams because they are fattier than the wild ones and it’s all saying since sea bream is a fattier fish to start in comparison to branzino. I think we’ll go more often with the mangrove snapper that is half the price, local and wild.

    It tasted fishy in a bad way for me...not as a whole fresh branzino, wild if possible. In all honesty, not all farm raised fish is created equal. In France too, you have different prices depending where the farm is located. The Greek and Turkish farm raised fishes are the notorious cheap one. I love spiny lobster. Like I love langoutines (that in Italian are called scampi, nothing to do with American scampi) but I dislike lobster and shrimps, love crabs. Ah, ah, so weird I am. Anyway, as predicted we went to the fishmonger, I will show you what we got in the other thread. I am thinking this will become a weekly tradition...not complaining because, I love it! I need to look for some good bottarga to elevate it even more.

    Husband bought some frozen branzino, I do not like the stuff. All the farm raised branzini to be found here, which I actually call it spigola (in the South of Italy it is called spigola and in the North branzino) comes from Turkey. They quality is so so. Today I think there will be a trip to the fishmonger.

    For my son actually I have high hopes. For the chicken recipe I have to credit him to be honest. He is 13 and can manage. Definitely he knows that he has such high standards that he needs to take care of himself if he doesn’t want to be disappointed outside when he will be on his own. There is the egulleters way of eating and the outside world way of eating 😁 even my 9 years old is getting to understand it.

    Hello. Yesterday we had an overdose of octopus and I made some dak gang jeong (Korean fried chicken) for my daughter who really wanted it. Tonight some hanger steak and vegetables and bread not pictured. P.S.: @Robenco15 so envious of the pizza oven! I have not bought it yet. Still undecided between the Ooni Koda 16 or the ZioCiro oven. If I don’t hurry up, I will receive it for the end of the year...
  14. Finally, after 3 months wait, I got the delivery from Fly by Jing. Hopefully they will be in stock for a while. So far I only tried the mala spice and can see getting addicted to this stuff.

    I understand the crab excitement We used to have a weekly crab night when living in Manhattan before children. 12 crabs and beer 😁. Only one time in Shanghai I had the pleasure of having the Shanghai crab in season and I’ve never been that slow to eat 2 crabs in my life

    In reality I had to think about this for a second. Not all Italians cook pasta in the sauce. If it’s quick cooking sauce, with vegetable, shellfish, or even cherry tomatoes for which I’d use a sauté pan, I will sauté the pasta al dente with the sauce. But if it’s a simmering sauce that I cooked in a pot I will not cook the pasta in the sauce. You will never see anybody sautéing tagliatelle in bolognese sauce 😮 Sometimes pasta get mixed with the sauce if I decide to serve at the table for the whole family in a big pasta bowl and portion at the table (with extra sauce handy for people who like more sauce) but if I hand out single portion, the sauce is going to go in the middle. BTW, my chinese husband saying that also for him is normal the idea to have the sauce on top. No pain but very annoying...The crab is Scottish rock crab the Florida crab is more orange. I guess the husband went cheap 😁

    Yesterday night we had steamed crabs and fried cod. I broke my retainer at lunch with a piece of bread and thought pasta would be easy enough to eat...mistake. 2 weeks before orthodontist appointment.

    I put some wagyu sirloin on the cast iron grilled. Roasted one eggplant and some tomatoes. Son cooked the peppers (and took his own photo 😁) and then I discovered some cooked farro in the freezer, to which I added some of the TJ’s chili onion crunch and some parsley.

    Oh, dear, he is a TERRIBLE shopper. He is good for shopping meat and very simple stuff, wine, yes, for that he is a great shopper. You need to leave a very detailed list and names, pictures and locations possibly. And I never trust him on fruit and vegetables. A trip to Costco means 20 phone calls minimum 🤣🤣🤣

    Good to see you again @ambra The pork is Andrea Nguyen recipe for char siu pork, you can definitely find it on google. I add only a teaspoon extra of salt to the marinade. I get a nice fatty piece of pork than I can cut in regular size. I cut about 4-6 long strips from a 1kg -1.2kg pork roast. Bake 15 minutes on one side at 375F, I flip, do 10-15 minutes more and then I broil on medium brushing some reserved marinade (my oven can broil convection or static. I do static because, with the sugar and honey burns easily) also I keep a certain distance, like middle oven, I broil 6 minutes, turn broil more until it’s all even. If you cannot find the recipe let me know. Yesterday dinner, super lazy. My husband came home with a full smoked salmon, this is Ducktrap River Salmon, I like it, very mellow easy to like salmon. With salad, french green beans and homemade crusty bread.

    I little lazy taking photo of dinner recently. A couple days ago I did chinese pork roast but instead of my usual steamed bread, I went italian, doing the fusion that is usual in my house. So tigelle and pork roast. Man, I should sell the idea to some restaurants because this stuff works really well. Tonight I fried some cod, some calamari still from the freezer and croquetas de chorizo for the rest of the gang, for me a little bowl of noodles, salad and roasted cod.
