Yes! I use this very heavy roasting pan that I bought at Costco almost 20 years ago, I have a round rack that fits perfectly and it sits tall enough that potatoes have some room

Rest of the garden it’s in progress, ah btw, the husband read your comments, he said that I didn’t clarify that the raised beds do not have concrete at the bottom, it’s open to the soil. Anyway we got a dwarf Meyer lemon (which I do not like but they told me are the one doing better here) and a Persian lime. Plus a mango tree. The other day we also got a small bay leaf and a rosemary.

I had some quinoa already cooked in the fridge but my mother in law has difficulties eating it, so I bake it. Also 2 duck leg confit, with potatoes and some sauté chicory

my husband too...and it’s psychological, because if you cook just the outside doesn’t help, but after pulling a couple very long worms (from other fishes) I got a little squeamish. If we decide to redo the kitchen in a couple years, I am considering a blast chiller just for that

Thank you, @JoNorvelleWalker. For my experience, the cooking it’s important but not as much as people think. It’s the tuna that makes the difference. This was freshly caught, more often we get the black fin than yellow fin because it’s more common...huge difference. And I’ve cooked my share of previously frozen tuna from supermarket...for some, no matter how careful I was with the cooking the result was mediocre. Some were better than others, you realize when you defrost 3 pieces and cook exactly at the same time and depending on the where in the fillet the particular piece come from or just comes from a different fish and the result is quite different. This yellow fin, I might give different cooking times to some of the steaks, to make everyone happy at the table but still comes out juicy and not dry even when not super rare. So, my advice is look for a place where you consistently had better results. Frozen fish from Costco in my experience always better the Wholefoods for example.

Very little effort lunch. Pizza dough was in the fridge for 3-4 days, not sure. Took out mid morning to divide in two and give it a couple of folds. Let it sit one hour before stretching in the pan and let it rise.

Yesterday we had for dinner silver snappers, not bad at all. Very mild flesh, good texture. Steamed rice and some stir-fried vegetables

@rotuts Recipe is very easy. It’s just that I used a 6 inches pan x 2 inches, lined with a round of parchment and oiled. I cooked a big zucchini with some oli, salt and tiny bit of water, no much water left. Left to cool. I’ve beaten 6 eggs, a couple tabletsspoons grated parmigiano, 1 tablespoon of whole wheat flour, salt, half teaspoon baking powder, chopped mint and incorporated the cooked zucchini and poured in the pan. I put the pan on a small tray because I was afraid it would spill, didn’t happen. I cooked in a regular oven at 375 for half and hour, mine is just a regular old oven. Left 10 minute in the oven turned off before unmolding. It deflated a bit but not terribly. Simple and tasty.

Thanks guys, I will look for the hardware cloth. @dcarchyou would drill holes at the base of the blocs even if there is plenty of perlite at .the bottom? 🙏

Yes, I am on an island in front of Miami, iguanas are all over here. The raised beds are very tall. We got the soil from a very nice coop and the head gardener gave us some advice, there is perlite until half of the beds and very good organic soil on top. @rotutsthe neighbor just complained about the iguanas eating it all! Roasted iguanas not sure are going to enter the menu soon 🤣

Rocket was not a problem is Brooklyn but here, I don’t know. It’s not working. I asked the neighbors about iguanas, I think they all got discouraged 😕

Hi guys, I have been very quite lately but I am here. I want to show you how they came out our raised beds. For this season we planted beans, cucumbers, bai tsai (bok choy), Asian eggplants, peppers, some salads. Rocket, I cannot bring myself saying arugula (as it makes me feel and illiterate Italian) is not doing well. But all the cucumbers are gone! Thanks to the iguanas 😟 I need to find some protection. I was thinking in tomatoes cages and some netting on top. This garden is going to end up very expensive 😫but we knew about it. Suggestions are welcome

My husband bought two big bags of string beans from Costco and not happy, thinking we love them, bought some more today. Expect some string beans dishes in the next few days 🤣 Fish is almaco, which I hope not to see in a while 😙

I know it looks really like a menu à la carte today. Mother in law is having a problem eating and I had some odd stuff to finish from the fridge. Pocha beans with some pancetta, a tablespoon of the Bulgarian pepper sauce from TJ’s, leftover steamed rice. Girl wanted noodles, thanks to Cotsco stock. I made polpettone ligure for lunch and happily shared for dinner some with MIL. One NY strip shared, some cauliflower a la almost Ottolenghi and since my son was eating after us and at lunch when making the polpettone I had some extra steam potatoes I managed a portion of gnocchi for him. He was happy with it.

That’s what we get from a local frozen chain store, shrimp from the Keys, prefer those for sure!

Trying to make everybody happy. Pizza in teglia, fried shrimp and sauté, salad. Husband wanted to try the frozen Argentinian shrimp from Cotsco but me and the boy are not fans
