There was a great Swiss restaurant in Edmonton called you guest it " Restaurant La Swiss" ha ha, I not kidding; it was so amazing, great service and food, fondue was very popular item on the menu, The Creperie had chocolate fondue and to this day that is still one of my favs, also Banff had the Grizzly House, whistler had chez Joel’s, I think Vancouver had something too. steve

Fondue lasted in Western Canada into about 85 then it died with a big bang. Potato skins where on every menu ( someone did mention that) zuchini sticks mushroom caps snails cheese bread I have about 20 (80-87) menus from all types of restaurants so if you are realy serious I will look up stuff for you??? The funiest thing is now I live in Port Alberni, Vancouver island, and everything in this town reminds me of the eighties, the menus, the cars the cloths and all the restaurant menus are so eighties, beam me up scoty. Drinks- major shooters and cocktails harvey wall bangers screwdrivers bloody marys caesars I was 18 years old in 1983 so I was there and I wish I did not remember it; just like you hippies can not remember the sixties, I wish I had the same problem with the eighties. Sam; you are right Ceviche is not cooked, whatever seafood that you use like you said is cooked with the acid. This process is what makes a "Ceviche". steve

MANGO AND BABY SHRIMP SALAD baby shrimp (cup) yellow, red, green pepers fine diced (about 1/4 each) one rype mango dice up (small dice) Green Onions (one) diced mango juice(1/4cup) lemon juice (squeeze to taste) lime juice (same) juice from chipotle peppers plus about t-spoon of fine diced chipotle olive oil (1/4 Cup) fresh herbs( chopped) s&p salad base whatever you want marinate then put on your base garnish with some tomato and cucs sprig of fresh basil couple of lemon or lime wedges steve PS you can add garlic or ginger move this salad from country to country

Paul that sounds like what Jamie’s been doing, maybe feeding those brownies to the snake first then smoking and drinking the blood of the snake then writing august events, it would make sleepy Vancouver very exciting . steve

It is the right of a worker to get decent chow, hell if they will not, then volunteer and make the staff meal yourself, they will either hang you or let you go? Or just leave in the middle of the rush and take your half hour by law break and go for lunch Usually you can not do this, thus staff meal paid by the company. steve

I have done all types services such as creating fine dinning, doing breakfast and preparing lunch and each one has their moments. steve I love mexican, cajun, Itilian and Canadian food fresh bread, sandwiches, soups, nice pastas, fresh fish and shell fish any way, any style, just the freshest; now that is what I enjoy cooking! I love that scenario too!

Yes, that French Con Man saw right through the smoke and mirrors and put on his own show, the restaurant fell hard on the smell of money, it took a few visits and he took them for a lot of money, but some of the guest did not fall hard for Rovencourt antics, some of his quest smelled a rat among them, this dinner was the end for the con. Like I said smoke and mirrors only work if you have ignorant and money hungry people, but you can not Con every one, you must know your audience. Rovencourt should have quit while he was a head; he got greedy in the Whistler life style and caught up in the luxurious life style, in the end it brought him down. steve

Yesterday, I made mexican pizzas one with chicken, bacon, mozza and mushrooms the other pesto, baby shrimp and fresh tomato I have always had the attitude with staff meal I can make it cheaper and better also it build bridges with the front of house, you always want to be in good relations with your fellow workers after all you are all in the same boat. If my boses did not like it ( feeding staff) you could fire me!! I am still here after 25 years hungry staff makes terible workers!!!!!!!!!!!!!!!!!!!!!!!!! feed the worker!!!!!!!!!!!

Bearfoot Bistro has always been about smoke and mirrors; for me it is the most overrated restaurant in Whistler; this place deserves criticism because when you stand on a milk crate claiming to be the one, it is easier to throw rocks and bring you back to earth, I really hate this about fine dinning, why does it have to be so dam pretentious, charge outrageous money and they will come?? Give me a milk crate, some good food, wine and company, through on a table cloth and I feel that this can precede anything that these type of dinning rooms and style want to communicate. Ego does not sell food forever, after a while like in the Wizard of OZ the works will be found out and a few notches will be busted out to reveal to the public what you really are.

I think we are missing the most important part of this discussion and that is environmental; where we live, the cultural, religious and sociological issues are tied close to environmental, such as if you are a Eskimo and it is January, try and find some veggies down at 7-11, I believe that would be hard, we are missing the most important point here. We eat foods that grow in the natural environment and have been manipulating food for our benefit since humankind has existed I might be wrong but did not most humans live in the country and forage for their food and depending on which environment they lived that would dictate the types of food they ate, it would be normal to eat a fruit and nut diet and some fish if you lived in a tropical environment and close to the sea. Italy is a great modern country to study different diets based on environmental situations. Italy has so many different types of food and diets, the reasons for theses diets are varied and one reason we have missed is financial, some people just can not afford to eat meat every day. In Italy the north eats different foods then in the south, the north is more meat (lamb) and cream, cheese and polenta. The diet is based on season and what is available to the homemaker and also what the budget of the cook has. There are huge cultural influences from region to region, recipes passed down from generation to generation. They do not go to 7-11 and get there groceries, this to me is a bigger culprit then lets say eating meat. The biggest misnomer is that vegetarians are helping the environment; I think they want to think this so they can cease to worry their heads off. First off I do not want to insult anybody who comes to vegetarianism naturally; religious and cultural values where vegetarianism can come hand in hand, I mean no wrong in this discussion where I have a problem is left wing veggies; wait a minute can there be right wing veggies???? In the Western world we are creating new religious dogma by replacing our traditional values of church with so called spirituality, hey if it feels good do it!!!..., but please remove yourself from the pulpit and do some more homework, open your eyes to the world, it is full of trickery and people who play on your fears and weaknesses; what seems to relive your mind from your quilt of killing animals, a life of vegetarianism, dig bellow the surface and you realize you are a marketers dream, a very easy target to sell too. Capers is such a store, they utilize a lifestyle and target audience and mold the fears of that market to take them any where they want, but again scratch below the surface and you see it is not as spiritual as you would want to believe, the new age movement is a multi million dollar industry and so is vegetarianism, it is a peg in the whole for companies to develop product and lifestyle so they can sell to you, you are a lamb waiting for slaughter, you are not that smart after all. Secondly how are you really saving the planet? The one way which we can save the planet is to start waking up and question where food source are comes from, vegetables can cause just as much environmental damage as animals. Pesticides, chemicals and intense farming are what are destroying the environment not cows. Our food source is controlled by few companies; Cargill, Monsanto, Adm, Louis Dreyfus and a few others. This to me is more evil then eating meat, we need to get back to each owns regional diversity and eat what grows in your own eco system this is more valid then any argument based on emotional neo new age spiritualism. Scratch the surface and dig deeper and you will see that things are not what they seem. As they said in X files, the TV show; Trust No one, but the truth is out there, but you will not find it at 7-11

How is it exploitation? A cow is breed to raise milk. That is what it does. It is part of the food chain Just like us, we are part of the food chain We are part of nature If we were actually in nature, we would be eaten. Going to a grocery store is just as unnatural as lets say arguing about meat not be natural to humans. steve

Let's put everything into the context of nature, if you lived off the land, and it was winter, what would you eat???? We are just animals are we not?? Would not the ecosystem that you lived in dictate what type of foods you eat?? I think this veagan stuff is based on emotion not reality. steve
