    Dinner 2025

Frozen peas make a regular appearance on our plates, peas being hubby's favourite, fresh or frozen, followed by corn as a second. Had purchased a big bag of lamb shoulder, cubed from a restaurant supplier. I was able to thaw the flat block just enough to separate it into 4 meals. Lamb Vindaloo with Basmati rice, paratha, and the unlikely side of mixed veg. Been wanting the Thai salmon again after we enjoyed with with friends. Made the mistake of being cheap and bought a package of skin-on fillets. They came in a package that does not show the fillets. They were VERY thin! Won't do that again. Sandwiched between layers of lemongrass, cilantro, green onion, ginger, lime slices and Thai chilis. Eaten with leftover Basmati rice from the lamb, and stir-fried mixed veg. Surprised to find a Sterling Silver (AAA) Boneless chuck roast for $6.00 / lb. Made a slow braised stew in the oven. Good day to use the oven as it's -27C, -38C with the wind! The flavour was good and meat was tender, but doesn't measure up to beef short ribs, which are $9.99 / lb on sale! Loved the German potato dumplings (from a mix) - pillowy and a bit chewy!

For CNY supper, we had a small AAA Prime Rib roast: Last night we had leftover Buddha's Delight. Tonight, we finished the rest of the prime rib. Leftovers all gone; and it'll be a clean slate for February! The beef reheated well in gravy. I LOVE rice and gravy!

    Lunch 2025

My Mom used to make the cured meats before they were available in the stores in the city (1958). We lived in a small rural village, so Mom made her own, based on what she used to do in China. I love these meats cooked with rice in the sand pot.

    Dinner 2025

Since my mother passed so many years ago, we no longer follow the traditions of many dishes, special foods, etc. It's too bad as our grandchildren are missing out on these kinds of feasts. I did make one dish, and it took a lot of effort as I get older. Buddha's Delight: I didn't use 18 ingredients, but I did have 13! The grands liked the lotus root, mung bean noodles, and deep fried tofu

Rice, corn, green beans, and slaw filled out the plate. Steak and Kidney Pie with Cavendish fries, salad, and salsa. Tossed in leftover green beans, corn and sauteed mushrooms in the filling. Steak and kidneys were cooked in the Instant Pot, then added veg.

Put together homemade stove-top stuffing, sweet tater, cranberry chutney, green beans.

We love cumin lamb! Yesterday, I was at Safeway and found 2 packages of ground veal marked down! So I made Ann_T's Magnolia Grilled Veal Meatloaf! I used Summer Savory that my kids brought from Nfld for herbs. We LOVED the texture, way better than the usual meatloaf with tomato sauce / BBQ sauce. We had some slices for supper tonight, with a mushroom gravy. Took some to my brother and s-i-l. Tomorrow, I may grill some for lunch! Thanks, @Ann_T! Another first for me was Rice Pudding! I have only ever made it once, about 50 years ago. This one is baked in the oven. Don't care for raisin in it, but hubby likes them. Next time, I will put in pistashios and cardamom, like we've had in East Indian restaurant.

Nice to be able to get ground lamb - made Moussaka for supper. This time, I tried broiling thin slices of eggplant as opposed to pan frying. We prefer the thicker slices pan fried - soft silky texture a nicer contrast to the ground lamb. Salsa makes a nice contrast as well Lovely fresh chicken breasts on sale at our local Co-Op: $4.99 / lb. Picked up 4 trays and put them into foodsaver vacuum bags for the freezer. Kept 2 breasts out for Chicken Fajita last night. Avocados from the freezer for guac, a can of El Paso refried beans, etc

Still re-energizing after the Xmas festivities followed by friends making their annual visits! Made Thai Herb Salmon Baked in Foil for guests for supper. Sides were Green Beans Almondine, Jasmine Rice and Nasi Lamak. Made trifle for dessert. Leftover salmon for two the next night Always keep Costco Weiners in the freezer. Great when I am tired of cooking! Cavendish Fries and bag of chopped salad = supper! Had a Butterball Turkey Breast in the freezer that didn't get used over the holidays. Used a box of Stove Top stuffing for the 1st time. Better when oit was dried out a bit next day! LOL! Leftover turkey for sandwiches for 2 days. Stir-friebd Udon noodles with siu choy, shirataki mushrooms, rehydrated shrimp, and char siu, in oyster sauce. Picked up a small pork blade roast. Seasoned with West African Citrus Spices. Made delicious gravy! Made 3 doz egg tarts for our garden club meeting in the evening! Easy when I am able to buy puff pastry tart shells!

Ran out of time to make moussaka, so the ground lamb turned into Kofta. Basmati rice and mixed veg sides. For dessert: Chinese Steamed Egg Cake: memory from my childhood, and, my kids love this whenever Po-Po visited us on the farm and made this. After school, a wedge of this with ice cold milk. I have been making this in my Mom's old wicker basket, but it finally fell apart even with all the mending I did. So, I had to make this in a bamboo steamer. I need to find a similar basket, like this one! Maybe when my friends go to Malaysia!

Have not made pizza for eons, but I had a lot of various meats left over from our Xmas charcuterie. Picked up some pizza dough from a local bakery, and tossed together a couple for supper. Half was meat, and the other half vegetable. It was pretty good! We have a second pizza for supper, but the granddaughters (10 and 12) came up for the evening. Our pizza not to their taste, and they requested noodles. So it's stir-fried noodles with bean sprouts, butter green beans, and grilled striploin. They seem to be very hungry tonight as they devoured the whole platter of food, followed by Melona Mango pops, a bowl of blueberries, and an Asian pear each! They also each had 3 pieces of Quality Street chocolates. I picked up a can at Xmas, and we are not particularly fond of them, so I guess I'll keep them for when they come up!

The rest of the 2024 story! BBQ Pork ribs in the oven, siu choy, quick pickled mini cukes, Jasmine rice Pickerel Fish'n'Chips with our usual curry gravy and malt vinegar. Peas seems to be usual veg! Last meal of 2024: 4 hour oven-braised Thai Coconut Curry Lamb Shanks with carrots and celery. Jasmine rice and fresh mint sauce to cut the richness of the coconut milk. Paratha was useful in sopping up the gravy!

    Dinner 2024

Always seem to be pressed for time when the house is full of adult kids and grandkids. This Xmas was especially distracting as the headliner was our 4 month old grandson and his first visit to our house! Also, we were ecstatic with our 2nd son and family here from St. John's NFLD after not seeing them for 2 years. So, just as long as food was prepared and on the table, we weren't concerned about table settings, etc. For Xmas eve, we set out a wonton soup buffet along with Char Siu Baos I made early in the morning. Xmas Day dinner: I cooked a 9 lb and a 3 lb prime roast. My 2 sons delivered dinners over to my 87 year old brother and s-i-l as it was too physically difficult for them to come over for supper. Made 2 dozen Yorkshire Puddings early in the day, along with the gravy as I had lots of beef drippings in the fridge. Sides were simple - mashed potatoes, asparagus in the air fryer, and green beans almondine. We also had a vegetarian Shepherd's Pie for one of the granddaughters. Dessert was our usual for all family celebrations: English Trifle! If that wasn't enough to satisfy anyone's sweet tooth, we also enjoyed thin slices of Vinarterta, shortbread, butter tarts, and mincemeat tarts. There were bottles of wine, ice wine, and eldest son also brought a bottle of Bourbon for relaxing and sipping once we cleared out of the kitchen!

I did longer as the ribs were bigger pieces. I probably did 45, just by watching the liquid as it cooks down. This was a great dish!
