Got our delivery of Lake Winnipeg Pickerel fillets this weekend. Dredged with Old Bay seasoned flour and pan fried in OV. Eaten with Lemon Dill sauce, steamed veg, and Cavendish fries Spent the afternoon making Char Siu Baos. Had 3 dozen and 8 went over the fence for my pal / neighbor - 3 / 5 members tested positive for Covid I had chicken drumsticks marinating in coconut milk, Thai red curry paste and Thai lime leaves. Supper came together easily with beets roasted in the oven seasoned Cavendish tater wedges, and breadcrumb coated chicken done in the IP air fryer.

Delicious meals all around! A few from my kitchen: Preciously frozen scallops on sale 50% off - quick pan fry, with mushrooms and broccoli, and a Hoisin sauce Steamed the last of the whole dressed pickerel, with black beans and fermented Chinese olives. Had an abundance of bell peppers that needed using up. Stuffed with ground pork, shrimp, and waterchestnut and pan fried Picked up a package of marinated veal flak steak. A new product at our Safeway. It was good - 2 big pieces for $12.00. Grilled on stove top with lots leftover for lunch next day. Had most of the kids and grands home and we had seafood paella. Cooked the scallops separately to avoid over-cooking. An early supper before the city kids went home. Sticky Rice in Lotus Leaf is a favourite of one of my granddaughters. She is 8 and loves to cook, so we did Nor Mai Leen Yeep Joong. Augmented the meal with Ho Fun with gai lan, Har Gow and vegetable dumplings from the supermarket.

Been trying to do spring cleaning, so slacking on posts but not on eating ! IP always a great help with coconut curry lamb shanks First time using prepared garlic sourdough pizza dough from a local bakery. Hubby had pepperoni and mushrooms on his half, and mine was vegetarian topped off with fresh radish sprouts from same bakery. They also stock local beef and some unusual veg grown locally. Along with the sprouts, I also picked up a mix of 3 kinds of mushrooms: Lion 's Mane, Shitaki, and Black Pearl King. Picked them up because the Lion's Mane looked interesting. Have never seen them before. I didn't know how to cook it even after googling, so I just tossed them all into a pan with butter. I think the Lion 's Mane was too small to do much with by itself. Even tho' I trimmed most of the stalk, what was left was still fibrous. Fresh was pretty - cooked looked like cauliflower. LOL! Would appreciate any in sight on how to use the Lion 's Mane. A friend's s-i-l just return ed from Algeria, and brought back some amazing ground cumin. Did a stir-fry beef and the kitchen smelled delicious! Had the mushroom medley as side. Last night, stuffed chicken thighs with ground pork, shrimp, shitaki mushrooms, and waterchestnut. Left the skin on, coated with Panko crumbs, and drizzled with olive oil. Air fryer for 20 minutes. This was easier than stuffing chicken wings after a day of shampooing carpets !

Bought a whole ribeye, trimmed and cut it up into steaks. Had our first one tonight on stove top cast iron griddle. Roasted a head of cauliflower and a sweet tater. Cooked big beets in the IP, 30 minutes and natural release. They were great! No sauce tonight, just loads of sauteed mushrooms.

Using up some partial bags of scallops, shrimp, clam meat, and a package of cooked mussels in white wine = Bouillabaisse. Picked up a Safeway Rotisserie Chicken meal that came with tater wedges and coleslaw. I added kale slaw as the store slaw was too creamy. Dessert was frozen Durian pulp. Tonight was a MaPo Tofu bowl with bok choy and rice. Dessert was a big pomelo!

A couple meals this past week: Seared Duck Breasts with spices and blood orange. Breasts were scored then rubbed with cumin, fennel seeds, chili flakes, black pepper and salt. Sauce was red win e, sherry vinegar, star anise, and juice from blood oranges. It was a love change. Eaten with sweet tater and high fibre frozen mixed vegetables. Yesterday, we had a late lunch of Har Gow, so supper was Char Siu Noodle soup with Yu Choy Made Spicy Butter Chicken with a jar of KFI sauce. Think I picked this up a while back at Costco. It was quite good - quick option for when I didn't want to mix my own spices, or use Patak paste. Made brown Basmati rice and stir-fried mixed veg to clean up the crisper!

This looks amazing! Reminds me of a lamb pilau a friend from northern China made for me years ago. Now I want some! @ShelbyAre the Shishitos peppers from Ronnie's green house? We never see them here in supermarkets. I get treats from a gardening friend and have tried to grow them in my own garden. They are lovely! Finally using up all the Siu Yook from CNY! Sliced the chunk up, made gravy and redux as roast pork dinner, gravy, etc. Made IP baked potato for the first time. Turned out well - saved time and turning on the oven! I see from your picture, @Kim Shook, that you use the individual portions of apple sauce. They are great as a whole jar tends to sit forgotten in the fridge after the meal - unless I put it near the front of the fridge so hubby can see it and eat it!

Pulled a package of siu yook (crispy skin pork that was no longer crispy) and made stir-fried rice cakes (Nian Goh) with Shitaki mushrooms and Nappa cabbage. Good chewiness!

It was s-i-l's bday yesterday, so we went out for supper: Joey's Fish'n'Chips. The cod was good, but I chose the Cajun Combo: red snapper and shrimp. It was pretty spicy, and I found the red snapper a tad too fishy for my taste. Calamari was good. Picked up 2 pkgs of lean ground bison at reduced price. It was finer grind than I would have liked. Had half an apple left from feeding the squirrel, so I grated it into the meat with some fresh thyme and basic seasoning. A tbsp peanut butter added the fat. Grill on stove top cast iron pan. Eaten with Green Peppercorn gravy, jasmine rice, sauteed peas and beans, and 2 gifts from a friend: Peach an d Jalapeno relish and pickled beets.

Had our month's quota for salt in our supper last night. What is meant to be a thrifty food item is quite expensive (according to my Mom) for my family. This was just for hubby and myself last night - 3 pieces of wind dried salted / fermented croaker with ginger and lean ground pork. When the kids are here, we can consume the whole fish as everyone wanted their own piece! Ham Yu steamed with ground pork and ginger. Eaten with copious amounts of rice and bok choy.

These were just store bought wonton wrappers. I was looking for the thinner variety but none to be had. The ingredients list did not include lye. I used these with my granddaughters yesterday to make a treat: stuffed with banana, chocolate chips and deep fried.

Found a small bag of counrty-style pork ribs from last spring. Cooked them up with Meen See (brown bean sauce)in the IP. Most of the pieces were lovely. A few had no fat - tender but dry. The sauce is so good on the rice! Eaten with bok choy and jasmine rice. Another Alberta Clipper = more snow last night and all day today. Had thawed a chicken and had a hard time deciding how to cook it. Finally back to aquafit at the Y, so I was really tired. That made my decision on the chicken easier: soy sauce chicken simmering while I had a nap. Love the fragrance and flavour of the star anise. cloves, cinnamon bark

Valentine's Day supper. Didn't know whether I'd be able to manage it after my first time back to aquafit following an absence of 3 months! Strip loin steak, Panko-crusted scallops, baked tater and sauteed veg. Durian pancakes for dessert! And my reward!

Chicken legs with Italian herbs and panko crumbs, sprayed with Pam, baked in the oven with a sweet tater. Shanghai bak choy always welcomed!

Two meals without rice or potato! What's with THAT?! LOL! Stove-top grilled lamb chops, Moroccan Couscous (without the pine nuts as I didn't have any!), and lovely green beans.

Shrimp & Cheesy grits kinda night. This is a Weight Watchers recipe. I didn't have low fat cheddar, so just used a smaller amount of grated spicy cheddar. Might be of interest to @MaryIsobel. Googled recipe.
