    nasty little escargo! I still remember them for being notorious for exploding the exact moment I reached up to pull them out of the salamander! Also fried oysters.

    My mom made the best......very coarse on heavy rye with leftover braised red cabbage on top, or when we where small pickles on top.
  5. one of my favorites is roast chicken with mashed spuds and pan gravey... and peas too.

  7. always let someone else pour your Sake for you and then you pour for them. also, this one is weird.... one morning trying in vain to get my hollandaise to thicken, I guess I was cursing and venting too loudly and the chef noticed. Now since we are good friends he didn't think anything of asking me if I happened to have my period, and I said "well yes I do, how nice of you to ask"?? and he said that was why my sauce would not thicken............anyone else hear this?
  8. First I have to say how much I enjoy your program. Its one of only a handful that are worth watching on FoodTV. Not only is it truely funny, but its actually informative as well. For example,there was one episode that was all to do with corn and one bit of info you gave was to never put salt in the water when cooking corn on the cob. Well I've been "in the biz" shall we say for many a year, done the culinary school thing too, and never absorbed that "kernel" of wisdom.Who knew?............anyway... my question is Have you ever worked as a chef/cook in a professional kitchen? You know.. slammed with orders, sweating profusely, cursing the wait staff? Cindy from Vancouver

I had someone return their Quesadilla because there was one of those plastic bread bag closer thingies in with the melted cheese. ooops....... the thing was.. the guy was more upset that the "best before" date was for 3 weeks previous! (I guess that one was in the freezer for a tad longer than the rest)
  11. definatley need to do your homework. basmati rice (white tusk brand) is a good deal and good stuff. Cioffi's is awesome! but man oh man the lineups are brutal! (and the Red apple is excellent for produce and olive oil) But about costco..... it never seems to fail.... I always! spend too much when I go there.
  12. Good God!, you should have seen the rice pudding I made at work last week for a seniors function. I don't think you should be able to stand a spoon up in it , should you?? It was a tad firm to say the least. I have never had any luck with plain desserts. Cookies,cakes etc. But I can make a mean Brulee or chocolate ganache....... go figure. My daughter laughs at me when ever I try,yet again,to make a batch of cookies. sigh.....
  13. how about the Frasier episode where Niels & Frasier buy a restuarant??? the best part is when they are arguing about how to kill the eel and Dauphine gets fed up and grabs the thing from the tank and just whacks it on the counter! too too funny... and I loved lenny henry in "chef" his insults where the best...

I will always hate the french for having a different word for almost everything!!! haha but truley, I had such a struggle when I was in cooking school, and during my apprenticeship, because my mouth refused to fit around those sounds!! Can't tell you how many times I stood like an idiot infront of an instructor, until I could finally choke out what it was I needed.

  16. as far as clogs not lasting long enough, I usually get about 3 years out of mine. Thats working regular or more 80 - 100 hrs per 2wks. I never wear them outside though. I find the cheap shoes hard on my feet and slippery as hell, never slide with the clogs.
  17. I have always worn some type of clog in the kitchen at work. No matter how many hours I do, the one thing that doesn't hurt at the end of the shift is my feet. I'm wearing Sika's right now. All rubber soles, and flexi, so they bend. I can't do the birkie's. The way they sort of come up on the sides just kill my wittle toes! I'd love to try those calzuros. Anyone know if they are available in Canada?

  19. I love tuna sandwichs. Just plain old tuna,clover leaf, chunk light in oil, love my oil too. A little mayo. I like Hellmans as well, and spread on really fresh multigrain bread. good stuff.
  20. My husband is a big guy, 6'8", hence he has big hands and he has a real hard time opening those big bottles of pop. He just can't seem to make his hand small enough. Does that make sense?
