  1. Panko crusted monkfish sandwich with banh mi style stuff on it. I like the flavor of monkfish but man getting that membrane off is a chore.
  2. Yesterday was my husband's birthday. I made roasted racks of lamb, wild mushroom risotto, chicken with a mushroom-wine sauce for the non-lamb eaters, roasted broccoli, sautéed potatoes for the people who want starch and won't eat mushrooms, and whiskey-glazed carrots. No pictures, I have not figured out how to easily do photos with a big multi-generational group around. Monday night I wanted to use up the leftovers from the weekend dinners plus there is Monday night football, so sandwiches seemed appropriate. Here is a lamb sandwich with arugula, peppers, onions, and mushrooms, grainy mustard and provolone cheese. Similar sandwich but with chicken sausage for me (I don't eat red meat)
  3. Breakfast for dinner. This was my niece's plate. The adults did not have fruit or waffles, instead we had roasted asparagus and brioche toast.
  4. Fettuccine with black truffles and parmesan cream sauce. The other half of the truffle is buried in some arborio rice for a mushroom risotto I am making tomorrow. The truffle was a bit of a splurge but it is my husband's birthday weekend. I served this with a salad of bitter greens. Forgot to take a picture of the salad.

  6. WOW BKEats you have been eating well! Very nice, all of it. Seared salmon on brown rice with stir fried vegetables in a ginger-garlic broth.
  7. My fish share gave me the dreaded pollock again yesterday. Trying to think of something to do with it other than chowder, I decided on Thai-flavored fish cakes. I ground up the fish with lemongrass, chiles, cilantro, ginger, garlic, fish sauce, palm sugar, scallions, and coconut milk then formed into patties and chilled to firm up. Then I fried them and served with lime wedges and a dipping sauce made from sweet chili sauce, fish sauce, and malt vinegar. I really liked this. Served with a cucumber salad and steamed rice. I also got a piece of Faroe Island salmon in this week's share so that will be dinner tonight.

  9. Pizza night. Pepperoni Vegetable I also made a carbonara pizza and a sausage pizza, but did not get pictures of those.
  10. Last night was clean the leftovers out of the fridge night, which usually translates to using up various leftovers in sandwich form. For my husband, leftover tenderloin, arugula, parmesan, and truffle butter and for me, leftover turkey meatballs and sauce, arugula and provolone
  11. A simple salad with hazelnuts, apples, and gorgonzola dolce in a citrus vinaigrette. I topped it with crispy chicken made from a recipe that came in a case of wine my husband ordered. It was supposed to be "sweet, spicy, and crunchy" but really did not have enough heat for me. And I forgot to add the honey that the recipe called for so it ended up not being sweet either (my fault, obviously). At least it was crunchy! It was one of those nights ;-)
  12. This week's fish share was much more appreciated than last week's pollock. Haddock, cooked on a bed of dijon mustard, white wine, and leeks. Crispy lemon garlic parsley crumbs on top. Sides were leftovers from weekend family meals: sweet potato puree and cauliflower gratin.
  13. This week's batch of soup is eggplant parmesan soup. Roasted eggplant is cooked with celery, onions, garlic, tomatoes, white wine, oregano, and stock, then garlicky breadcrumbs and parmesan cheese is added along with a tbsp. of balsamic vinegar and a handful of basil, and then the whole thing is pureed.
  14. Fish chowder made with pollock. I have a weekly fish share, and usually love whatever they give us. That said pollock is the one fish I really don't like, and since it is such a common fish we are guaranteed to be given it at least once in every eight-week cycle. There is something about its texture that I find off-putting. It is OK in chowder though.

  18. I just made a huge pot of this 14 bean soup with kale for lunch this week. I'll give half to my sister. We make a pot of soup each weekend and then split it between us.
  19. They are biscuits with parsley in them. The chicken was in the stew under the biscuits.

  21. I made a butternut squash soup for dinner last night. It was not sweet at all. Adapted from the New England Soup Factory Cookbook: 2 onions, chopped 3 ribs celery chopped 5 carrots chopped 1 lb. butternut squash, chopped 4 cloves garlic, chopped 3 tbsp. butter 6 cups chicken stock 2 handfuls tortilla chips 1/2 cup cilantro 6 ounce montery jack cheese juice of one lime one bunch scallions, chopped one can minced green chiles Melt butter and saute all vegetables until soft. Add chicken stock and simmer until vegetables are tender (this took about 40 minutes). Remove from heat and add tortilla chips, let soften. Add cilantro and montery jack cheese. Stir to melt cheese. Blend with stick blender. Add juice of one lime, scallions, and minced green chiles. Season to taste. It basically tasted like a big bowl of melted nachos. My 14 year old niece LOVED this soup. She requested the leftovers for dinner tonight. The original recipe called for sherry but I did not have any. The adults added hot sauce at the table. Here is a picture (not great because my niece was standing over my shoulder saying FEED. ME. NOW!) I served it with a pan of cornbread, the East Coast Grill recipe (you can find it on the New York Times website)

  25. Funny you noticed that. My Joy of Cooking was my bible when I first got married and wanted to learn how to cook things other than the five recipes I made over and over again in college. It got a lot of use, as you can see. I don't cook from it too often anymore, but I still make their cornbread. I will post pictures once the bookshelf project is done, but it might be a while! I have been moving very slowly on making this house my own and have a long way to go. There are actually a bunch of really good recipes in that book. The pan seared striped bass with garlic mustard sauce is delicious. I also like the chili scallops with greens, the blackened shrimp with red pepper coulis, and my husband likes the codfish with lobster sauce.
