My favorite course was the first course, by far.

They brought out a cone shaped bowl that was filled with a warm cauliflower puree and was told there was a special treat underneath...

The surprise was more osetra caviar I have ever seen at a single serving. Probably 2 oz or so worth of caviar - I was eating a full spoonful after spoonfull of caviar w my Billecart Salmon champagne for quite a while...This dish alone probably cost around $70 if priced separately...

I forgot to take a picture of this course at the start and didnt realize until I was almost done w/ it to take a pic...

The only question I have is: what did Meredith say to Trotter to capture that small sly grin? Most of his publicized photos range from deadly serious to downright grim.

Which is a shame. The guy can be charming when he's not stressed...

awbrig, the cauliflower puree and caviar sounds wonderful. Was there anything with it such as a tuile or three?

no tuile babe, just caviar, some cauliflower puree, maybe a a julienned organic green onion or two but mainly just warmed caviar...which Charlie likes to do... :smile:

I would say your sources might be a tad limited. There are a number of publicized photos where Chef Trotter bears a very plesant expression. Don't give up. Keep looking. :biggrin:

Heh. The sources aren't that limited, but my brain can be so sometimes...now I know where that photo came from, plus a few others that show a smile. Nice.

You should ask Jason to help you. Today he posted some rather large pictures in the Saint Martin thread in the Caribbean Forum. Freaking large pictures. :blink:
