I recently bought Ortiz Familia Reserva Bonito Tuna which touts itself as an aged tuna resulting in a more mild flavor. Does anyone know about this stuff? Does aging matter at all or was it a good reason to charge more? I tasted a very subtle difference, but really didn't care.

Well Ortiz are well known here in Australia for making just about the best anchovies you can buy - at AU$12 (US$10) for a small tin, they aren't cheap either.

I've had the aged Ortiz tuna before, and enjoyed it, but not enough to buy it again. I do however LOVE the Ortiz Ventresca tuna belly. That is otherwordly, and I buy it often.

If you're going to pay that much for tuna, pay for the cut, not the age. Belly baby, always go for the belly. :)
