Hey, I would be available for consultation for the show ! I am a restauranteur and chef in uber chic Yaletown and one of the originals. For a small honourarium, I would tell all. Authentic and real. I would have requests though - My own trailer on set, only brown M & M's for a snack and casting veto - Now then , who would we get to play the restaurant critic ? It would be modeled after our own Jamie Maw - I will leave that question open for the egulleters ....................................

Wow, great pictures all round, esp. FB's I am amazed to see whole phesants and rabbits hanging in the market. I shop at the Granville Island market fairly often in Vancouver and do not think I have seen the likes of that there. There is seafood displays all round but as far as game meats and birds - not at all. I am not sure if it to do with the public here - I have a difficult time selling game meats on the menu as people are more apt to stay mainstream - beef, chicken and lamb ( I even had one woman exclaim to me that she thought lamb an exotic meat ). Is that common in the market or did you have to seek it out ? Any "live" displays here would be in the seafood dept. although I have seen live frogs and turtles in Chinatown. I realize those shots were not live, but they were a short time ago.

I was supposed to join you at Mr. Bonner's but we got a little extra busy for a Monday night and I was not able to leave until about nine. ( This can be confirmed by SashaVAn and HKDave - there is always an egulleter present ! ) Although having read your account of "Mr. Toad's Wild Ride", I am somewhat glad I hightailed it home. I was going to pop in but I know that I would have had a hard time resisting the amazing lineup of stops along the way. We had a television show shooting at the restaurant on Monday so I was here since 6:00 a.m., making for a long day and leaving me susceptible to the influences of peer pressure and alcohol. 40 for a cocktail party, 32 max for a sit down but the side section where you were the other night can hold up to 55. When exectly ? or did you put that down upthread.

Chicken salad doesn't seem all that unnatural...(?) ← Chicken and eggs? I'm thinking of Trid. Ancient food. It's considered poor man's bistilla, apparently the favorite of the Mohamed (PBUH) Chicken and eggs combo, been around for a long time. ← I had not thought of that - chicken salad. What was going through my mind was an omelette that I saw this morning with chicken. I don't know - the baby and the mother on the same plate ?

I do not care for undercooked eggs and undercooked chicken but the two together is probably something that should never happen. It just seems incredibly unnatural to have eggs and chicken together. Am I wierd

If it were a steakhouse, Horshack would be perfect. Because any serious Kotter fan knows that the name Horshack means "the cattle are dying". Trivia god/geek ← Steakhouse ! I could work in one of those! Sign me up.

There is a restaurant in Vancouver ( and the owner is an egulleter, but a lurker !!! ) ) that does not ake reservations at all, never has, no matter what. THere have been visiting dignitaries, stars, and food celeb's , and everyone has to wait their turn. He has a comfortable waiting area that can seat a few people but quite often people have to wait outside. The food is excellent and worth the wait, everytime. He is a fabulous host, to all in the dining room and waiting area. This is quite an anomoly in our town where reservations are very easy to get. He is busy every night without fail. I am a wee bit jealous of the steady, guaranteed volume, of polite, knowledgable guests he has every night but it comes from years of consistantly excellent food and service. His no reservation syle is the only one I know in the city, and , it works very well.

I certainly could cancel with Carlos Santana and get back on track with a serious, no-cedar plank salmon restaurant at Jericho Beach. And after much consideration, I would be happy to have the Irishgirl as the exec. Sous . Her talents would be wasted there, and better put to use rallying the kitchen troops before each shift.

I have never had a good meal there. Not bad enough to start a thread about it, but enough that I am not really interested in returning. I mentioned a soup that I thought was not up to snuff once and it was taken away to the kitchen only to return even more watered down than before. My sandwich had about a golfball size worth of stuff in the center, surrounded by plain bread. It just did not impress. I have been about 6 times over the past few years and each has been about the same. I did follow my own "rules" and gave them a second, and third and more tries. Not absolutly terrible, but not worth returning.

I am making some headway with the entertainment - Carlos wanted a sandwich named after him - Carlos Santuna but I really had to draw the line with Menudo. They tried to play the possible Ricky Martin reunion card but still, I could not do it.

I can't respond right now ! I am on hold with Carlos Santana's people. Makin' deals, arranging transport. They are trying to get me to have Menudo as the opening act but I am holding firm on NO ! I am bending to pressure and releasing my stranglehold on this dream. Wandering Mariachi's ? Charo as the head hostess It is coming together now.

I do not think the Wyles Clan has a tartan, being from Cockney London, but my mother's side , The Clan McCabe, I am sure would have one. I don't know about the staff uniforms for that but certainly the seat padding could be in that. That would be a nice little hello to my mother - everyone's ass on the tartan

I want to thank Jamie for all of the time that he has taken to repond to all of the questions and mine in particular. I realize that you are in production right now and time is a valuable thing. It has certainly cleared up lots of points for me. I realize that the system, although not perfect, is as fair as can be. With so many people involved and such a clear process, the results end up being as unbiased and fair, without any one judges views counting more than any others. There are other publications in town that have awards etc., that although fun and flattering, are quite often based upon advertising. With the complete ( or nearly ) particiaption of all major food writers and culinary personalities in B.C., the Van Mag awards rises above all. I look forward to seeing how this year shakes out, and look forward to actually reading all the little bits and pieces of extra stuff in the magazine about our food scene.

At the mere mention of Hooter's I have to laugh - here is the marketing / customer demographic survey gone terribly wrong - Oh look - a overly high population of males, 25 to 35, $35000 - $85000 a year in income The West End of Vancouver - the perfect place for a Hooter's !

Yeah, that sounds like a plan, a boring plan but a plan none the less. I suggest we begin a pool to wager on what time the first full frontal shot is. We could devise some sort of bonus prize if the shot is completely gratutious. I'd set the over/under line at 7:23. We could aslo work on the Godiva drinking game, but I always find drinking games slightly juvenille, I don't need any half assed excuse to get liquored. Full frontal - one shot tribal arm band tat - one shot recreational drug usage - one shot a dish served that actually looks good - two shots high strung short tempered chef - no shots gay waiter - no shots gay waiter without tribal arm band tat - three shots a waitress with only ears pierced - one shot a pan of yaletown showing the HSG - one shot a pan of yaletown showing the HSG and Ling is going in the front door - three shots a pan of yaletown showing the HSG an Neil is throwing a patron out on thier ass- three shots Someone parking directly in front of the restaurant - four shots This seems easy. ← I have just been contacted by Godiva Liquer - they want to increase their market placement in B.C. and have requested that if they supply a neverending line of beligerant drunk yuppies, would I toss them on the street. I told them I have let myself go a little lately and am not in top fighting form. I have requested the smallest yuppies they can find. I am waiting for their response. Does rolling them out the door count once my arms get tired ?

The cheque is in the mail. (sorry, couldn't resist) I think Irish girl is right. There has to be a catch. Maybe we need to set up a few faux fishing boats on the water so we can advertise "fresh fish and seafood". Seriously, now that tasting menus are done as well as amuse bouche, what's the next trend? Anyone been travelling lately? ← Fishing boat off of Kits Point is a unique idea but I am not sure what they would be catching. Maybe just for visual effect only. I agree about the Cedar Plank - they should be used as shingles on this project only.

In all honesty, the gingerbread pudding is not pretty enough to deserve a picture, nor does it last long enough on the plate to pose for one. Cheers Neil
